Potato Sausage Soup is an old fashioned sausage soup recipe. This simple potato soup recipe uses breakfast sausage, diced potatoes, celery, and onion which is thickened up with a simple roux. Recipes like this one stand the test of time because of the easy instruction and basic ingredients.

3-4 stalks celery, cleaned and diced
4-5 potatoes, diced
2 medium onions, diced
1 pound pork sausage
3 Tablespoons butter
3 Tablespoons flour
3 cups milk
2-3 shakes ground nutmeg
salt and pepper, generously to taste

Steps:

  • Add diced celery, potatoes and onions to a medium saucepan, and cover with just enough water to cover vegetables. Cook until fork tender.
  • Meanwhile, brown and crumble sausage; drain excess grease if needed.
  • Add browned sausage to potato mixture.
  • In a small saucepan, melt butter. Add flour, stirring for 30 seconds with whisk. Add milk and cook and stir until thick.
  • Once milk sauce is thick, add it to the potato mixture. Bring the soup to a boil until thickened and hot.
  • Season with nutmeg, starting with one shake. Taste and add up to three shakes. Season generously with salt and pepper to taste.

I've tweaked this recipe I found in an herb magazine I once subscribed to. Since my husband is an avid deer hunter, I sometimes use venison kielbasa. Then we call it 'Buck-Pole Soup'

Number Of Ingredients 9

1 pkg polish kielbasa or smoked sausage, cut in bite sized pieces
4-5 red skinned potatoes, cut in bite sized pieces
3 large celery stalks, chopped
1 large yellow onion, chopped
1 bunch parsley, chopped
2 can(s) 10 3/4 ounces chicken broth
2-3 c water, depending on how much broth you want
3-4 tsp chicken bouillon granules, to taste
1/2 c cream or half and half

Steps:

  • 1. Combine first 7 ingredients in large soup pot and simmer until potatoes are tender. Add chicken boullion to taste during cooking. Add cream to finished soup right before serving. Do not boil after cream is added.
  • 2. This could also be made in a slow cooker for 3 hours on high or 5 hours on the low setting. The cream can also be added to each individual bowl after serving.

2 c diced potatoes
1/2 c diced onion
3 c water
1 tsp salt
1 c chopped celery
1/2 c grated carrot
1 qt milk
2 Tbsp butter
3 hard boiled eggs, peeled and chopped
1 Tbsp fresh chopped parsley
salt and pepper, to taste

Steps:

  • 1. Bring potatoes, onion, water and salt to a boil in a large pan. Reduce to a simmer and cook for 10 minutes. Add celery and carrot.
  • 2. Stir in milk and return to simmer. Cook until heated through.
  • 3. Just before serving, stir in butter, eggs, and parsley. Season with salt and pepper, as needed.

3 cups chopped Swiss chard

1 pound bulk mild Italian sausage
1 pound kielbasa smoked sausage, cut lengthwise and sliced into 1/2-inch pieces
4 cups diced potatoes, or more to taste
4 cups water
2 cups chicken broth

2 cubes chicken bouillon
1 tablespoon minced garlic

3 tablespoons olive oil
1 pound marble potatoes
1 yellow onion, sliced thin
1 orange bell pepper, sliced thin
1 green bell pepper, sliced thin
1 red bell pepper, sliced thin
Kosher salt and freshly ground black pepper
1 pound kielbasa sausage, sliced into 1/2-inch rounds
3 cloves garlic, minced
1 cup amber beer
1 tablespoon grainy mustard
3 cups chopped kale
Fresh herbs, to garnish.

Steps:

  • Heat the olive oil in a large skillet over medium heat. Add the potatoes, onions and peppers, then season with a pinch of salt and pepper. Cook until the onions are translucent and the potatoes begin to brown, 5 to 6 minutes.
  • Stir in the kielbasa and garlic. Add the beer and mustard, then stir to combine. Cover and cook until the potatoes have softened and the sausage is heated through, 2 to 3 minutes.
  • Remove the lid and stir in the kale. Cook until the kale has wilted, 5 to 6 minutes. Taste and adjust the seasonings as needed. Garnish with the herbs and serve straight from the skillet.

8 medium potatoes, peeled and cubed
1 onion, coarsely chopped
32 ounces milk
2 teaspoons salt
1/4 teaspoon pepper
2 teaspoons dried parsley
1 tablespoon butter
1/2 cup flour
1 egg, well beaten
2 -4 tablespoons milk

Steps:

  • Cook potatoes and onion in boiling salted water until tender- drain.
  • Add 1 quart of milk to potatoes and heat, and then blend in the salt, pepper and parsley.
  • Cut butter into flour- blend together the egg and milk using only enough milk to make the mixture thin enough to drop into the hot soup.
  • Cover and cook about 10 minutes.
  • Serve at once.
