Peanut Butter and Jelly Breakfast Casserole made with Pillsbury Biscuits

Number Of Ingredients 4

1 pkg (10 biscuits) Pillsbury refrigerated country biscuits
1/2 cup smooth peanut butter
1/2 cup strawberry jelly
1 tbsp powdered sugar

Steps:

  • Preheat oven to 400F.
  • Line the bottom of a greased 8 inch square baking dish with 5 biscuits. Flatten and stretch the biscuits a bit to make them cover more of the pan.
  • Spread the peanut butter on the biscuits.
  • Spoon the jelly on top of the peanut butter.
  • Flatten and stretch the remaining 5 biscuits and place them on top to form five sandwiches.
  • Bake for 22-24 minutes until biscuits are nicely browned.
  • Allow to cool for a few minutes before dusting with powdered sugar and serving.
  • Enjoy!

½ cup shortening
½ cup peanut butter
½ cup white sugar
½ cup packed brown sugar
1 egg
1 ¼ cups all-purpose flour
¾ teaspoon baking soda
½ teaspoon baking powder
¼ teaspoon salt
½ cup any flavor fruit jam

Steps:

  • In a mixing bowl, cream shortening peanut butter and sugars. Beat in egg. Combine dry ingredients; gradually add to creamed mixture.
  • Cover and chill for 1 hour.
  • Roll into 1 inch balls; place 2 inches apart on greased baking sheets. Flatten slightly. Bake at 375 degrees F (190 degrees C) for 10 minutes. Cool on wire rack. Spread jam on the bottom of half of the cookie; top with remaining cookie half.

This is an easy treat for all the PB&J fans out there. Kids love them, and the peanut butter does give them protein. They can be used for snacking or breakfast.

1 can(s) (10 oz) flaky style refrigerated biscuits
10 tablespoon(s) peanut butter
8-10 tablespoon(s) strawberry preserves (or flavor of choice)
GLAZE
1/4 cup(s) powdered sugar
1-2 teaspoon(s) milk

Steps:

  • Heat oven to 375. Separate dough into 10 biscuits; separate each biscuit into 2 layers. Spoon tablespoon of peanut butter on center of half of biscuit pieces. Top with remaining biscuit pieces; pinch edges to seal.
  • Place biscuits into 9 inch round or 8 inch square cake pan. With thumb, make imprint in center of each roll. Fill each imprint with about 1 tablespoon of preserves.
  • Bake for 23-28 minutes or until golden brown. In small bowl make glaze by combining sugar and milk. Blend until smooth and drizzle over warm rolls.

1 cup (2 sticks) unsalted butter, room temperature, plus more for pan
3 cups all-purpose flour, plus more for pan
1 1/2 cups sugar
2 large eggs
2 1/2 cups smooth peanut butter
1 1/2 teaspoons salt
1 teaspoon baking powder
1 teaspoon pure vanilla extract
1 1/2 cups strawberry jam, or other flavor
2/3 cup salted peanuts, roughly chopped

Steps:

  • Heat oven to 350 degrees. Grease a 9-by-13-inch pan with butter, and line the bottom with parchment paper. Grease the parchment, and coat inside of pan with flour; set aside. Place butter and sugar in the bowl of an electric mixer fitted with the paddle attachment. Beat on medium-high speed until fluffy, about 2 minutes. On medium speed, add eggs and peanut butter; beat until combined, about 2 minutes.
  • Whisk together salt, baking powder, and flour. Add to bowl of mixer on low speed; combine. Add vanilla. Transfer two-thirds of mixture to prepared pan; spread evenly with offset spatula. Using offset spatula, spread jam on top of peanut-butter mixture. Dollop remaining third of peanut-butter mixture on top of jam. Sprinkle with peanuts.
  • Bake until golden, about 45 minutes. Transfer to a wire rack to cool; cut into about thirty-six 1 1/2-by-2-inch pieces.

1 egg
3/4 cup sugar
1 cup creamy peanut butter
1 teaspoon vanilla extract
Nonstick cooking spray
4 teaspoons reduced-sugar grape jelly

Steps:

  • Preheat the oven to 350 degrees F.
  • In a medium bowl, whisk the egg and sugar together until thoroughly combined. Add the peanut butter and vanilla extract, and stir to combine. The batter will be thick at this point, now it is time to scoop.
  • Using a scant 1 tablespoon portion, drop the batter onto a parchment-lined baking sheet. Spray a small offset spatula with cooking spray and press the balls down until they are 1/3-inch thick; press a little more deeply in the center. Fill each with 1/4 teaspoon of the grape jelly and spread it in a thin layer.
  • Bake until golden brown, 15 to 18 minutes. Let the cookies cool; this part is really important, because it is when the cookies firm up and get their perfect cookie crunch.

70g butter , softened
50g peanut butter
75g light brown sugar
75g golden caster sugar
1 medium egg
1 tsp vanilla extract
180g plain flour
2 tbsp chopped peanuts
½ tsp bicarbonate of soda
10 heaped tsp raspberry jam

Steps:

  • Heat oven to 180C/160C fan/ gas 4 and line two baking sheets with parchment. Cream the butter, peanut butter and sugars together until very light and fluffy, then beat in the egg and vanilla. Once combined, stir in the flour, chopped peanuts, bicarb and ¼ tsp salt.
  • Scoop 10 large tbsps of the mixture onto the trays, leaving enough space between each to allow for spreading. Make a thumbprint in the centre of the cookies and fill each with 1 heaped tsp raspberry jam (you could make your own jam for this). Bake for 10-12 mins or until firm at the edges but still soft in the middle - they will harden a little as they cool. Leave to cool on the tray for a few mins before eating warm, or transfer to a wire rack to cool completely. Will keep for three days in an airtight container.
