Steps:

  • Heat oven to 375 degrees F.
  • Cook pasta in large saucepan as directed on package, omitting salt and adding spinach to the boiling water for the last minute.
  • Meanwhile, cook and stir chicken and basil in large nonstick skillet sprayed with cooking spray on medium-high heat 3 min. Stir in tomatoes and spaghetti sauce; bring to boil. Simmer on low heat 3 min. or until chicken is done, stirring occasionally. Stir in Neufchatel.

2 tablespoons olive oil
1 medium onion, chopped
1 -2 garlic clove, chopped
28 ounces canned tomatoes, diced
1 teaspoon dried oregano
salt and pepper, to taste
2 cups mozzarella cheese, shredded

Steps:

  • Prepare penne in boiling, salted water as directed on package. Drain and set aside.
  • Preheat oven to 350. Lightly grease 9 x 13 casserole.
  • Heat olive oil in medium saucepan over medium heat.
  • Add onion and garlic and saute until tender, about 4 minutes.
  • Add tomatoes and oregano and cook until heated through.
  • Add salt and pepper to taste.
  • Combine penne, sauce and 1 cup mozzarella; mix well.
  • Pour into greased casserole and sprinkle remaining cheese on top.
  • Bake for 20 minutes at 350.

We like this recipe because we use fresh peppers, onions, and zucchini from our garden. I can up with this recipe because I needed a quick recipe for unexpected company and had left over marinara sauce in the refrigerator and breakfast sausage in the freezer. I usually make my recipe with ziti, however, penne pasta is basically the same thing. I make this recipe in the summer when I have lots of "fresh" zucchini from my garden. I always pick fresh, baby zucchini for this recipe, therefore, it isn't necessary to peel the zucchini or cook it, because it is very tender. When it is sliced thin, it cooks perfectly in the casserole and does not require prior cooking. I serve this with fresh garden salad and crusty bread or rolls.

1 package Jimmy Dean sausage
1 medium onion, course chop
1 small sweet red pepper, course chop
2 cloves garlic, minced
1 tablespoon extra virgin olive oil
1 teaspoon hot crushed red pepper flakes
2 teaspoons dry basil
1 (14 1/2 ounce) can tomato sauce
1 small zucchini, unpeeled,sliced very thin (do not cook zucchini, it will cook in the casserole)
salt and black pepper
1/2 box penne pasta
1 (8 ounce) package shredded colby-monterey jack cheese
1 tablespoon butter, to grease casserole dish

Steps:

  • Cook pasta to aldente stage, put in strainer, do not rinse and set aside to completely drain.
  • Heat large saute pan, add olive oil, onion, sweet red peppers, hot crushed red pepper flakes and garlic.
  • Saute on low until soft, not brown.
  • Place in a small bowl and set aside.
  • In same pan, brown sausage until cooked through.
  • If not using Jimmy Dean Sausage, remove any excess fat.
  • Return vegetable mixture back to pan and add tomato sauce, basil, salt and pepper to taste.
  • Bring to a boil, lower heat and simmer 10 minutes.
  • Grease 2 quart casserole, put 1/2 of the pasta, cover with 1/2 of the meat/sauce mixture, lay slices of 1/2 of the zucchini, sprinkle 1/2 of the cheese, repeat with a second layer of pasta, meat/sauce mixture, zucchini slices, ending with the remaining cheese.
  • Bake covered in 350 degree oven for 30 minutes, remove cover and bake until lightly brown, about 10 minutes.

200 g frozen spinach
85 g blue cheese, of choice (I use Blaukrantz a local blue cheese in S. Africa)
250 g mascarpone cheese
25 g freshly grated parmesan cheese
1 pinch chili flakes (optional)
freshly ground salt and black pepper, for seasoning

Steps:

  • Bring a large pan of salted water to the boil.
  • Add pasta and cook for 10-12 minutes, adding the spinach to the pan for the last 3 minutes of cooking time.
  • Drain well then tip the pasta and spinach into a shallow baking dish along with the crumbled blue cheese,pinch of chili flakes if using and seasoning to taste.
  • Put spoonfuls of the mascarpone cheese all over the top of the pasta.
  • Sprinkle with the parmesan then grill for 5 minutes until the mascarpone melts and the top turns a golden brown.
  • Serve with grilled tomatoes and a green salad.

1/2 c green pepper, chopped
2 clove garlic, minced
1 jar(s) (24 oz.) traditional spaghetti sauce
1 pkg (10 oz.) philadelphis italian cheese and herb cooking creme, divided
1 c shredded mozzarella cheese, divided
1/4 c grated parmesan cheese
3 c penne pasta, cooked

Steps:

  • 1. In a large skillet, brown the Italian sausage with the onion, pepper, and garlic. Stir in spaghetti sauce, 3/4 cup of the cooking creme and 1/2 cup of the mozzarella; cook and stir 2 to 3 minutes or until mozzarella is melted. Add pasta; mix lightly.

3-3/4 cups penne pasta (12 oz.), uncooked
1 Tbsp. olive oil
1 lb. boneless skinless chicken breasts, cut into bite-size pieces
1 jar (24 oz.) CLASSICO Tomato and Basil Pasta Sauce
2 cups loosely packed baby spinach leaves
1 pkt. SHAKE 'N BAKE Seasoned Panko Seasoned Coating Mix
1/4 cup KRAFT Grated Parmesan Cheese
2 tsp. dried Italian seasoning
1/4 tsp. garlic powder
3/4 cup KRAFT Finely Shredded Italian* Five Cheese Blend

Steps:

  • Heat oven to 400ºF.
  • Cook pasta as directed on package, omitting salt. Meanwhile, heat oil in large ovenproof skillet on medium-high heat. Add chicken; cook and stir 5 to 6 min. or until evenly browned. Stir in pasta sauce.
  • Drain pasta, reserving 1/2 cup cooking water. Add pasta and reserved water to chicken mixture in skillet along with the spinach; mix lightly.
  • Combine coating mix, Parmesan and seasonings in medium bowl; stir in shredded cheese. Sprinkle over pasta mixture.
  • Bake 15 to 20 min. or until heated through.

1 box(es) penne pasta
2 pound(s) any boneless, skinless chicken (i used thigh)
1 pound(s) sliced mushrooms
- season salt & pepper to taste
4 tablespoon(s) butter
1 - onion-finely chopped
8 - cloves of garlic-minced/grated
2 tablespoon(s) flour
2 cup(s) whole milk
2 cup(s) chicken stock
4 cup(s) shredded mozzerella
2 cup(s) parmesan cheese
1 package(s) cream cheese, room temperature
1 jar(s) artichokes (i used the marinated kind)
- paprika, oregano, fresh basil & parsley, to your preference.

Steps:

  • cook pasta, place in baking dish olive oil in pan, cook onion, 2 cloves of garlic, season salt, pepper, smoked paprika. Add onions, mushrooms, 2 more garlic. set aside when done.
  • put butter in pan, melt, add rest of garlic. Add Flour Add herbs Add milk & broth, cook until thickened slightly. Add half of parmesan & mozzerella cheeses
  • Put chicken mixture back on flame, and throw in chunks of softened room temperature cream cheese until all is in there, stir until melted and creamy. Add in artichokes. Add cheese sauce into noodles, stir. Add chicken mix, stir top with more paprika, and remaining cheese Bake at 350, 20-25 minutes.

12 oz. penne pasta
1 lb. ground beef or sausage
1 cup chopped onion
1 can (15 oz.) CONTADINA® Italian Style Tomato Sauce
1 can (14-1/2 oz.) CONTADINA® Recipe Ready Diced Tomatoes with Italian Herbs
1 can (6 oz.) CONTADINA® Italian Paste with Roasted Garlic
4 cups shredded mozzarella cheese

Steps:

  • Cook pasta according to package directions; drain. Cook meat and onion in large skillet over medium-high heat, 5 minutes; drain. Stir in tomato sauce, undrained tomatoes, tomato paste and ½ cup water; cook, stirring occasionally, 10 minutes. Layer half pasta, half sauce and half cheese in 13x9 inch baking dish; repeat. Cover and bake in preheated 350°F oven, 20 minutes.

Steps:

  • Wash hands, tie back hair and gather ingredients.
  • Finely chop the onion and basil. Chop the carrot into chunks and chop the meatballs into quarters.
  • Heat the vegetable oil in a saucepan on a medium temperature.
  • Add the meatballs and onion to the pan and fry gently for 5 minutes on a medium heat.
  • Add the can of tomatoes, the passata, tomato puree, sweetcorn, carrots, peas, basil, sugar, salt and pepper to the pan. Mix well.
  • Simmer gently on a low heat for 15 minutes, stirring it occasionally.
  • Whilst the sauce is simmering, cook the pasta. Boil water in a seperate saucepan and add the pasta. Leave the pasta to cook for 10-12 minutes until soft.
  • Once the sauce has simmered (your pasta should be cooking by now) remove the pan from the heat and place on a wooden board.
  • Once the pasta has cooked, drain it in a colander and rinse with cold water.
  • Pour the pasta sauce onto a plate. Then place the pasta on top in the middle of the plate. Sprinkle the mozzarella cheese on top of the pasta. Then put the whole basil leaf on top. Enjoy!!!
