I've tried for years to duplicate a delicious waffle I ate at a restaurant chain here in the South. This is the closest I've come, and they're crisp and nutty. Butter and maple syrup are my family's favorite toppings. Why not serve them for your holiday brunch? -Susan Jansen, Smyrna, Georgia

Yield 10 waffles (4-1/2 inches).

Number Of Ingredients 8

1-3/4 cups all-purpose flour
1 tablespoon baking powder
1/2 teaspoon salt
2 large eggs, room temperature, separated
1-3/4 cups milk
1/2 cup canola oil
1 cup chopped pecans
Maple syrup

Steps:

  • In a bowl, combine flour, baking powder and salt. Combine egg yolks, milk and oil; stir into dry ingredients. Beat egg whites until stiff; fold into batter. , Sprinkle hot waffle iron with 2 tablespoons pecans. Pour 1/4 to 1/3 cup of batter over pecans and bake according to manufacturer's directions until golden brown. Repeat with remaining pecans and batter. Serve with syrup.

1 stick (8 tablespoons) unsalted butter
1/2 cup brown sugar
1/4 cup crushed pecans
2 slices cooked bacon, chopped
1 teaspoon vanilla extract
Nonstick cooking spray
2 cups pancake mix, such as Krusteaz
1 1/3 cup milk
2 tablespoons vegetable oil
1 tablespoon ground cinnamon
1 tablespoon sugar
2 teaspoons vanilla extract

Steps:

  • For the bacon pecans: Add butter to a skillet over medium-high heat until melted. Then add the brown sugar, pecans, bacon and vanilla. Cook until a caramel texture, 2 to 3 minutes.
  • For the waffles: Spray a waffle griddle with nonstick cooking spray. Heat the griddle on medium heat.
  • Whisk together the pancake mix, milk, oil, cinnamon, sugar and vanilla in a large bowl. Ladle the waffle batter into the waffle griddle and close. Cook until golden, 1 to 2 minutes. Repeat with remaining batter.
  • Remove and serve with the bacon pecans poured directly over the waffles.

These waffles, which he served at home to weekend guests, are a Southwestern rendition of traditional American fare.

Number Of Ingredients 15

1 cup water
12 ounces piloncillo sugar, or dark brown sugar
3/4 cup toasted whole pecans
1/3 cup sour mash Bourbon whisky
1 tablespoon vanilla extract
1/2 cup wild boar bacon (regular bacon may be substituted)
4 ounces butter (1 stick)
1 cup milk
3 egg yolks
3/4 cup toasted pecans
1 cup cornmeal
3/4 cup all purpose flour
1 teaspoon salt
1 teaspoon baking powder
4 egg white

Steps:

  • To make the syrup, bring the sugar and water to a boil in a saucepan and stir until all the sugar is dissolved. Continue to boil, without stirring, until the syrup thickens slightly and its surface becomes shiny. Pour the syrup into a stainless steel bowl and stir in the pecans. Carefully add the whisky and the vanilla. Keep warm to be served over the waffles.
  • Chop the bacon into small pieces and cook in a frying pan with the butter. Beat the egg yolks with the milk and add the cooked bacon and butter from the frying pan. Chop the pecans to a medium-coarse consistency. Mix together with the cornmeal, flour, salt and baking powder and stir into the egg yolk mixture. Beat the egg whites until they form soft peaks, then gradually fold them into the batter. Cook in a hot waffle iron until brown, but still moist inside.

2 cups all-purpose flour
1/2 cup ground lightly toasted pecans
1 1/2 teaspoons baking powder
1/4 teaspoon salt
4 eggs, separated
1/4 cup sugar
1 teaspoon vanilla extract
1/2 cup melted butter plus 1/2 cup cold butter, cut into pieces
2 1/2 cups milk
Vegetable oil or nonstick cooking spray, for coating the waffle iron
1 cup pecan pieces
1/2 cup cane syrup
4 medium bananas, peeled and cut into 1/2-inch slices

Steps:

  • Preheat the waffle iron according to manufacturer's instructions and preheat the oven to 200 degrees F.
  • Combine the flour, pecans, baking powder and salt in a medium mixing bowl and whisk to combine. In another bowl, combine the egg yolks and sugar and whisk until pale yellow. Add the vanilla extract, 1/2 cup melted butter, and milk, and whisk to blend. Combine the egg and milk mixture with the flour mixture and whisk until just combined. Do not overmix.
  • In the bowl of an electric mixer, beat the egg whites until soft peaks form, about 1 minute. Using a rubber spatula, gently fold the egg whites into the waffle batter. Do not overmix.
  • Using a pastry brush, lightly coat the waffle iron with some of the vegetable oil. Pour enough batter into the iron to just barely cover the waffle grid. Close the waffle iron and cook according to manufacturer's instructions, or until golden brown, 4 to 6 minutes. Transfer to a baking sheet and keep warm in the oven while you prepare the remaining waffles.
  • In a saute pan, add the remaining 1/2 cup of butter and the pecan pieces. Cook, stirring occasionally, until pecan pieces are light golden and fragrant, 2 to 3 minutes. Add the banana slices and cook until light golden and soft, 2 to 3 minutes. Add the syrup and bring to a simmer. Serve with the warm waffles.

Kosher salt
2 large eggs, separated
1 1/2 cups milk
3 tablespoons unsalted butter, melted
6 slices bacon, cut in half
Maple syrup, for serving

Steps:

  • Spray a waffle iron with nonstick cooking spray and preheat it.
  • Sift together the flour, baking powder and 1/2 teaspoon salt in a medium bowl. Beat the egg whites in a second medium bowl until stiff.
  • Beat the egg yolks with the milk and butter in a large bowl. Add the flour mixture, stirring until just blended. Fold in the beaten egg whites.
  • Place 2 halves of a bacon slice in each waffle grid and close the cover. Cook for 1 minute and then add a scant 1/2 cup batter to each waffle grid. Bake until golden brown, about 5 minutes. Serve with maple syrup.

  • Cook waffles in a hot waffle iron until brown. If desired serve with bourbon syrup (recipe below).

  • In a saucepan bring the water and sugar to a boil, stirring until sugar is dissolved. Continue to boil without stirring until syrup thickens slightly and surface is shiny. Pour syrup into a serving bowl, and stir in pecans. Stir in whiskey and vanilla. Keep warm.

2 cups all-purpose flour
1/2 teaspoon ground allspice
1 teaspoon salt
1 cup unsulfured molasses
1/2 cup (1 stick) unsalted butter, softened
1/4 cup bourbon
1 cup packed light-brown sugar
4 cups coarsely chopped pecans, toasted

Steps:

  • Whisk together flour, allspice, and salt in a small bowl; set aside.
  • Melt molasses and butter in a small saucepan over low heat. Remove from heat; let cool slightly. Stir in bourbon. Transfer to a medium bowl; whisk in sugar until smooth. Stir in flour mixture and 1 cup pecans. Refrigerate dough until firm, at least 1 hour or up to overnight.
  • Preheat oven to 400 degrees. Scoop balls of dough using a 11/4-inch (1 ounce) ice cream scoop; roll in remaining 3 cups pecans. Space 1 1/2 inches apart on baking sheets lined with parchment paper. Bake until flattened and lightly colored on edges, 9 to 11 minutes. Let cool on sheets 3 minutes.
