PEANUT BUTTER MARSHMALLOW COOKIE BARS

I got this recipe from a friend, after having it on our cookie exchange tray at Christmas. These are wonderful! Very rich and addictive at our house. We looove peanut butter :)

Number Of Ingredients 9

1 (18 1/2 ounce) package yellow cake mix with pudding
1/3 cup margarine
1 large egg
3 cups mini marshmallows
2/3 cup corn syrup
1/4 cup margarine
2 teaspoons vanilla
1 (12 ounce) package peanut butter chips
2 cups crisp cereal (rice krispies or equivelent)

Steps:

  • Heat oven to 350°.
  • CRUST In a large bowl combine the cake mix, margarine, and egg.
  • Mix until crumbly.
  • Press into bottom of ungreased 13x9 pan.
  • Bake at 350° for 15-20 minutes or until golden brown.
  • Remove from oven and immediately sprinkle with 3 cups mini marshmallows.
  • Return to oven for 1-2 minutes until marshmallows begin to puff.
  • TOPPING In large saucepan, heat corn syrup, margarine, vanilla, and peanut butter chips until chips are melted and mixture is smooth.
  • (Stir constantly) Remove from heat and stir in cereal.
  • Immediately spread over crust.
  • Chill and cut into bars.

6 tablespoons salted butter
1 cup creamy peanut butter
6 cups mini marshmallows
3 cups Golden Grahams™ cereal
2 cups of your favorite cookies, chopped (I used peanut butter sandwich cookies, creme-filled chocolate sandwich cookies, chocolate chip cookies and peanut butter-stuffed pretzels)
1 1/2 cups semisweet chocolate chips

Steps:

  • Grease (or line with cooking parchment paper) 13x9-inch (3-quart) baking dish.
  • In large heavy-bottomed pan, heat butter, peanut butter and marshmallows over medium-low heat, stirring frequently, until mixture is melted and smooth.
  • Remove from heat; stir in cereal and cookie crumbs. Dump mixture into baking dish; smooth it into an even layer.
  • In medium microwavable bowl, microwave chocolate chips uncovered on High in 30-second increments, stirring after each, until melted and smooth. Drizzle over top of bars. Cover; place in fridge 1 hour.
  • Cut into 6 rows by 3 rows. Store covered at room temperature or in the fridge.
