1 cup mayonnaise
¼ cup peach juice
⅔ cup whipped heavy cream
salt and pepper to taste
4 cups cubed, cooked chicken
3 cups pitted and diced fresh peaches

Steps:

  • In a large bowl, whisk together the mayonnaise, peach juice and whipped cream. Add salt and pepper to taste. Stir in chicken and peaches and chill until ready to serve.

1/3 cup mayonnaise
2 tablespoons milk
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon dried tarragon or 1 teaspoon chopped fresh tarragon
2-1/2 cups cubed cooked chicken
1 cup seedless red grapes, halved
1 cup frozen tiny peas, thawed
2 large peaches, peeled and chopped
1 cup pecan halves, toasted
Lettuce leaves, optional

Steps:

  • In a large bowl, stir the mayonnaise, milk, salt, pepper and tarragon until smooth. Add chicken and toss to coat. Stir in grapes, peas, peaches and pecans. Serve in a lettuce-lined bowl if desired.

5 tablespoons olive oil, divided
2 tablespoons fresh lime juice
1 1/2 teaspoons fleur de sel* or fine sea salt, divided
1 teaspoon freshly ground pepper, divided
4 small skinless boneless chicken breast halves (about 1 1/2 pounds)
2 green onions, minced
1 shallot, finely chopped
1 1/2 tablespoons Sherry wine vinegar
2 teaspoons fresh thyme leaves
1 teaspoon honey-Dijon mustard
2 peaches, peeled, pitted, diced
1 small avocado, diced
1/2 cup thinly sliced radicchio
4 cups mixed baby greens (about 2 1/2 ounces)
*A type of sea salt; available at some supermarkets and specialty foods stores.

Steps:

  • Whisk 1 tablespoon olive oil, lime juice, 1 teaspoon salt, and 1/2 teaspoon pepper in 11x7-inch glass dish. Add chicken and turn to coat. Marinate 30 minutes, turning occasionally.
  • Prepare barbecue (medium-high heat). Whisk remaining 4 tablespoons oil, 1/2 teaspoon salt, 1/2 teaspoon pepper, onions, shallot, vinegar, thyme, and mustard in large bowl to blend. Mix peaches, avocado, and radicchio into dressing; toss to coat.
  • Grill chicken until cooked through, about 5 minutes per side. Transfer to work surface; cut crosswise into thin slices. Mix baby greens into dressing in bowl. Divide salad among 4 plates. Arrange chicken alongside and serve.

A no mayo salad, so it's good to take on a picnic this summer! A fresh taste on chicken salad.

3 fresh peaches, peeled and chopped
2 c cooked chicken breast, chopped
1/2 c celery, chopped
1/2 c radishes, chopped
1/4 c green onions, chopped
1/4 c green bell pepper, chopped
1/4 c vegetable oil
3 Tbsp white vinegar
1 tsp soy sauce
1/2 tsp ground ginger
green leaf lettuce
1/2 c toasted pecans, chopped

Steps:

  • 1. Combine the first 6 ingredients in a large bowl; toss. Set aside.
  • 2. Combine the oil, vinegar, soy sauce, and ginger in a small bowl, stirring with a wire whisk until blended. Pour over the chicken mixture; stir gently.
  • 3. Serve on lettuce leaves; sprinkle with pecans. Garnish with peach slices if desired.
