Snickerdoodle Peanut Butter Chocolate Chex Mix Bars Recipe - (4.7/5) image

Number Of Ingredients 13

2 cups Corn Chex
1 cup Rice Chex
1 cup Whole Wheat Chex
1 1/2 cups bite size pretzels
1 cup air popped popcorn
1 cup mixed nuts (I used peanuts, cashews, pistachios and pecans)
1/4 cup salted butter, melted
1 teaspoon cinnamon
1 teaspoon vanilla extract
1 cup creamy peanut butter
1 cup karo syrup
1 cup brown sugar
2 to 3 cups semi-sweet chocolate chips (I like to use all 3 cups)

Steps:

  • In a large bowl combine the corn Chex, rice Chex, whole wheat Chex, pretzels, popcorn and nuts. Toss well. In a small bowl whisk together the melted butter, cinnamon and vanilla. Pour the butter mixture over the Chex mix and toss well with you hands until the butter and cinnamon has coated all of the Chex mix. Add the Karo syrup, peanut butter and brown sugar together in medium saucepan. Heat almost to a boil but be careful not to burn. Stir to combine the ingredients. Once the mixture begins to bubble around the edges, stir for 1 minute and then remove from the heat. Pour the peanut butter mixture over the Chex mix and toss well with a spatula. Spoon the mixture evenly among 24 cupcake mold, or one 9x13-inch pyrex dish, and lightly press the mixture together. Melt the chocolate chips in the microwave or over a double broiler. I like to microwave mine, heating on full power for 20 seconds, stir, 30 seconds again, and stir until melted. Spoon a tablespoon or so of melted chocolate over each bar. Place the trays in the fridge for 45 minutes or until ready serve. Once ready to serve use a butter knife to pop the bars up and out of their molds. To use these for Christmas add 1 cup of holiday M&M's, peanut M&M's, or regular M&M's!

3 cups Honey Nut Chex™ cereal
1 tablespoon butter or margarine
1/2 cup peanut butter
1/4 cup brown sugar
1/2 cup gluten-free swirled milk chocolate and peanut butter morsels

Steps:

  • In large microwavable bowl, mix cereals. Line cookie sheet with waxed paper or foil.
  • In 2-cup microwavable measuring cup, microwave butter, peanut butter and brown sugar on High about 1-2 minutes, stirring after 1 minute, until mixture is boiling. Pour over cereal, stirring until evenly coated.
  • Microwave uncovered on High 4 minutes, stirring and scraping bowl every minute. Microwave uncovered on High 2 more minutes, just until cereal begins to brown. Immediately stir in half of the chips; cool 5 minutes, stir in remaining chips.
  • Spread on waxed paper to cool. Place in festive Ziploc® Brand containers and bags to share with family and friends!

1 cup gluten-free peanut butter baking chips
3 tablespoons butter
1 tablespoon coarse sparkling sugar, if desired
2 cups Chocolate Chex™ cereal
1 cup gluten-free milk chocolate candy drops, unwrapped

Steps:

  • Line large cookie sheet with waxed paper. In medium bowl, add Corn or Rice Chex™ cereal.
  • In small microwavable bowl, microwave peanut butter chips and butter uncovered on Medium (50%) 30 seconds; stir. Microwave 15 to 30 seconds longer or until mixture can be stirred smooth (mixture will be thick).
  • Pour mixture over cereal in bowl, stirring thoroughly until cereal is evenly coated.
  • Spread mixture on cookie sheet. Sprinkle with sparkling sugar; refrigerate about 15 minutes or until set. Carefully break into bite-size pieces.
  • In large serving bowl, mix coated cereal, Chocolate Chex™ cereal and chocolate candy drops.

It can be made with lots of substitutes...I've substituted different cereals for the Chex such as Cocoa Puffs, Golden Grahams, and Cinnamon Toast Crunch. I've also substituted different chips for chocolate chips such as butterscotch, white, milk, dark,...

8 c chex cereal
6 Tbsp butter
3/4 c brown sugar
3 Tbsp corn syrup
1/4 tsp baking soda
1-8 oz pkg reese's mini cups
1 c dry roasted peanuts
1 c marshmallows, mini
1 c chocolate chips (milk or semi sweet)
1 c peanut butter chips
2-4 Tbsp heavy cream

Steps:

  • 1. Line a large cookie sheet with waxed paper and set aside.
  • 2. Melt butter, brown sugar, and corn syrup over medium heat in a large pot. Stir until combined and add the baking soda. It will foam up a little.
  • 3. Add cereal and stir until evenly coated. Pour mixture onto cookie sheet and spread out evenly.
  • 4. Pour bag of mini Reese's over warm cereal mix. Add nuts and marshmallows.
  • 5. In that same pan (less dishes=good thing) which is now empty, add 1 cup peanut butter chips and 2 tablespoons of heavy cream. When melted, drizzle over mix. Repeat the same steps using the chocolate chips.
  • 6. Allow mixture to cool and break into pieces. Try not to eat the whole batch in one sitting!
  • 7. *you can substitute cereals in this also. One time I used 4 cups rice Chex and 4 cups Cocoa Puffs. You can also substitute different flavors of chips...white chocolate, butterscotch, etc. Use additional ingredients also such as pretzels, M & M's, or whatever is on hand

12 c. cereal (Chex, Cheerios, etc)
2 c. raisins
3 c. nuts (peanuts, almonds, etc)
2/3 c. natural peanut butter
1/2 c. unsalted butter
1 c. brown sugar
1/2 c. light corn syrup (or 1/2 c. honey + 2 Tbsp. water)

Steps:

  • Preheat oven to 250o. Mix cereals, peanuts, raisins, and nuts in a large oven-safe bowl or roasting pan. Melt peanut butter, butter, sugar, and corn syrup in a small saucepan over medium heat (or in a microwave-safe dish). Stir constantly and heat until bubbly around edges. Pour over cereal mix and stir. Bake for 15 minutes. Makes 7 quarts.
