2 cups all-purpose flour
1 tablespoon baking powder
1 teaspoon ground cinnamon
¼ teaspoon salt
2 eggs, lightly beaten
1 cup nonfat milk
2 tablespoons vegetable oil
2 tablespoons applesauce
½ cup packed brown sugar
2 teaspoons vanilla extract
¼ cup margarine, melted
¼ cup packed brown sugar
1 cup chopped pecans

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease 12 muffin cups.
  • Combine the flour, baking powder, cinnamon, and salt in a large bowl. Mix the eggs, milk, oil, applesauce, 1/2 cup brown sugar, and vanilla extract in a separate bowl. Stir the egg mixture into the flour mixture until the batter is just moistened.
  • Combine the melted margarine or butter, 1/4 cup brown sugar, and pecans; divide it into each prepared muffin cup. Portion about 1/4 cup muffin batter into each muffin cup, on top of the pecan mixture.
  • Bake in preheated oven until a toothpick inserted into a muffin comes out clean, 25 to 30 minutes. Invert pan onto a piece of aluminum foil; let stand 2 minutes then remove pan.

1 cup brown sugar (, packed)
1 cup flour
3 large eggs

Steps:

  • Preheat oven to 350 degrees and line a 12 cup muffin tin with muffin liners.
  • Add 1 cup of the pecans to a food processor and pulse until finely ground (do not let this become a paste).
  • Whisk together the 1 cup pecan crumbs, brown sugar, flour, eggs, and melted butter.
  • Scoop into muffin tins.
  • Chop the remaining pecans coarsely and sprinkle over muffin batter.
  • Bake for 22-25 minutes or until a toothpick comes out clean.

1/2 cup unbleached all-purpose flour
1/2 cup whole wheat flour
1/4 cup sugar
1 teaspoon baking powder
1/8 teaspoon salt
1/2 cup whole milk
1/4 cup vegetable oil
1 large egg
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
1/2 teaspoon ground cloves
1/4 teaspoon ground nutmeg
1/4 cup toasted chopped pecans
3 table spoons dark brown sugar
1/4 cup brewed coffee
1/8 teaspoon cinnamon
1 teaspoon unsalted butter
1 pinch salt

Steps:

  • 1. Mix together all the dry ingredients in one bowl. In a separate bowl, mix together egg with milk, vegetable oil and vanilla.
  • 2. Combine wet and dry ingredients together and mix just untill combined.
  • 3. Preheat the oven to 375 degrees F. Line standard muffin tins with foil liners. Grease with oil and scoop about 2-3 table spoonful of batter for each muffin. Top with pecan halves and bake in the oven for 20-25 minutes until golden brown and toothpick inserted in the center comes out clean. Cool in a pan on a rack.
  • 4. For carame glaze: mix together all the ingredients in a sauce pan and bring to boil. Turn down the heat and cook for about 5 minutes until syrup is thickened but still pourable. Pour the glaze over the muffins that are still slightly warm. Remove muffins from a pan and cool completely on a rack.
