2-3 Tbsp peanut butter
1 handful baby spinach
1 Tbsp flaxseed meal or hemp seeds ((for added nutrition))
1-2 tsp honey or maple syrup ((or a pitted medjool date))
1/4 tsp ground cinnamon

Steps:

  • Place all ingredients in a blender and blend until smooth and creamy, adding more almond milk to thin, banana or oats to thicken, or peanut butter for richness and peanut flavor.

Steps:

  • Preheat a griddle to medium heat.

1 cup sugar
½ cup unsalted butter, melted, plus 1 tablespoon
1 teaspoon vanilla extract
¾ cup flour
¼ cup cocoa powder, plus 1 tablespoon
⅛ teaspoon salt
½ cup creamy peanut butter

Steps:

  • Preheat oven to 350°F (180°C).
  • In a bowl, use a fork to mash the bananas. Add the sugar, ½ cup (115 g) of butter, and vanilla, and whisk until combined.
  • Add the flour, salt, and cocoa powder, and whisk until fully incorporated.
  • Use the remaining 1 tablespoon of butter to grease a 9x9-inch (23x23 cm) baking tray.
  • Use the remaining 1 tablespoon of cocoa powder to dust every side of the baking tray.

2 slices Texas Toast or 1/2-inch-thick bread
1 whole ripe banana
4 ounces whole butter

Steps:

  • Spread peanut butter side to side, evenly on 1 side of each piece of bread. Slice banana in 3/4-inch slices and place on 1 piece of bread with peanut butter. Banana slices should be close together, and cover 1 side completely (usually 9 slices). Top with the other slice of bread.
  • Heat butter in saute pan on medium heat. Place sandwich in pan and brown for approximately 3 to 5 minutes or until golden brown.
