These high-protein snacks are great for school lunches. I make a double recipe and freeze them on a baking pan. When frozen, I transfer them to a zip lock bag and use them as needed.

1 cup peanut butter
½ cup dry milk powder
¼ cup honey
¼ cup raisins
½ cup graham cracker crumbs

Steps:

  • Mix peanut butter, dry milk powder, honey, and raisins together in a bowl until well incorporated. Shape into walnut-sized balls.
  • Place graham cracker crumbs in a shallow bowl; roll peanut butter balls in the crumbs to coat.

Beehive Snacks- Peanut Butter Honey Balls image

This is a simple recipe from the Better Homes and Gardens magazine. It's simple enough for kids to make, tastes good and is vegan to boot! I have made it as written but prefer it with some chocolate covering, whether truffle, chocolate flakes or dipped in melted chocolate.

1/2 cup icing sugar
1/2 cup honey
1/2 cup peanut butter
1 1/2 cups Rice Krispies (Rice Bubbles)
1/2 cup non-pareils (hundreds and thousands)

Steps:

  • Combine icing sugar, peanut butter and honey in a small bowl.
  • Add Rice Krispies (Rice Bubbles) and mix well.
  • Put non-pareils in a shallow bowl.
  • Make small balls from the mixture and toss in the non-pareils.
  • Put onto lined tray and refrigerate for an hour until firm.
  • Store in the fridge for a week.
  • You can toss them alternatively in grated chocolate or chocolate sprinkles etc.
  • NB: I found that the balls were a bit dry and the non-pareils didn't stick easily. I first dipped the balls into a mixture of 1 tablespoon of honey and two tablespoons of water, and then into the coating. This worked well for me, but I believe my peanut butter wasn't very oily which is why the mixture turned out a bit stiff. If you see that your balls are a bit dry, I recommend the extra step.

9 cups organic popcorn
1/3 cup organic honey
1/3 cup organic unsweetened peanut butter

Steps:

  • Pop popcorn. Line a baking sheet with parchment or wax paper. In a small saucepan over medium heat, combine the peanut butter and honey. Stir continuously as it cooks. Once well blended, immediately pour over popcorn evenly. Gently mix with a spatula until well coated. Using a large spoon, drop heaping spoonfuls (about 2 Tablespoons) of the popcorn mixture in rows on the baking sheet. Press each pile of popcorn mixture firmly into a one-inch ball. Let cool completely before serving.

1 cup peanut butter (an all natural PB is recommended - the only ingredient necessary is crushed peanuts)
1 cup honey
3 cups rolled oats (oatmeal)
1 cup of nuts or dried fruit (or whatever your heart desires)
Crushed nuts, granola cereal, or unsweetened coconut

Steps:

  • Directions Mix the first four ingredients together thoroughly. Form them into balls (makes about 10-12 depending on size) then roll them in the crushed nuts, granola cereal, or unsweetened coconut.
