This riff on the Chinese inspired dan dan noodle (typically made with ground beef), substitutes in the pantry staple of canned tuna, for a quick and satisfying meal.

For the Sauce:
1/4 cup peanut butter (smooth)
2 tablespoons water
1 tablespoon toasted sesame seeds (plus more for garnish)
2 teaspoons soy sauce
2 teaspoons toasted sesame oil
1 teaspoon white vinegar
Salt to taste
Black pepper (to taste)
1/4 pound leftover cooked spaghetti (reheated in the microwave with a little water)
For the Spicy Tuna:
1 (5-ounce) can oil-packed tuna, not drained
1 tablespoon hot paprika
2 tablespoons chili paste (such as Sambal Oelek)
1 tablespoon vegetable oil
1 teaspoon soy sauce
1/2 teaspoon toasted sesame oil
Garnish: thinly sliced scallions

Steps:

  • Gather the ingredients.
  • Whisk together, in a large bowl, the peanut butter, water, sesame seeds, soy, sesame oil, and vinegar until smooth. Season with salt and pepper to taste.
  • Add the re-heated cooked spaghetti and stir to amply coat the noodles. Set aside.
  • Place tuna in a small bowl, and break into small pieces using a fork. Add the paprika, chile paste, oil, soy and sesame oil and stir vigorously to make a chunky sauce.
  • To serve, divide the spaghetti into a bowl and spoon over the spicy tuna. Garnish with scallion and sesame seeds.

I swear its good. I eat it at least once a week and have to stop myself from eating a second one. They are sooooo good. My kids like it with ritz cracker rather than bread. Amounts are approximate, if you want more or less of anything, do it. I just posted a typical serving size of each item, I never measure.

2 slices bread (your favorite type)
2 tablespoons peanut butter (we like creamy)
2 tablespoons mayonnaise or 2 tablespoons Miracle Whip
1 (3 ounce) can tuna

Steps:

  • Toast bread if desired. I like it lightly toasted.
  • Meanwhile, mix the tuna and the mayo together to make tuna salad.
  • Spread half the peanut butter on one side of one slice of bread and top with tuna salad.
  • Spread one side of the other slice of bread with the remaining peanut butter and place it over the tuna, peanut butter side down.
  • Cut in half if desired and enjoy.
  • You can mix things up a little by adding some relish to the tuna or add some crunch with slices of cucumber (cucumber and peanut butter is another favorite sandwich), onion, or diced waterchestnuts.
