I came up with this recipe one day while experimenting in my kitchen. This salad makes a great side dish with just about any kind of meat.

1 package (16 ounces) penne pasta
1 cup quartered cherry tomatoes
1/2 cup chopped green pepper
1/4 cup chopped green onions
1 can (2-1/4 ounces) sliced ripe olives, drained
1 bottle (8 ounces) Italian salad dressing
1/2 teaspoon coarsely ground pepper
1/4 teaspoon dill weed
1/4 teaspoon garlic salt
1/4 teaspoon lemon-pepper seasoning

Steps:

  • Cook pasta according to package directions; drain and rinse in cold water. Meanwhile, combine tomatoes, green pepper, onions and olives. Stir in pasta. Combine remaining ingredients; pour over salad and toss to coat. Cover; refrigerate at least 2 hours before serving.

1 cup creamy salad dressing, e.g. Miracle Whip ™
½ cup Dijon-style prepared mustard
1 ½ cups grated Parmesan cheese
1 tablespoon dried dill weed
1 red onion, julienned
1 yellow bell pepper, thinly sliced
1 orange bell pepper, julienned

Steps:

  • In a large pot of salted boiling water, cook pasta until al dente, rinse under cold water and drain.
  • In a large bowl, mix together the salad dressing, mustard, cheese and dill.
  • Add pasta, red onion and bell peppers. Toss well; season with salt and pepper. Chill before serving.

  • Cook pasta according to directions. Drain.
  • Saute asparagus tips in garlic, olive oil, salt and pepper until tender. Add to the pasta along with the basil and sun-dried tomatoes. Toss to mix. Adjust seasonings as necessary. Refrigerate 1 hour or longer before serving.

Celebrate the late summer harvest of red peppers with this simple and light pasta salad. You can easily substitute roasted peppers from a jar. This recipe is from an obscure little cookbook with fabulous recipes called "Canada Cooks Pasta". I have a propensity for lemon and increase the amount of zest and juice. As a matter of fact, I increase the feta and basil as well! This is a great brunch, pot luck or buffet salad! Note: Whether you use fresh peppers or jarred, ensure you dry them thoroughly...you really don't want a pink salad!

6 red bell peppers, roasted, peeled and seeded or 6 roasted red peppers, deseeded
1/2 cup extra virgin olive oil
3 tablespoons fresh lemon juice
1 teaspoon finely grated lemon rind
1/2 teaspoon salt (to taste)
fresh ground black pepper
1 bunch fresh basil leaf, cut into 1/8 strips, about 1/2 cup
1/2 lb feta cheese, dried and crumbled
1 lb penne (or other short tube pasta)

Steps:

  • Slice peppers into ¼" wide strips, lengthwise. Place strips in a large bowl.
  • Whisk together the olive oil, lemon juice, lemon rind, salt and pepper.
  • Toss dressing with the red pepper strips.
  • Stack the basil leaves on top of one another and roll up. Slice the leaves crosswise into thin ribbons. This is called a "chiffonade" in case you want to impress your friends.
  • Toss the basil leaves with the peppers. Set aside to marinate for 1 hour.
  • Cook the pasta al dente in large pot of boiling water with 1 tablespoons each salt and olive oil. Drain, rinse briefly and cool to room temperature.
  • Combine pasta with marinated peppers and dressing.
  • Add crumbled feta cheese. Taste and adjust salt, add liberal grindings of black pepper.
  • Cool salad in fridge 1-2 hours before serving or salad may be chilled overnight and brought to room temperature 1 - 2 hours before serving.
  • Garnish with basil chiffonade.

I hope you like this recipe as much as I did. Cook time equals cook time for pasta. Prep time is the time it takes to assemble the rest of the ingredient with the cooked pasta.

3 cups penne pasta
1 (6 ounce) can tuna (I used the kind in the pouch)
2 celery ribs (cut in half lengthwise and chopped)
1/2 small white onion (chopped)
1/3 cup mayonnaise
1 teaspoon yellow mustard
1/3 cup frozen peas (thawed)
1 teaspoon apple cider vinegar
1/4 teaspoon celery salt (or to taste, I add a little under 1/2 tsp)
black pepper

Steps:

  • Cook the penne according to the package instructions. Strain the water and set aside to cool, or run under cold water.
  • In a large bowl mix the rest of the ingredients. Fold in the penne until the pasta is completely mixed inches.

2 pounds sweet Italian sausage, roughly chopped
3/4 cups olive oil, divided
1 1/2 cups onion, diced and divided
1 tablespoon dried oregano, crushed
2 tablespoons garlic, chopped
6 cups plus 6 whole tomatoes, chopped
1/4 cup parsley, chopped
1 cup basil, julienned and divided
2 cups frozen peas
2 pounds penne pasta
3 ears corn, blanched

Steps:

  • In a saucepan cook the sausage until almost finished and remove from the saucepan. To the saucepan add 1/4 cup of olive oil and heat. Then add 1 cup of onions, oregano and garlic and saute for 2 minutes. Then add 6 cups of tomatoes, parsley and 1/4 cup of basil. Simmer for 5 minutes than add back to the sausage and simmer for 10 minutes then add the peas. Cook the pasta in a large pot of boiling salted water until al dente. Toss pasta with the sausage, add 1/2 cup of basil and season with salt and pepper.
  • Cut the kernels off the ears of corn and in a large bowl mix the corn with, remaining onion, 6 chopped tomatoes, basil and olive oil. Season with salt and pepper.

  • Steam the asparagus until crisp tender, then slice into 1 inch pieces.
  • Add the sliced asparagus and the remaining ingredients to the pasta and dressing. Toss until all of the ingredients are well coated.

I created this pasta salad while I was a student at Penn State University. Inexpensive, healthy, delicious and is just as tasty as a leftover. You may add sliced chicken or turkey breast for a one dish meal!!

1 package whole wheat penne
1 red pepper, diced
1 yellow pepper, diced
1 green pepper, diced
1 red onion, diced
6 -8 roma tomatoes, diced
1 cup extra virgin olive oil
salt and black pepper
1/2 cup locatelli romano cheese or 1/2 cup parmesan cheese
1/3 cup balsamic vinegar (less or more depending or your taste)
2 cups cooked sliced chicken or 2 cups turkey breast (optional)

Steps:

  • Boil pasta and cook till al dente.
  • Drain and toss with a small amount of olive oil.
  • Let cool slightly.
  • Add vegetables, oil, vinegar, and toss with cooked pasta.
  • Add romano cheese.
  • salt/pepper to taste.
  • Add cooked chicken/turkey breast (optional).
  • Refridgerate for at least 15-30 minutes.
  • You may need to add more oil or vinegar depending on how moist you desire the salad to be.
  • You may also replace the balsamic vinegar with any vinegar you prefer.

1 lb imitation crabmeat
1/2 cup chopped onion
1/2 cup chopped green pepper
1/2 cup chopped celery
1 1/2 lbs penne pasta, cooked
16 ounces sour cream
1 (16 ounce) bottle ranch dressing
1/4 cup milk

Steps:

  • Cook and cool pasta. Mix sour cream, dressing and milk (let sit 2 hours).
  • Mix together onions, peppers, celery, crabmeat and pasta. Mix well with dressing. Chill at least 2 hours.
