An old Amish neighbor taught me how to make this very simple, yet delicious recipe...she was always making simple treats and sending to us...for favors we did for them...I miss her cooking since we moved...this was the last recipe she shared with me... I added my own touch to the recipe, adding pecans... I think Rachel would...

SYRUP
1 3/4 c packed, brown sugar - i use dark
2 1/4 c very hot water
1 1/2 Tbsp butter
DUMPLINGS
1 c packed, brown sugar
1 Tbsp butter, softened
2 c flour
1 1/2 tsp baking powder
pinch salt
3/4 c milk
3/4 c pecans, in pieces

Steps:

  • 1. Preheat oven to 350 degree F. In a 9 x 13 baking dish...mix the brown sugar, water...add butter, and place dish in preheated oven. Prepare dumplings.
  • 2. In a medium bowl; mix dumpling ingredients until thoroughly combined...if too thick, add a bit more milk, just enough to incorporate the dry ingredients.
  • 3. Now, take pan from oven...make sure butter is melted into the syrup...stir around a little. Using a tablespoon, place heaping dollops of dough into the hot syrup. You should get 12 dumpling, 3 per row. Sprinkle with pecans, if using, sometimes I put them into the syrup first. It doesn't matter.
  • 4. Bake for 30 minutes, or until dumplings are completely cooked.
  • 5. Place dumplings into serving dish, and ladle desired amount of syrup over the dumpling, and ice cream if using...it's delicious!

½ cup unsalted butter
½ cup brown sugar
¼ cup heavy whipping cream
1 teaspoon salt
¾ cup chopped pecans

Steps:

  • Stir butter and brown sugar together in a saucepan over medium heat until melted. Stir in heavy whipping cream and salt; bring to a boil. Reduce heat to medium and simmer until thickened, about 5 minutes. Remove from heat to cool slightly, 3 to 5 minutes. Stir in chopped pecans.

1-1/2 cups packed brown sugar
1-1/2 cups water
DUMPLINGS:
1-1/4 cups all-purpose flour
1/2 cup sugar
2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup whole milk
2 tablespoons butter, softened
2 teaspoons vanilla extract
1/2 cup coarsely chopped peeled apple, optional
Vanilla ice cream, optional

Steps:

  • In a large skillet, heat the butter, brown sugar and water to boiling. Reduce heat to simmer. , Meanwhile, combine the dumpling ingredients; add apple if desired. Drop by tablespoonfuls into the simmering sauce. Cover tightly and simmer for 20 minutes. Do not lift lid. If desired, serve warm with vanilla ice cream.

1 tube (8 ounces) refrigerated crescent rolls
4 small Granny Smith apples, peeled and halved
1 teaspoon sugar
1 teaspoon ground cinnamon
ORANGE SAUCE:
3/4 cup orange juice
1/2 cup sugar
1/2 cup butter, cubed
2 tablespoons chopped pecans, toasted

Steps:

  • Unroll crescent dough and separate into eight triangles. Wrap one triangle around each apple half. Place on a greased 15x10x1-in. baking pan, flat side down., Combine sugar and cinnamon; sprinkle over dumplings. Bake at 350° for 23-28 minutes or until golden brown and apples are tender. , For sauce, in a small saucepan, combine orange juice and sugar; bring to a boil, stirring occasionally. Cook for 10-12 minutes or until liquid is reduced to about 1/2 cup, stirring frequently. Remove from the heat; gradually stir in butter just until blended. A very Canadian recipe using Pure Canadian Maple Syrup #1 Light. Do not use imitation Maple Syrup. This recipe came from one of Canadas main producers/suppliers of Maple Syrup in Quebec Canada.

1 cup flour
2 teaspoons baking powder
1/4 teaspoon salt
2 tablespoons shortening, cut into small pieces
1/2 cup milk
2 1/4 cups light maple syrup

Steps:

  • In a bowl, sift flour, measure and re-sift with baking powder and salt. Add shortening and mix well until shortening is fine. Add milk, blend. Dough will be quite firm.
  • Heat 2 cups of maple syrup in a frying pan; bring to a boil over medium to high heat. Lower heat so that the syrup is not boiling and drop spoonfuls of dough into the syrup. Cover and poach for 12 to 15 minutes, making sure syrup is not boiling.
  • Serve hot with remaining maple syrup.
