PECAN PRALINE MORSELS (PAULA DEEN)
I saw Paula Deen make these on the Food Network and they look wonderful - like candy coated pecans. They would be a great addition to your holiday cookie trays.

Steps:
- Preheat oven to 350°.
- In a medium bowl, combine all ingredients.
- Spread out onto a baking sheet, sprayed with cooking spray.
- Bake in the preheated oven for about 20 minutes, or until coating is dry, and slightly crystallized, stirring once.
- Remove from oven and remove from baking sheet.
- If not serving immediately, store in an airtight container.
AFTER-HOURS SOUTHERN PECAN PRALINE PIE
Chopping the pecans with a knife will produce a fine dust that can cloud the resulting pie, instead, use a rolling pin to gently break the pecans into small, 1/2-inch pieces. Be sure to remove the pie from the oven when the center is set but still wobbly; residual heat will finish the job. The extra bourbon in this pie will please the adults at the table!!

Steps:
- FOR THE DOUGH: Pulse flour, brown sugar and salt in food processor until blended. Add butter and pulse until flour is pale yellow and resembles coarse cornmeal, ten to fifteen 1-second pulses. (To do this by hand, grate frozen butter in large holes of box grater, then rub flour-coated pieces between your fingers until the flour turn pale yellow and coarse) Turn mixture inot a medium bowl.
- Using rubber spatula, fold 3 tablespoons water into flour mixture, then press against side of bowl, if mixture doesn't hold together, add one more tablespoons water. Squeeze dough together and flatten tnto a disk. Dust with flour, wrap in plastic and refrigerate at least 30 minutes or up to 2 days before rolling.
- Remove dough from refrigerator and let stand untl dough is malleable enough to roll out, but still cool, 10 -20 minutes. Adjust oven rack to middle position and heat to 375°F Roll dough on lightly floured surface into 12-inch circle. Roll dough over pin and unroll it even into a 9-inch glass pie plate. Fit dough into pie plate and flute edges. Refrigerate for 40 minutes, then freeze for 20 minutes.
- Line pie shell with two 12-inch pieces aluminum foil, fitting foil so that it hangs over edges of crust. Distribute 2 cups pie weights over foil, then bake until dough under foil dries out, 20-25 minutes. Carefully remove foil and weights, then continue to bake until crust is firmly set and lightly browned, 10-15 minutes. Remove pie shell from oven and set aside.
- (Shell can be cooled, wrapped tightly in plastic, and stored at room temperature for 1 day).
- FOR THE FILLING: Lower oven temperature to 275°F Place pie shell in oven if not still warm.
- Cook butter, brown sugar and salt together in medum saucepan over medium heat until sugar is melted and butter is absorbed, about 2 minutes. Remove from heat a d whisk in eggs, one at a time; whisk in corn syrup, vanilla and 2 tablespoons bourbon. Rerturn pan to medium heat and stir constantly until mixture is glossy and warm to touch, about 4 minutes. (Do not overheat; remove pan from heat if mixture starts to steam or bubble. Temperature should be about 130F) Remove pan from heat and stir in pecans and remaining bourbon.
- Pour mixture into warm shell and bake until center feels set yet soft, like gelatin, when pressed gently, 45-60 minutes. Cool pie completely on rack, at least 4 hours. (Pie can be refrigerated for up to 1 day) Serve pie at room temperature or warm it briefly in oven, topped with whipped cream or vanilla ice cream.

SOUTHERN HOLIDAY PECANS
I think this may be a Paula Deen recipe, there is nothing noted on the recipe card, so I am not sure. There are several versions of sweet & spicy pecans on Food.com, but all of them are slightly different. Any time you add sugar & spices to pecans it is a winning combination.

- Melt butter, cayenne, cinnamon & sugar together.
- Pour over pecans, stir to mix completely.
- Sprinkle salt over nuts, toss to combine.
- Spread on parchment lined cookie sheet.
- Bake at 325 F for 15 minutes, stir half way thru baking.
- Cool & store in airtight container.

PERFECTLY PECAN PRALINE COOKIES
As seen on Paula Deen's Cookie Swap.... I love anything Praline so I'm posting this to try. They look absolutely scrumptious. Praline inside a cookie dough then sprinkled on top of the cookie that is drizzled with melted white chocolate. Recipe by Susan Butts, a guest on the Food Network Special 2009.

- Preheat oven to 350 degrees F.
- Praline:.
- In a small heavy saucepan over medium heat, stir together constantly the sugar and water. Cook until boiling for 2 1/2 to 3 minutes or until the syrup is golden brown in color. It is important to remove the saucepan from the heat just as the sugar begins to darken to an amber color. Remove from the heat and stir in 1 cup pecans. Carefully pour the hot mixture onto a parchment lined sheet tray. Let cool until completely firm. Transfer to a plastic bag, crush with a rolling pin, and reserve for the cookie dough.
- Cookies:.
- In a large bowl, cream the butter and sugars together with a hand mixer. Add the eggs, 1 at a time, beating well after each addition. Add vanilla extract and beat until combined.
- Stir in the flour and baking soda and mix until incorporated. Fold in the reserved crushed praline until combined. Drop 1 tablespoon or a small ice cream scoop of the dough onto a parchment paper lined cookie sheet. Bake for 13 to 15 minutes or until the edges are slightly browned.
- While the cookies are baking, melt the chocolate in a double boiler and stir until smooth. When the cookies are done drizzle the white chocolate over the cookies and sprinkle with the chopped pecans.

- Butter the sides of a heavy 2-quart saucepan.
- Put the sugars, salt, corn syrup, milk, and butter in saucepan.
- Over medium heat, stir mixture constantly with a wooden spoon until sugars have dissolved and mixture comes to a boil.
- Continue to cook to a soft ball stage, approximately 236 degrees F on a candy thermometer.
- (If you do a cold water test, drizzle a drop of candy into a glass of cold water, the ball of candy will flatten between your fingers when you take it out of the water.) Remove from heat and allow it to cool for 10 minutes.
- Add the vanilla and nuts, and beat with a spoon by hand for approximately 2 minutes or until candy is slightly thick and begins to lose its gloss.
- Quickly drop heaping tablespoons onto waxed paper.
- If the candy becomes stiff, add a few drops of hot water.
