1 pound penne
2 tablespoons extra-virgin olive oil
3 to 4 ripe tomatoes, seeded and chopped
1/2 cup basil leaves, coarsely chopped
1 clove garlic, green part removed, minced
Coarse salt and freshly ground pepper to taste

Steps:

  • Cook the penne in boiling salted water and drain when al dente.
  • Pour the oil into a large serving bowl and add the penne. Toss and add the tomatoes, basil and garlic. Season to taste with salt and pepper and serve.

1/4 cup extra virgin olive oil
2 garlic cloves, minced
2 -3 cups canned cannellini beans, rinsed and drained
2 large ripe tomatoes, cored, and cut into thin wedges
1/2 cup lightly packed fresh basil, torn into pieces
salt
pepper
1 lb penne pasta, cooked al dente and drained (reserve 1/3 cup cooking water)
grated parmigiano-reggiano cheese

Steps:

  • In a large skillet, heat oil over low heat; add in garlic; stir/saute for about 2 minutes or until the garlic begins to sizzle and turn golden.
  • Add in the beans, tomatoes, basil, salt and pepper; stir to combine and until heated through.
  • In a mixing bowl, combine the pasta, bean mixture, and reserved cooking water; toss.
  • Sprinkle with cheese and serve.

Sweet, juicy heirloom tomatoes lend themselves well to uncooked tomato sauces. In summer, I make quick meals out of chopped ripe tomatoes, pasta and green vegetables.

6 to 8 ounces fresh green beans, trimmed, strings removed if necessary, and broken in half if very long
2 cups chopped fresh ripe tomatoes
2 tablespoons extra virgin olive oil
1 plump garlic clove, minced (more to taste)
Salt (I like to use a very good coarse sea salt or fleur de sel for this)
freshly ground pepper to taste
1 teaspoon balsamic vinegar (optional)
2 tablespoons slivered basil
2 ounces crumbled feta (about 1/2 cup)
3/4 pound pasta (penne or fusilli are good choices)

Steps:

  • Combine the olive oil, tomatoes, garlic, basil, salt and pepper in a large bowl, and let sit for 15 to 30 minutes (or longer).
  • Bring a large pot of generously salted water to a boil. Fill a bowl with ice water. Add the green beans to the boiling water, and boil four to five minutes, depending on how crunchy you like them. Remove with a strainer or skimmer, and transfer to the ice water. Allow to cool for a few minutes, then drain and set aside.
  • Bring the water back to a boil, and add the pasta. Cook until al dente, about eight minutes. When the pasta is ready, drop the green beans back into the water to heat, then drain the pasta and beans and toss at once with the tomato mixture and the feta. Serve hot or room temperature.

8 ounces okra, trimmed and halved lengthwise
8 ounces green beans, trimmed
1/4 cup extra-virgin olive oil
Kosher salt and freshly ground pepper
1/2 cup panko breadcrumbs
Finely grated zest of 1 lemon
12 ounces penne rigate
1/3 cup grated parmesan cheese
2 cloves garlic, minced
1 cup fresh basil

Steps:

  • Preheat a grill to medium high. Toss the okra and green beans with 2 tablespoons olive oil; season with salt and pepper. Transfer to a sheet of foil or a grill basket with the okra cut-side down. Grill the vegetables, turning occasionally, until lightly charred and tender, 6 to 8 minutes.
  • Transfer to a cutting board. Halve the beans crosswise and halve any large okra pieces lengthwise.
  • Meanwhile, heat the remaining 2 tablespoons olive oil in a small skillet over medium heat. Add the panko and cook, stirring, until golden, 2 to 4 minutes. Remove from the heat and stir in the lemon zest; season with salt and pepper.
  • Bring a large pot of salted water to a boil. Add the pasta and cook as the label directs for al dente. Reserve 3/4 cup cooking water, then drain the pasta and return to the pot. Stir in the grilled okra and green beans, parmesan and garlic, stirring in enough of the reserved cooking water to loosen. Stir in the basil. Divide among bowls and top with the panko mixture.

1 pound penne or whole-wheat penne rigate pasta
Salt
1/2 pound asparagus, trimmed of tough ends
1 small zucchini
2 handfuls, 1/4 pound, haricots verts (thin green beans) trimmed of stem ends
1/4 cup pine nuts
1 cup basil, 20 leaves
1/2 cup chopped tarragon leaves (10 to 12 stems)
1 lemon, zested
Handful flat-leaf parsley
1 clove garlic
1/2 cup grated Parmigiano-Reggiano, a couple of handfuls, plus more to pass at table
Coarse black pepper
1/3 cup extra-virgin olive oil, eyeball it

Steps:

  • Heat a large pot of water to boil for pasta. Salt the water and add pasta to cook to al dente or, with a bite to it. Cut asparagus spears into 2 inch pieces on an angle. Cut zucchini into matchstick shapes. Cut haricots verts or green beans into 2-inch pieces on an angle. Add vegetables to pasta after penne has been cooking about 5 minutes. Cook veggies and pasta together 2 minutes. While pasta cooks, toast pine nuts in a small pan until golden, then cool. Place nuts, basil, tarragon, parsley, lemon zest, garlic, cheese and a little salt and pepper in a food processor. Turn the processor on and stream in the extra-virgin olive oil until thick sauce forms. Scrape pesto into large, shallow serving dish. Add a ladle of hot, starchy pasta water to the pesto. Drain penne and veggies and add immediately to pesto. Toss to coat pasta and vegetables evenly. Adjust salt and pepper, to taste. Serve with extra grated cheese to pass at table. ;

1 1/2 lbs ripe tomatoes, seeded and diced
2 cloves garlic, minced or pressed
salt & freshly ground black pepper, to taste,plus
1 tablespoon salt, for pasta water
1 -2 tablespoon olive oil, to taste
1 -2 teaspoon balsamic vinegar, to taste (optional)
2 tablespoons chopped fresh chives
1 tablespoon fresh basil or 1 tablespoon of fresh mint, slivered or chopped
2 ounces feta cheese, crumbled (about 1/2 cup)
3/4 lb pasta (fusilli, rigatoni, farfalle or penne)
1/2 lb green beans, trimmed and broken in half

Steps:

  • Start a large pot of water to boil with 1 tbsp.
  • salt.
  • While water heats, toss tomatoes with garlic, salt, pepper, oil, herbs and vinegar (if using) in a pasta bowl.
  • Add feta.
  • Let sit at room temperature 15 minutes or longer.
  • Taste and adjust seasonings.
  • Add pasta to boiling water.
  • Cook 5 minutes.
  • Add beans.
  • Keep cooking until pasta is al dente, firm to the bite (see cooking time on package).
  • Drain, toss with tomato mixture and serve.
  • The tomato mixture, without the herbs, can be made hours ahead.
  • Hold in or out of the refrigerator, but let it come to room temperature before adding herbs and tossing with cooked pasta.

2 cups (packed) fresh basil leaves
1/2 cup plus 2 tablespoons coarsely chopped toasted almonds, divided
1 teaspoon kosher salt, plus more to taste
3/4 cup extra-virgin olive oil
1 pound penne
8 ounces green beans (about 2 cups), trimmed, thinly sliced on a bias
1/4 cup grated Parmesan

Steps:

  • Pulse garlic, basil, 1/2 cup almonds, and 1 tsp. salt in a food processor until combined. With the motor running, slowly add oil and pulse again until smooth. Transfer to a large bowl.
  • Cook penne in a large pot of boiling salted water, stirring occasionally, and add green beans 30 seconds before pasta is al dente. Drain pasta and green beans, reserving 1 cup pasta cooking liquid, and add to pesto. Stir vigorously and add pasta cooking liquid as needed to fully coat. Season with salt.
  • Transfer pasta mixture to a serving bowl or platter and top with Parmesan and remaining 2 Tbsp. almonds. Serve immediately or at room temperature.

1 1/2 teaspoon(s) salt
1 tablespoon(s) water
1 cup(s) loosely packed fresh basil leaves
1/4 cup(s) olive oil, extra virgin
1/2 teaspoon(s) black pepper
1 medium tomato, chopped
- small basil leaves for garnish

Steps:

  • in large saucepan, cook penne as label directs. meanwhile, in 12 inch skillet, heat 1 inch water to boiling over high heat.
  • add green beans and 1/2 teaspoon salt, heat to boiling. cook beans until tender, 8-10 minutes. drain beans. rinse beans under cold running water to cool slightly, drain again.
