Given to me by a friend when my daughter got pneumonia, this is potent and works very well, so I had better pass it forward! A little info(gleaned from Amazing Health): Grapefruit - high in vitamin C which strengthens the immune system. Grapefruit aids the body in eliminating poisons. The rind of the grapefruit is a natural source of quinine. Orange - high in vitamin C and A. Also contains high amounts of Potassium and a large amount of Calcium and Phosphorus. Known to decrease excess mucus from the head and nose. Useful in cases of respiratory ailments, such as bronchitis, pneumonia, and also asthma, high blood pressure and rheumatism. Lemon - contains vitamin B, C, Calcium, Iron, Potassium, and Phosphorus. Lemons are a natural antiseptic, helpful in destroying harmful bacteria in infection. Because of its vitamin C content, it acts as an immune system builder. Especially beneficial to the liver, an important organ of elimination. Lemon is also beneficial because it is alkaline forming in the body. Garlic - contains vitamin B,C, Calcium, Potassium, Phosphorus. Garlic is one of the most beneficial foods for the digestive system and has a positive effect on the lymph system, aiding in the elimination of toxic waste matter in the body. it is also a cleanser of the blood. It is a natural antibiotic and therefore very useful in strengthening the immune system. Onion - contains vitamin A, Thiamine, iron, niacin, and Calcium. Onions have antiseptic qualities. They help drain mucus from the sinus cavities and loosen phlegm. They will also help destroy worms and other parasites in the body. Recommended in cases of asthma, bronchitis, pneumonia, flu, and colds. Peppermint Oil - brings oxygen into the blood stream. It cleanses and strengthens the entire body.

1 grapefruit (peeled very thinly so some of the white pith remains)
1 orange (peeled very thinly so some of the white pith remains)
2 lemons (wash thoroughly, can leave peel on)
3 garlic cloves
1/2 large onion
3 drops peppermint oil (optional)
1/16-1/8 teaspoon cayenne pepper (if heavily congested)

Steps:

  • Cut the fruit and onion into coarse pieces.
  • Place in a blender and mix well.
  • You may need to add a little bit of water to get the blender to mix it without clogging.
  • Dosage: Adults - one cup a day.
  • Children - 1/2 cup a day.
  • This amount is not to be taken all at once, but just a spoonful at a time every so often throughout the day, until the total amount desired has been consumed.
  • Pour remainder into glass jar and keep refrigerated. When ready to use, warm slightly in a pan before serving.

This recipe was developed by my grandmother, Anna Buhal'tsev Bell Mersky, and then slightly improved by my mother, Sandy, and it is the MOST AUTHENTIC and BEST recipe for Jewish Chicken Soup that you will ever find. Trust me, it is GREAT!!!

1 whole fresh chicken
2 bunches carrots
2 stalks celery
3 large sweet potatoes
4 medium onions
2 bunches soup greens (anise tops)
1 -2 parsnip
pot stickers (used in place of kreplach)
salt and pepper
garlic granules

Steps:

  • Do not cut up the chicken.
  • Place the whole chicken in a very large pot.
  • Cover chicken with water.
  • Place on high heat and bring to a boil.
  • Cook for 5 minutes.
  • Remove from heat& skim the scum off the top.
  • Slice carrots across into pieces 1/4" thick and place into pot.
  • Slice celery the same as the carrots and place into pot.
  • Quarter onion and place into pot.
  • Peel& quarter the sweet potatoes and place into pot.
  • Cut up parsnips and place into pot.
  • Place the soup greens, which are the tops of anise, into the pot.
  • Discard the actual anise root.
  • Place pot back on the burner on medium-low heat and simmer.
  • Slightly season with salt, pepper and garlic to taste.
  • Cover and continue to simmer until vegetables are tender and the chicken is done and almost falling off the bone.
  • Remove the chicken from the pot and remove all of the chicken from the carcass.
  • Discard the carcass and return the chicken pieces back to the pot.
  • Taste to see if it is seasoned to your liking.
  • If it's not, adjust with more salt, pepper and garlic as needed.
  • Separately boil the pot stickers and then add them to the soup just before serving, or else you can make matzo balls as directed on the box of matzo ball mix, and then add the matzo balls to the soup just before serving.

8 c water
TINY MEATBALLS
1 lb turkey, ground (chicken can b used)
1/2 c breadcrumbs
1/2 c parmesean cheese
1 large eggs
1/2 tsp salt n blk.pepper. each
1/2 CUP DRIED TINY PASTA, COOKED N THEN ADDED TO SOUP (OPTIONAL)

Steps:

  • 1. FIRST MAKE UR TINY MEAT BALLS BY COMBINING MEATBALL INGREDIENTS N ROLLING THEM INTO WALNUT SIZED BALLS.... PUT IN FRIDGE UNTIL READY TO B USED.

1 whole chicken (5-6 lbs)
1/4 cup celery, chopped
1/4 cup carrot, chopped
1 medium onion, chopped
1 bulb of garlic, chopped
1 shallot, chopped
1 tablespoon kosher salt
1 tablespoon ground pepper
1 gallon water
5 cups water
4 tablespoons Worcestershire sauce
4 tablespoons teriyaki sauce

Steps:

  • Preheat oven to 375º.
  • Place a vertical roaster in an 8¼" x 8¼" x 2½" square glass baking dish.
  • Clean the chicken "innards" and place in a 1-quart pot with 2 cups water, 1 tablespoon Worcestershire Sauce, 1 tablespoon Teriyaki Sauce, ½ teaspoon salt, ½ teaspoon ground pepper. Cover and cook on lowest possible flame for 1 hour.
  • Place chicken on vertical roaster.
  • In the glass baking dish, pour 1 cup water and the remaining Worcestershire and Teriyaki.
  • Cook until wings are VERY dark, but not burned (about 40 minutes); basting every 7 - 10 minutes.
  • In an 8-quart pot, place remaining water, salt, pepper, celery, carrots, onion, garlic and shallot and set on high heat.
  • When chicken is done, set aside to cool.
  • When the innards are done, add the broth to the main pot. If you like innards, enjoy them; if not, discard them (or send them to me).
  • When chicken is cool enough to work with, remove the skin and set aside.
  • Remove all the meat from the bone, and cut into bite-sized pieces.
  • Set the bones aside.
  • Add chicken to the "broth", and reduce to medium-low heat.
  • Wrap the skin and bones in cheesecloth, tying the cheesecloth as you would a tourniquet; basically bring all four corners together and tie.
  • Place skin and bones in broth and simmer for 3 hours, keeping an eye on the level in the pot. Add water as needed.
  • Remove skin and bone cheesecloth and discard (cheesecloth can be washed and reused if desired).
  • If you want to use Homemade Chicken Broth in the future, save what you don't use, chill and skim. Alton Brown would be proud.
  • This is not Campbell's soup, but then Mr. Campbell didn't grow up with a Jewish grandmother.

Mary Stacey shared this chicken soup recipe with The Times in 1990. The then 76-year-old aunt of Curtis Sliwa, of the Guardian Angels, made it regularly in her Howard Beach home, carrying the soup to Mr. Sliwa as he patrolled the subways. Mrs. Stacey believed that the magic of chicken soup is unleashed only when the carrots and onions are mashed into the broth. Strained, it makes an excellent broth for a myriad of soups. The strained broth can be frozen in small containers for future soups or in ice-cube trays to use in sauces.

1 4- to 5-pound chicken, quartered
2 chicken feet or 4 chicken wings or 1 turkey wing
1 clove of garlic, bruised
1 medium onion, peeled
2 carrots, peeled and cut into 1-inch pieces
2 stalks celery cut into 1-inch pieces
1/2 bunch parsley, tied
1 bay leaf
1 1/2 teaspoons salt
1/2 teaspoon black peppercorns
4 quarts cold water

Steps:

  • In a large pot, place four quarts cold water. Add the chicken, garlic, onion, carrots, celery, parsley, bay leaf, salt and peppercorns and slowly bring to a boil over medium heat. Reduce the heat and simmer for three hours, using a spoon to skim the soup as thoroughly as possible. Cool. (The soup can be strained at this point, to use as chicken broth. Mrs. Stacey proceeds with the next two steps.)
  • Strain the soup. Discard the onion, parsley, bay leaf and peppercorn, and save the other vegetables. Skin and debone the chicken and save the meat. Return the chicken meat, carrots, celery and garlic clove to the pot and bring back to a simmer, seasoning with additional salt or pepper to taste.
  • Serve the soup in big bowls, over pastina, rice or very thin spaghettini. The soup's curative powers are released only when the vegetables are mashed together in the bowl. Use a fork for mashing. Use a big spoon for eating.

Ok...if you don't ever make any other Jewish food, you must learn how to make this. Your family will love you and you can freeze the leftovers and when someone gets sick, this will fix them.

7 lb chicken, a whole bird plus wings and thighs
14 c cold water
1 Tbsp salt
2 medium carrots, peeled
2 large celery ribs
1 medium parsnip, peeled and split if large
1 large leek, split lengthwise and well rinsed, several inches of the green part
1 medium onion, peeled and halved.
several sprigs of parsley and dill
6-8 whole peppercorns

Steps:

  • 1. The most important part is to rinse the inside of the chicken under cold water. You must remove all the liver and any other brown material. This will ensure after your skimming to remove the scum at the initial simmer, you will get a good clear soup-not schmutzy (shmoot-zee), which is ok but not as nice a clear soup.
  • 2. In a large pot bring the chicken, water and salt to a simmer over high heat. Reduce heat and let simmer for 15 minutes, skimming off any scum that comes to the surface. You can use a fine mesh skimmer or a slotted spoon works fine. Stir the chicken once or twice during this process which will loose the schmutz for skimming. When you start getting only white foam, add carrots, celery, parsnip, leek,onion and black peppercorns. Simmer, uncovered,very gently, but steadily, for 3 to 4 hours. Add the parley and the dill in the last 30 minutes, or you will get green soup. Remove from heat and cool to tepid. Refrigerate overnight.
  • 3. Remove most of the chicken fat that has hardened on top of the soup. Strain the soup through a large colander into another pot. Pick out any parsnip or carrots you may like to serve with the soup and discard your solids. In years past, the chicken was so flavorful that the meat was still delicious, but todays chicken, not so good. Mine as well pitch it. Reheat soup and serve as a clear broth or you can cook some noodles separately and add or for the ultimate experience, add matzo balls (Knaidlach). Will have a recipe you can follow for that, just search for Knaidlach.

MOTHERS CHICKEN SOUP (JEWISH PENICILLIN)



Mothers Chicken Soup (Jewish Penicillin) image

2 PURDUE Oven Stuff Roasters
2 bunches Dill
2 bunches Parsley
12 pieces Large Carrots
1 piece Onion (Sweet or Spanish)
10 pieces Parsnips
2 bunches Scallions
1 piece Leek
1 piece Knob Celery
1 piece Root Parsley
6 stalks Celery
6 cloves Garlic

Steps:

  • Clean Chickens; discard neck, gizzards.
  • In a 20QT. Stock Pot put in chickens (halved) and fill with water until chicken is sufficiently covered.
  • Bring to a slow boil and skim fat.
  • In the meantime; wash, peel and clean all other ingredients.
  • TIE bunches of Parlsey, Dill and Scallions.
  • Put ALL ingredients in POT and bring back to a boil, the lower heat to a steady simmer.
  • Half way through simmer; add seasoning (Salt, Pepper, Oregano).
  • COOK for 3-3.5 hours.
  • LET COOL, remove vegetables. Discard ALL except CARROTS.
  • REMOVE chicken, let cool, pull meat off bones and retain for soup when served.
  • STRAIN SOUP through a fine mesh strainer.

PENICILLIN COCKTAIL

No new drink of the twenty-first century has gone further in terms of fame than this complex, spicy, smoky turn on a Whiskey Sour.

2 ounces blended Scotch, such as Famous Grouse
¾ ounce honey-ginger syrup (recipe follows)
¾ ounce fresh lemon juice
¼ ounce Islay single-malt Scotch, preferably Laphroaig 10YO
Candied ginger

Steps:

  • Combine the blended Scotch with the honey-ginger syrup and lemon juice in a cocktail shaker three-quarters filled with ice. Shake until chilled. Strain into a rocks glass filled with one large cube. Top with the Islay Scotch and garnish with candied ginger.
  • To make the honey-ginger syrup, combine 1 cup of honey with one 6-inch peeled and sliced piece of ginger root with 1 cup of water in a small pot and bring to a boil. Reduce the heat and simmer for 5 minutes. Refrigerate overnight, then strain, discarding the solids.

small slice of ginger, peeled and roughly chopped
1 heaped tbsp honey
50ml scotch whisky
25ml lemon juice, plus a lemon wedge to garnish
ice

Steps:

  • Drop the ginger into the base of a cocktail shaker and drizzle in the honey. Mash the together with a muddler or the back of a long-handled spoon.
  • Pour in the whisky and lemon juice and add a handful of ice. Seal the shaker, then shake well until the outside is very cold.
  • Fill a tumbler or rocks glass with ice cubes, then double-strain the cocktail into the glass. Garnish with a lemon wedge.

1 large stewing chicken
1 onion
2 stalks celery
2 chicken bouillon cubes
salt and pepper
2 tablespoons chicken fat or 2 tablespoons oil
2 eggs, slightly beaten
1/2 cup matzo meal
1 dash salt
2 tablespoons stock or 2 tablespoons water

Steps:

  • In large stew pot, add all soup ingredients.
  • Cover with water, top pot with lid and simmer until chicken falls off bone.
  • Remove celery and onion.
  • Bone chicken and reserve.
  • Add matzoh dough to simmering broth, cooking until done*.
  • Add chicken to broth: serve hot.
  • *MatzohBall directions: Mix fat and eggs together.
  • Add matzoh meal and salt.
  • When well blended, add soup stock/water.
  • Cover bowl and place in refrigerator 20 minutes.
  • Into simmering soup, drop matzoh mixture by tablespoons.
  • They will form balls and float to the top.
  • Cover pot and cook about 20 minutes.

This potent mix of scotch, grapefruit juice, and honey-ginger syrup is a winter-friendly twist on the modern classic cocktail.

1 (6") piece fresh ginger, unpeeled, thinly sliced
3/4 cup honey
2 ounces blended scotch
1 ounce fresh grapefruit juice
1/2 ounce single malt scotch (such as Laphroaig)

Steps:

  • Bring ginger, honey, and 1 cup water to a simmer in a small saucepan over medium-low heat. Cook, stirring, until honey has dissolved. Gently simmer, uncovered, 30 minutes. Strain through a fine-mesh sieve into a small bowl; discard solids. Let cool to room temperature.
  • Combine blended scotch, grapefruit juice, and 1 oz. honey-ginger syrup in a cocktail shaker filled with ice. Cover; shake vigorously until outside is frosty, about 20 seconds. Strain into a rocks glass, preferably with a single large ice cube. Top off with single malt scotch.
  • Cooled ginger-honey syrup can made 2 weeks ahead. Store in an airtight container and chill.
