CHOCOLATE PEANUT BUTTER SURPRISE COOKIES

Steps:
- Sift together flour, cocoa powder, baking powder, and baking soda. Set aside.
- In the bowl of an electric mixer fitted with the paddle attachment, beat butter, shortening, granulated sugar, and 1 cup light-brown sugar on medium speed until light and fluffy, about 2 minutes. Add eggs, one at a time, mixing until fully combined between each addition. Add vanilla, and beat to combine. Gradually add dry ingredients, and mix on low speed until fully combined. Remove from mixer. Using a wooden spoon, stir in chocolate chips. Cover bowl with plastic wrap, and chill until firm, about 1 hour.
- Preheat the oven to 350 degrees. Line baking sheets with Silpats (nonstick French baking mats) or parchment paper.
- In a small bowl, using a rubber spatula, stir together peanut butter and remaining 1/4 cup light-brown sugar.
- Using a 1 1/4-inch scoop or heaping tablespoon, drop dough onto prepared baking sheets about 2 inches apart. Make a thumbprint in the center of each cookie. Fill thumbprint with 1 teaspoon peanut-butter mixture. Top with a second scoop of dough, and carefully mold dough to cover "surprise."
- Bake until firm, about 12 minutes. Transfer sheets to wire racks to cool for 5 minutes, then transfer cookies to racks.
SNICKER SURPRISE PEANUT BUTTER COOKIES
I found this recipe next to a Snickers coupon. It is absolutely fabulous. The Snickers is hidden inside the cookie so it makes for a nice surprise when you bite in. This cookie works perfectly as part of a Xmas cookie platter. If you are a Snickers fan, you are in for a real treat.

- Preheat oven to 300°F.
- In a medium bowl, sift together flour, baking soda, and salt.
- In a large bowl, mix together butter, peanut butter, and sugars until light and fluffy.
- Add eggs and vanilla and combine thoroughly.
- Then mix in flour mixture.
- Cover and chill dough 2-3 hours.
- To form cookie, scoop a tablespoon of chilled dough and flatten.
- Place a miniature Snickers in the center and form the dough into a ball around the Snickers.
- Place on a greased cookie sheet.
- Bake for 10-20 minutes.
- Cool cookies on a rack.
- Optional: Decorate cookies with powdered sugar or drizzled melted chocolate or both.
PEANUT SURPRISE COOKIES
These cookies are very easy to make with ingredients usually found in the pantry with the exception of chocolate covered caramel candies. I hope you like them. My family absolutely loves these cookies. I usually only make them at Christmas time so they are special.

- In a large bowl, cream together the margarine, peanut butter, 1/2 cup white sugar and brown sugar until smooth. Beat in the egg. Combine the flour, baking powder, baking soda and salt; stir into the peanut butter mixture. Cover and chill dough until firm, about 30 minutes.
- Preheat the oven to 375 degrees F (190 degrees C). Roll chilled dough into 1 inch balls. Press a caramel candy into the center of each ball so that it is completely covered with dough. Roll balls in remaining sugar and place 2 inches apart onto ungreased cookie sheets.
- Bake for 10 to 12 minutes in the preheated oven, until set. Cool on baking sheets for 2 minutes before removing to wire racks to cool completely.

- Preheat oven to 350 degrees. Using an electric mixer, cream peanut butter and butter in a mixing bowl until smooth. Add brown sugar; beat until combined, scraping down bowl as needed. Add eggs and vanilla, and beat until incorporated.
- In a small bowl, whisk together flour, baking powder, and salt. With mixer on low speed, gradually beat in flour mixture in 2 batches.
- Scoop off dough by the tablespoon; roll into balls. Place granulated sugar on a plate; roll balls in sugar, coating completely. Place 2 inches apart on a nonstick insulated baking sheet.
- Bake until cookies begin to puff up slightly, about 7 minutes. Remove from oven. Press one peanut butter cup in center of each cookie. Return to oven; continue baking until cookies are golden brown and chocolate has begun to melt, about 6 minutes more. Let cool at least 10 minutes on baking sheet before transferring cookies to rack to cool completely.

BROWNIE COOKIES WITH PEANUT BUTTER SURPRISE
Big Big hit with the family! Chocolatey Brownie Cookies, filled with milk chocolate chips and topped off with a creamy peanut butter thats hidden under a chocolatey coating. These are decadent and delicious and well they are chocolate, lol enough said! : )

- In large bowl beat the brownie mix, cream cheese, butter and egg until well blended. This will result in a sticky dough.
- Fold in chocolate chips
- Drop by well rounded teaspoonfuls onto an ungreased cookie sheet and smooth around edges of cookies to keep them round.
- In another bowl mix peanut butter and powdered sugar with a spoon until it forms a ball..
- Using rounded teaspoonful of dough roll into balls with your hands and lightly press the peanut butter balls into the middle of the brownie balls.
- Bake in oven preheated to 350 degrees for about 10 to 14 minutes
- Remove cookies and cool for about 30 minutes
- Take cookies from the cookie sheets and spread a thin layer of chocolate frosting over the peanut butter centers. (I did this while still slightly warm because i wanted the chocolate to melt.)
- I topped mine with peanut butter chips : )

- 1. Preheat oven to 375º F. Line a baking sheet with parchment paper; set aside. 2. In a medium bowl, whisk together flour, cocoa, baking soda, and salt. Set aside. 3. In the bowl of a stand mixer fitted with the paddle attachment, beat together sugars, butter and 1/4 cup of peanut butter until light and fluffy. Add the vanilla and egg, beating to combine. Stir in the flour mixture and stir to combine, blending well. Set aside. 4. In a medium bowl, mix together powdered sugar and remaining 3/4 cup of peanut butter until smooth. 5. Pull off a heaping tablespoon of cookie dough and flatten with your hands. Take about 1 teaspoon of peanut butter mixture and place it in the center of the chocolate dough. Wrap the chocolate dough around the peanut butter center, pressing to seal. Roll the cookie into a ball and roll the cookie in the sugar. Place cookies on the prepared baking sheet 2 inches apart. Using the bottom of a glass, flatten each cookie to about a 1/2 inch thickness. 6. Bake in preheated oven for 7 to 9 minutes. Let stand on the baking sheet for 2 minutes, then remove to a wire rack.
PEANUT BUTTER & CHOCOLATE SURPRISE COOKIES

- COOKIES: Combine flour, cocoa, baking powder & salt in a bowl. Using a stand mixer with paddle, beat butter, peanut butter & sugar on medium high speed until fluffy, about 3 minutes. One at a time, add eggs & beat until combined. Add vanilla & beat until combined. Reduce speed to low & add flour mixture slowly, alternating with milk additions, scraping bowl down as needed. Refrigerate until dough is firm, about 1 hour.
- Adjust oven racks to upper middle & lower middle positions & preheat oven to 350 degrees F. Line 2 baking sheets with parchment paper or silpat (silicone liners). Using 1/2 of the dough using a small ice cream scooper (or 2 spoons), roll into balls & space them 2" apart on prepared sheets. Bake until edges appear dry, about 8 - 10 minutes, switching & rotating sheet halfway through baking time. Remove cookies from oven & press 1 marshmallow 1/2 into center of each cookie. Return to oven & bake another 2 minutes. Let cookies cool on sheets for 5 minutes. Trasfer to wire rack to cool completely, about 15 minutes. Repeat with remaining dough & marshmallows.
- FROSTING: Whisk sugar, butter, cocoa, water & extract in bowl until smooth. Working 1 cookie at a time, spread 1 heaping tsp frosting over top of each cookie, covering marshmallow completely. Sprinkle nonparells on top of cookies & let sit 1 hour before serving.
PEANUT BUTTER CARAMEL SURPRISE COOKIES
Steps:
- Heat oven to 375°F. Combine brown sugar, sugar and butter in bowl. Beat at medium speed until creamy. Add peanut butter, eggs and vanilla; continue beating until well mixed, scraping bowl if necessary. Add flour, baking soda and salt; beat at low speed until well mixed. Shape rounded tablespoonfuls of dough into 1 1/4-inch balls. Press 1 candy half in center of each ball, cut-side up. Form dough around candy, completely covering candy. Place 2 inches apart onto ungreased cookie sheets. (Cookies spread and flatten as they bake.) Bake 10-12 minutes or until light golden brown around edges. Let cool 1 minute on cookie sheets. Remove to cooling rack. Milk chocolate-covered caramel, peanut and nougat miniature (not fun size) candy bars will also work in this recipe. Use a whole miniature candy for each cookie. PEANUT BUTTER CUP SURPRISE COOKIES

- 1. Preheat oven to 350 degrees F. Place peanut butter, sugar and egg into a large bowl and mix until well combined. Scoop dough evenly into a 12 count mini cheesecake pan or mini muffin pan. Cook for 13-15 minutes until almost done. Remove from oven and press a peanut butter cup into the center of each cookie until flush with cookie top. Top each cookie with 3 mini marshmallows and return to oven for 2-3 more minutes or until marshmallows are puffed. Remove and set aside to cool for 10 minutes. 2. Place chocolate chips into a microwave safe bowl and microwave in 30 second intervals until melted smooth. Stir in 2-3 Tablespoons heavy cream until silky and smooth. You can return back to microwave for 15 seconds to get a thinner consistency. Spoon chocolate over top of puffed marshmallows and sprinkle with mini M&M's.

In separate bowl, combine flour, baking powder, and salt. Slowly beat dry mixture into wet mixture; stirring until dough forms. 3. Using a tablespoon, form dough balls around the Hershey Kisses. Roll until perfectly round and roll into granulated sugar, coating all sides. 4. Place dough balls 2 inches apart on a non-stick baking sheet. Bake 10-12 minutes or until tops of cookies are slightly browned. They will not be flat. 5. Transfer cookies to cooling rack and cool slightly. Cookies are best when enjoyed warm.
