A no-bake peanut butter bar I make with oats, graham wafer crumbs, and cereal - but feel free to substitute whatever additions you like! Topped with chocolate to complement the peanut butter goodness!

1 ½ cups oats
1 ½ cups smooth peanut butter
1 cup graham cracker crumbs
½ cup crushed bran flakes cereal (such as Fiber One™), or more to taste
½ cup butter, softened
1 ½ cups milk chocolate chips
4 tablespoons smooth peanut butter
¾ cup confectioners' sugar, or more to taste

Steps:

  • Grease a 9x13-inch pan.
  • Combine oats, 1 1/2 cups peanut butter, graham cracker crumbs, bran cereal, and butter in a large bowl. Spread mixture evenly into the prepared pan. Set aside.
  • Melt chocolate chips and 4 tablespoons peanut butter over a double boiler on the stovetop over low heat, or in the microwave in a microwave-safe bowl, 2 to 2 1/2 minutes. Stir in confectioners' sugar until well blended. Pour and spread over oat base.
  • Chill in the refrigerator at least 1 hour. Cut and serve.

2/3 cup butter, melted
1/4 cup peanut butter
1 cup packed brown sugar
1/4 cup light corn syrup
1/4 teaspoon vanilla extract
4 cups quick-cooking oats
TOPPING:
1 cup milk chocolate chips
1/2 cup butterscotch chips
1/3 cup peanut butter

Steps:

  • In a bowl, combine the butter, peanut butter, brown sugar, corn syrup and vanilla; gradually add the oats. Press into a greased 13-in. x 9-in. baking pan. Bake at 400° for 12-14 minutes or until edges are golden brown. Cool on a wire rack for 5 minutes. Meanwhile, for topping, melt chips and peanut butter in a microwave or saucepan. Stir until blended; spread over warm bars. Cool completely; refrigerate for 2-3 hours before cutting.

1/3 cup thick honey
3/4 cup chunky peanut butter (I like natural peanut butter as it's not so sweet)
1 teaspoon vanilla
1 cup oatmeal (any kind)
3/4 cup powdered milk
1/4 cup sunflower seeds
1/4 cup chocolate chips, to garnish (or garnish to taste using sesame seeds for a healthier alternative)

Steps:

  • Mix all ingredients, except chocolate chips, until well mixed (If too soft to work with: add a little more powdered milk and oats).
  • Spread evenly on a cookie sheet.
  • Sprinkle with chocolate chips or seeds.
  • Cut into squares.
  • Freeze for 20 minutes, then store in airtight container in the refrigerator.

No Bake Peanut Butter Oat Bars

450g jumbo oats
200g peanut butter - crunchy or smooth - your choice! If it's a really thick peanut butter you might need a bit more coconut oil
3 tbsp coconut oil
300g milk chocolate

Steps:

  • Grease a 9 x 9 inch, or similar, brownie tin with butter or coconut oil and set aside.
  • In a large heatproof bowl, combine your peanut butter and coconut oil, and melt together in 30 second intervals on high power.
  • Once they're completely liquid and combined, stir in your oats. Mix well, and tip into your square tin. Press down firmly with the back of a spoon (if it's sticking, dip in some coconut oil first).
  • Put the oat mixture to one side.
  • In a heatproof bowl in the microwave, melt the milk chocolate on 30 second bursts of high power, stirring after each one. Pour over the bars, spreading out with a spoon (and creating swirly patterns if you like)!
  • Pop into the fridge to set - they should be ready to cut in under an hour. Store in an airtight tin on the counter - or in the fridge if its very hot.
