Peels-Inspired Buckwheat and Oat Bran Rosemary Lemon Muffins image

I was inspired to develop this muffin recipe in an attempt to recreate this really delicious (and healthy!) muffin I tried in NYC's East Village at a fabulous little spot called Peels. If you like muffins, but generally avoid them knowing how unhealthy they tend to be, try these. They're unique, easy to make, and you can definitely feel good about eating them. They also freeze well, so you can have a tasty and healthy breakfast option on-the-go... just pop one in the microwave for 40 seconds. :o)

Number Of Ingredients 24

3/4 cup buckwheat flour
3/4 cup oat bran
1/4 cup brown sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1 1/4 teaspoons cinnamon
2 sprigs fresh rosemary leaves (1 tbl fresh = 1 tsp dried. I used fresh, but dried might be nice here.)
1/2 teaspoon kosher salt
1/3 cup banana, mashed, equal to 1 medium
1/2 cup lowfat Greek yogurt, plus an additional tablespoonful
1 egg (or two egg whites)
1/4 cup lemon marmalade, plus 2 tbl (I couldn't find 100% lemon, so I used a Lemon, Orange & Grapefruit marmalade from WF.)
2 tablespoons canola oil
1/2 teaspoon vanilla
1 1/2 tablespoons fresh lemon juice (or juice from half a lemon)
1/2 cup dates, chopped
1/3 cup pecans or 1/3 cup walnuts, chopped
1/2 cup carrot, shredded
1/3 cup zucchini, shredded
2 tablespoons freshly grated lemon peel (from the same lemon used for juice)
1/4 cup candied lemon rind (I was too lazy to do this, but it would be a great add-in if you are motivated enough to make it!)
2 tablespoons unsalted browned butter
2 tablespoons turbinado sugar (or enough to sprinkle on top of muffins)
1/3 cup old fashioned oats (or enough to sprinkle on top of muffins)

Steps:

  • Preheat oven to 400 degrees Fahrenheit.
  • Chop/shred dates, pecans, carrots, and zucchini. Set aside.
  • Grate lemon peel of one lemon. Set aside grated peel, and reserve lemon for juice (for the "wet ingredients").
  • Mix together dry ingredients.
  • Mix together wet ingredients in a separate bowl.
  • Gradually combine dry mixture into wet mixture, stirring just until moistened. Do not overmix.
  • Fold in dates, pecans, carrots, and zucchini. Fold in freshly grated lemon peel (and/or candied lemon rind, if using).
  • Brown the butter, and gently stir into mixture.
  • Grease muffin tin with non-stick cooking spray and fill cups with batter to about 3/4 full. Sprinkle with turbinado sugar and oats. Bake for 18-20 minutes. Makes 12 muffins.

1 cup oatmeal
1/2 cup unsweetened applesauce
1 cup water (may substitute milk, buttermilk, or juice)
1 cup whole wheat flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon allspice
2 carrots, coarsely grated

Steps:

  • Preheat oven to 350°F Spray 9 muffin cups with no-stick cooking spray.
  • Combine oatmeal, applesauce, and water. Stir to combine.
  • Add flour through allspice. Stir until just combined.
  • Stir in carrots.
  • Fill muffin cups 3/4 full.
  • Bake for approximately 20 minutes. (This time depends on your oven--check after 15 minutes.).

I've been working on this recipe for a few months now and I'm happy with this final version. I've attempted to make it healthy without being austere. If you can't buy oat flour locally you can make it by processing rolled oats or just go ahead and use the rolled oats as is. Hope you enjoy it as much as we do. This is great for a cozy winter supper with grilled turkey sausage and a grilled seasonal vegetable.

1/2 cup buckwheat flour
1/2 cup oat flour or 1/2 cup rolled oats
1/2 cup chopped walnuts
1 teaspoon sugar or 1 teaspoon sugar substitute
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 eggs or 1 equivalent egg substitute
3/4 cup buttermilk
1/2 cup unsweetened cinnamon applesauce
2 tablespoons melted butter or 2 tablespoons oil, of choice
maple syrup

Steps:

  • Mix dry ingredients in a large bowl.
  • Beat liquid ingredients ( except syrup or topping) in a small bowl; add to dry ingredients and stir until just mixed.
  • Spray or lightly oil a hot griddle or non-stick skillet and add batter by 1/3 cup measures; turn when bubbles form on top surface and underside is browned. Cook second side until browned. This should result in 10 each 5" pancakes.
  • Serve with syrup or topping of choice.

A nice light lemon flavoured muffin that is good to have for morning or afternoon tea, or, as a dessert served with some whipped cream and maybe some fresh berries.

2 cups self-raising flour
3/4 cup sugar
75 g butter, melted
1 cup milk
1 egg
1 large lemon, zest of
1/4 cup lemon juice
1/4 cup sugar

Steps:

  • Toss the 1st measure of sugar & flour together in a bowl.
  • Beat with a fork the melted butter, milk and egg until well combined.
  • Add the lemon zest & stir to mix .
  • Add the liquid to the dry ingredients and mix carefully until just combined.
  • Spray 12 medium size muffin tins with non-stick spray and then divide mixture evenly between them.
  • Bake for 10 - 15 minutes at 200 degrees Celsius (depends on your oven).
  • Meanwhile stir together the 2nd measure of sugar and lemon juice without dissolving the sugar.
  • Pour over hot muffins as soon as they come out of the oven.
  • Leave for a couple of minutes but do not leave too long in tins as they may stick.
  • Enjoy.

3/4 cup whole wheat flour
3/4 cup white flour
1/2 cup sugar
2 teaspoons baking powder
