PECAN ICEBOX COOKIES

My best friend's grandmother frequently makes these old-fashioned cookies and was kind enough to pass the treasured family recipe on to me.

Number Of Ingredients 10

1 cup butter, softened
1 cup sugar
1 cup packed brown sugar
3 eggs
4 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt
1 cup chopped pecans

Steps:

  • In a large bowl, cream butter and sugars until light and fluffy. Add the eggs, one at time, beating well after each addition. Combine the flour, baking powder, baking soda, cinnamon and salt; gradually add to the creamed mixture and mix well. Stir in pecans. Shape into four 6-1/2-in. rolls; wrap each in plastic wrap. Refrigerate overnight. , Unwrap and cut into 1/8-in. slices. Place 1 in. apart on ungreased baking sheets. Bake at 375° for 7-10 minutes or until lightly browned. Remove to wire racks to cool.

1 cup butter, softened
1-1/4 cups sugar
1 large egg
2-1/2 cups all-purpose flour
1-1/2 teaspoons baking soda
1/8 teaspoon salt
1 cup chopped pecans
3/4 cup red and/or green candied cherries

Steps:

  • In a large bowl, cream butter and sugar until light and fluffy. Beat in egg. Combine the flour, baking soda and salt; gradually add to creamed mixture and mix well. Stir in pecans and candied cherries. , Shape into four 8-in. rolls; wrap in plastic. Refrigerate for at least 4 hours or until firm., Unwrap and cut into 1/8- to 1/4-in. slices. Place 2 in. apart on ungreased baking sheets. Bake at 350° for 7-8 minutes or until lightly browned and edges are set. Cool for 1-2 minutes before removing to wire racks.

1/2 cup shortening
1/2 cup sugar
1/2 cup packed brown sugar
1 large egg
2 tablespoons orange juice
1 tablespoon grated orange zest
1/2 teaspoon lemon extract
1/2 teaspoon vanilla extract
2-3/4 cups all-purpose flour
1/2 teaspoon salt
1/2 teaspoon baking soda
1/4 teaspoon baking powder
1 cup finely chopped pecans

Steps:

  • In a large bowl, cream the butter, shortening and sugars until light and fluffy. Beat in the egg, orange juice, orange zest and extracts. Combine the flour, salt, baking soda and baking powder; gradually add to the creamed mixture and mix well. Stir in pecans. Shape dough into four 5-in. rolls; wrap each in plastic. As a little girl, I always loved their butterscotch flavor and was fascinated by the way Grandmother prepared these cookies (from logs that she took out of the icebox!). 1/2 batch Chocolate Cookie Dough
1/2 batch Spice Cookie Dough
2/3 cup raspberry jam
1 cup mixed ground pecans and semisweet chocolate

Steps:

  • Shape each piece of dough into a disk. Wrap in plastic wrap, and refrigerate until firm, about 1 hour.
  • Roll out each disk to a 1/8-inch thickness on a floured piece of parchment. Cut into 2-by-9-inch strips. Spread 2 teaspoons jam onto 1 strip; sprinkle with 2 tablespoons ground nut and chocolate filling. Repeat, layering 3 to 5 more strips, alternating between chocolate and spice dough, ending with a plain strip.
  • Wrap in parchment. Refrigerate until firm, at least 2 hours. Slice dough crosswise slightly thicker than 1/8 inch. Bake at 350 degrees on parchment-lined baking sheets until firm, 12 to 14 minutes.

I like cookie recipes that allow me to prepare them one day and then bake them as I need them. The cherries make this a nice Christmas treat.

1 c butter, unsalted, room temperature
1 c icing sugar, sifted
1 large egg
1 tsp vanilla
2 1/4 c all purpose flour
1/4 tsp fine salt
2 c candied red cherries, cut in half
1 c chopped pecans

Steps:

  • 1. 1. Cream butter and icing sugar until smooth. Beat in egg and vanilla extract. Sift flour and salt over butter mixture and stir until well blended. Stir in candied cherries and pecans. Divide dough into 3 equal pieces and shape into round logs, 10-inches in length and about an inch in diameter. Wrap and chill until firm, at least 3 hours. 2. Preheat oven to 325 degrees F. and line a baking tray with parchment paper. 3. Cut rounds of cookie dough as thinly as possible, about 1/8-inch thick and place on baking tray 1-inch apart. Bake 8 to 10 minutes, just until the outside edge of the cookie begins to color. Remove and cool completely. 4. Cookies can be made and stored in an airtight container for up to 2 weeks or frozen. Unbaked dough can also be wrapped airtight and then frozen. Makes about 4 dozen cookies.

1/2 cup granulated sugar
1/2 cup packed brown sugar
1 teaspoon vanilla
3 cups Gold Medal™ all-purpose flour
1/4 teaspoon salt
1/2 cup chopped pecans
2/3 cup toffee bits

Steps:

  • In large bowl, beat butter, granulated sugar, brown sugar and vanilla with electric mixer on medium speed until light and fluffy. On low speed, beat in flour and salt just until blended. Stir in pecans and toffee bits. Divide dough in half; shape each half into 14x1 1/2-inch log. Wrap in plastic wrap; refrigerate 3 hours.
  • Heat oven to 325°F. Line cookie sheets with cooking parchment paper. Unwrap dough; cut into 1/4-inch slices. On cookie sheets, place slices 1 inch apart.
  • Bake 12 to 14 minutes or until set and very lightly browned. Cool 2 minutes; remove from cookie sheets to cooling racks. Store cooled cookies tightly covered at room temperature.

1 c butter ( do not use margarine)
2 1/4 c light brown sugar, firmly packed
1/3 c sugar
1 tsp vanilla extract
3 c all purpose flour
1/2 tsp baking soda
1/2 tsp salt
2 c pecans, finely ground (use food processor)
2 large eggs

Steps:

  • 1. In a large bowl cream the butter and sugars with an electric mixer until fluffy. Add the eggs and vanilla and mix well. In a separate bowl stir the flour and baking soda together and add the mixture to the batter. Stir in the ground pecans. Form the dough into rolls on wax paper and refrigerate for at least 12 hours. Slice thin and place on ungreased cookie sheets. Bake at 350 degrees for 8 to 10 minutes.

1/2 cup vegetable shortening solid
1 egg
1 tablespoon orange rind grated
2 tablespoons orange juice concentrate
2 cups whole wheat flour or all-purpose flour
1/2 teaspoon baking soda
1/2 cup pecans chopped

Steps:

  • In a large mixer bowl at medium speed, beat sugar, brown sugar, butter or margarine, and shortening until light and fluffy. Beat in egg, orange rind and juice. At low speed, gradually beat in flour and baking soda until moistened. Beat in pecans (mixture will be soft). Divide into three portions place each on waxed paper and form into a 1 1/2 -inch diameter roll, about 8 inches long. Wrap each portion in the waxed paper then in foil and chill overnight or up to several days.Preheat oven to 350°. Grease baking sheets. Unwrap rolls of dough and slice 1/4 inch thick. Place 1 inch apart on baking sheets. Bake for 8 to 10 minutes or until golden. Cool cookies on wire racks.Store in an airtight container. Dough keeps in the refrigerator up to 1 week.
