TUNA WITH MUSTARD SEED CRUST

2 one-pound sushi-quality tuna steaks, 1 1/2 inches thick
1/2 cup yellow mustard seeds
1 teaspoon coarse salt
1/2 teaspoon freshly ground pepper
3 tablespoons extra-virgin olive oil, plus more as needed for cooking
1 small bunch arugula, washed
2 lemons, halved

Steps:

  • Using a sharp knife, slice each tuna steak into two long pieces that are about 1 1/2 inches wide. Grind mustard seeds to a coarse powder in a spice grinder or mortar and pestle. Combine ground seeds with salt and pepper, and spread mixture out on a plate.
  • Dredge each piece of tuna in the ground mustard mixture, gently pressing the seeds against the tuna so that they adhere.
  • Place a large skillet over medium heat. Let stand until the skillet feels hot when you place your palm just above it, about 1 minute. Add 1 1/2 tablespoons olive oil to skillet. Heat oil until it is hot but not smoking, about 1 minute more.
  • Carefully arrange pieces of tuna in the skillet about 1 inch apart (it is easiest to cook 2 pieces at a time; if you do so, add 1 1/2 tablespoons oil for second batch). Sear tuna about 1 minute, until it releases easily from skillet and the seeds are deep golden brown. Continue process until the long sides are seared. (The tuna will be very rare in the center. If you want the tuna to be more well done, increase cooking time.)
  • Using a sharp knife, slice the tuna into squares. Arrange on plates with a handful of arugula and half a lemon. Divide remaining 1 1/2 tablespoons olive oil among four plates, drizzling it on arugula. Serve immediately.

4 (6 ounce) tuna steaks (room temperature)
1/2 teaspoon salt
1 teaspoon fresh ground pepper
2 tablespoons roasted sesame seeds
2 tablespoons cooking oil
1 teaspoon sesame oil
1 tablespoon green onion, finely chopped
1 clove garlic, minced
2/3 cup balsamic vinegar
1/4 cup soy sauce
1 tablespoon honey

Steps:

  • In a small sauce pan, heat sesame oil.
  • Stir in the green onion and garlic and cook, stirring, for about 1 minute.
  • Add remaining ingredients and heat on medium until reduced by half.
  • Sprinkle the tuna with the pepper, salt, and sesame seeds.
  • Rub into meat to create crust.
  • Heat cooking oil in a large skillet set over medium high.
  • Add the tuna and cook until almost the desired degree of doneness.
  • The tuna will continue to cook slightly after it is removed from the pan.
  • Two or 3 minutes on each side should result in a pink center.
  • Drizzle sauce over the tuna and serve immediately.

1 teaspoon basil, chopped
4 teaspoons thyme, chopped
4 tablespoons cracked black pepper
21 ounces Ahi tuna steak, cut into 7-ounce portions
3 ounces olive oil
4 baby bok choy, cut into quarters
2 teaspoons wasabi paste
2 cups fish stock
4 ounces soy sauce

Steps:

  • Mix the basil, thyme and the black pepper together. Season the tuna with the mixture. In a hot saute pan, add the olive oil and sear the tuna until cooked rare or to desired temperature. Remove the tuna. Then add the bok choy with the wasabi, fish stock and the soy sauce to the hot saute. Reduce the stock by a quarter. Remove from heat and ladle the soy wasabi broth into the bowls and place the cooked tuna on the top of top of the bok choy.

1 tablespoon five-spice powder
1 tablespoon grated fresh ginger
2 tablespoons sake
2 tablespoons rice vinegar
2 tablespoons tamari
ΒΌ cup sesame oil
2 pounds ahi tuna steaks, each about 1 inch thick
1 pound wasabi peas, crushed
2 tablespoons light brown sugar

Steps:

  • In a large bowl, whisk together the five-spice powder, ginger, sake, rice vinegar, tamari, and sesame oil. Add the tuna steaks and turn to coat; allow to marinate for 30 minutes.
  • Combine the crushed wasabi peas and brown sugar. Remove the tuna steaks from the marinade, and press into the pea mixture to coat. Pour the marinade into a small saucepan and bring to a simmer over medium-high heat. Reduce heat to medium, and simmer until the sauce has reduced and thickened, 5 to 10 minutes.
  • While the sauce is cooking, sear the tuna in a small amount of oil in a skillet over medium-high heat to desired doneness. Pour sauce over tuna to serve.
