SEMIFREDDO AMARETTI WITH FRESH PEACHES

Semifreddo Amaretti With Fresh Peaches image

Provided by Corby Kummer

Categories     ice creams and sorbets, dessert

Time 3h20m

Yield Eight to ten servings

Number Of Ingredients 9

6 egg yolks
1/2 cup amaretti crumbs (amaretto cookies crushed in a blender or food processor)
1 tablespoon amaretto liqueur (optional)
3 egg whites
1 cup sifted confectioner's sugar
1 1/2 cups heavy cream
2 pounds ripe peaches
2 teaspoons lemon juice
Lightly crushed amaretti, for garnish

Steps:

  • In the bowl of an electric mixer, beat the egg yolks until they thicken. Add the half-cup of amaretti crumbs and continue beating for five minutes, scraping the sides of the bowl periodically, until the color of the mixture becomes light and the texture quite thick. Stir in the liqueur, if desired.
  • In a clean, dry bowl, beat the egg whites at medium speed until they foam. With the mixer at high speed, slowly add one-half cup of confectioner's sugar. Continue beating until the egg whites hold firm - but not stiff -peaks, about three more minutes.
  • In a chilled bowl, beat the cream until it forms soft - but not stiff -peaks.
  • Fold together the egg whites and the cream.
  • Fold one quarter of the cream and egg white mixture into the egg yolks until they are well blended. Fold in the rest of the cream and egg white mixture by halves, deflating the mixture as little as possible.
  • Turn the mixture into custard cups, individual molds, a loaf pan or an ice-cube tray without the separator. Cover well with plastic. Freeze for two to three hours. Semifreddo will keep in freezer for several weeks.
  • When ready to serve, plunge the peaches into boiling water for 15 seconds. Rinse under cold water, peel and slice very thinly. Toss with lemon juice and the remaining one-half cup confectioner's sugar, adding sugar according to taste.
  • Dip the molds (or mold) briefly into hot water and turn out the semifreddo. Serve individual portions or slices of semifreddo, surrounded by peach slices. Garnish the semifreddo (but not the peaches) with broken pieces of amaretti.

PEACH AND PISTACHIO PRALINE SEMIFREDDO

Peach and Pistachio Praline Semifreddo image

This frozen dessert has the creamy texture of softened ice cream-but doesn't require an ice cream maker.

Provided by Cindy Mushet

Number Of Ingredients 12

Nonstick vegetable oil spray
1 cup sugar
1/2 cup water
1 tablespoon light corn syrup
1 cup shelled raw unsalted natural pistachios (41/2 to 5 ounces) or hazelnuts, lightly toasted
Nonstick vegetable oil spray
5 large egg yolks
5 tablespoons plus 1/4 cup sugar, divided
5 tablespoons peach liqueur (such as Mathilde Pêches)
14 ounces ripe peaches (about 2 large), peeled, pitted, quartered, plus 2 ripe peaches, peeled, halved, pitted, sliced (for garnish)
1 cup chilled heavy whipping cream
8 1/2 x 4 1/2 x 2 1/2-inch loaf pan

Steps:

  • Line baking sheet with foil; spray with nonstick spray. Combine sugar, 1/2 cup water, and corn syrup in heavy medium saucepan; stir over medium heat until sugar dissolves. Increase heat; boil until syrup is deep amber, occasionally swirling pan and brushing down sides with wet pastry brush, about 10 minutes. Remove from heat. Add nuts; stir until coated. Immediately pour mixture out onto prepared sheet of foil and spread so that nuts are in single layer. Cool completely.
  • Break off 1/4 of nut praline and coarsely chop, then transfer pieces to processor. Process until praline resembles fine powder; transfer to airtight container. Chop remaining praline into 1/4-inch pieces; transfer to another airtight container. DO AHEAD: Can be made 1 week ahead. Store both airtight containers at room temperature.
  • Lightly spray 8 1/2 x 4 1/2 x 2 1/2- inch loaf pan with nonstick spray. Line pan with double layer of plastic wrap, leaving 4-inch overhang on all sides. Whisk yolks, 5 tablespoons sugar, and peach liqueur in medium metal bowl to blend. Set bowl over large saucepan of simmering water (do not allow bottom of bowl to touch water). Whisk until yolk mixture is thick and resembles softly whipped cream and instant-read thermometer inserted into mixture registers 160°F, about 4 minutes. Remove bowl from over water and continue to whisk mixture until cool to touch, about 3 minutes.
  • Puree quartered peaches in processor until smooth. Measure 1 cup peach puree; stir into yolk mixture (reserve any remaining puree for another use). Beat cream and 1/4 cup sugar in medium bowl until soft peaks form. Fold cream mixture into yolk-peach mixture in 2 additions. Fold in ground praline just until incorporated. Transfer to prepared loaf pan; smooth top. Fold plastic overhang over semifreddo, then cover pan with foil; freeze overnight.
  • Remove foil and unfold plastic wrap from top of semifreddo. Invert semifreddo onto baking sheet; lift off pan and remove plastic wrap. Press chopped praline onto sides of semifreddo, leaving top plain; cover loosely with plastic wrap or foil and freeze at least 4 hours and up to 1 day. Using 2 metal spatulas, transfer semifreddo to serving platter. Arrange sliced peaches in row down center atop semifreddo. Cut into 1-inch-thick slices.

PEACH-AMARETTI CRISP

Peach-Amaretti Crisp image

With such a strong almond-like flavor, it makes sense to think that authentic Italian amaretti cookies are made with almonds. But, in fact, it's apricot kernels that give them their robust, nutlike bite. Whatever the source of their flavor, amaretti cookies have a remarkable affinity for stone fruits such as peaches. I often double (or triple) the recipe for this topping and freeze the leftover in a zippered plastic bag. That way, I have some on hand and can bake up a crisp at a moment's notice.

Yield makes 8 servings

Number Of Ingredients 11

8 medium peaches (about 3 pounds/1.5 kg)
2 tablespoons (30 g) granulated sugar
1 tablespoon all-purpose flour
1 teaspoon vanilla extract or 1/2 teaspoon almond extract
3/4 cup (110 g) all-purpose flour
1/4 cup (50 g) granulated sugar
1/2 cup (120 g) packed light brown sugar
3/4 cup (90 g) crushed amaretti (about 16 cookies; page 215)
1 teaspoon ground cinnamon
1/2 cup (65 g) almonds, toasted
1/2 cup (4 ounces/115 g) unsalted butter, cut into 1/2-inch (1.5-cm) pieces and chilled

Steps:

  • Preheat the oven to 375°F (190°C).
  • To make the filling, peel, pit, and cut the peaches into 1/2-inch (1.5-cm) slices. In a large bowl, toss the peaches with the 2 tablespoons (30 g) granulated sugar, 1 tablespoon flour, and vanilla or almond extract. Transfer the peaches to a shallow 2-quart (2-liter) baking dish. Set aside.
  • To make the topping, in a food processor fitted with the metal blade, pulse together the 3/4 cup (110 g) flour, 1/4 cup (50 g) granulated sugar, brown sugar, amaretti crumbs, cinnamon, and almonds until the almonds are in small bits but with chunks still visible. Add the chilled butter pieces and pulse until the topping no longer looks sandy and is just beginning to hold together.
  • Distribute the topping evenly over the peaches. Bake until the filling is bubbling around the edges and a sharp paring knife inserted into the center of the cobbler meets no resistance, 40 to 50 minutes.
  • Serve warm or at room temperature with Vanilla Ice Cream (page 143) or just a pour of fresh, cold cream.
  • For a MIXED BERRY CRSIP, make the filling using 6 cups (1 3/4 pounds/795 g) mixed berries (raspberries, blackberries, blueberries, and quartered strawberries) with 1/3 cup (65 g) granulated sugar, 2 tablespoons (15 g) all-purpose flour, and 2 teaspoons kirsch or lemon juice.
  • If using store-bought amaretti, which are usually tiny, you'll need a few more than indicated in the recipe to make the right amount of crumbs.
  • Have a sheet of aluminum foil on the lower rack of the oven during baking to catch any overflow of fruit juices.

ANDREA DA MERANO'S SEMIFREDDO DI AMARETTI WITH FRESH PEACHES

Andrea da Merano's Semifreddo di Amaretti With Fresh Peaches image

This recipe came to The Times in 1987 from the chef Andrea de Merano, who was cooking then at Palio in Manhattan. It is more like a frozen mousse than ice cream, and is served at a higher temperature than a typical American frozen dessert. Make sure the peaches are really ripe for this, and wait until serving to add the crumbled amaretto cookies. Take heart: This recipe might take some time, but it will keep up to a week in the freezer. (The New York Times)

Time 3h30m

Yield 8 to 12 servings

Number Of Ingredients 9

6 egg yolks
1/2 cup amaretto cookie crumbs
1 tablespoon amaretto liqueur
3 egg whites
1 cup sifted confectioners' sugar
1 1/2 cups heavy cream
2 pounds ripe peaches
1 tablespoon lemon juice
Lightly crushed amaretto cookies for garnish

Steps:

  • In the bowl of an electric mixer, beat the egg yolks until they thicken. Add the amaretto cookie crumbs and continue beating 5 minutes, scraping the sides of the bowl periodically, until the mixture becomes quite light in color and very thick. Stir in the liqueur.
  • In a clean, dry bowl beat the egg whites until they foam. With the mixer at high speed continue beating, gradually adding 1/2 cup of the confectioners' sugar. Beat until the egg whites hold firm peaks, about 3 minutes longer.
  • In a chilled bowl beat the cream until it holds soft peaks. Fold the egg whites and cream together.
  • Fold one-quarter of the cream and egg white mixture into the egg yolk mixture until well blended. Gently fold in the remaining cream and egg white mixture.
  • Spread the mixture in 12 individual 1/2-cup custard cups or 8 six-ounce custard cups or molds or a 6-cup loaf pan or mold; cover with plastic wrap and freeze several hours or overnight. The semifreddo will keep at least a week in the freezer.
  • Shortly before serving, plunge the peaches into boiling water 15 seconds, rinse under cold water, peel, pit and cut them into thin slices. Toss with remaining 1/2 cup of confectioners' sugar and the lemon juice.
  • Dip the mold or molds briefly into hot water and turn out onto individual chilled plates or a serving platter. Surround with peach slices. Sprinkle the semifreddo with crumbled amaretto cookies and serve.

Yield Serves 8

Number Of Ingredients 11

3 pounds peaches (about 8 large), peeled, pitted, cut into 3/4-inch pieces
1 1/2 cups sugar
2 teaspoons brandy
8 large egg yolks
1/2 cup light corn syrup
1 1/4 cups chilled whipping cream
1 teaspoon vanilla extract
2 tablespoons amaretto
8 tablespoons crushed amaretti cookies
Fresh raspberries (optional)
Sliced fresh peaches (optional)

Steps:

  • Combine 3 pounds peaches, 1/2 cup sugar and brandy in heavy large saucepan. Simmer over medium heat until peaches are juicy and tender, stirring occasionally, about 5 minutes. Transfer to processor and puree until smooth. Set aside 2 1/4 cups peach puree; cool (reserve any remaining puree for another use).
  • Cut eight 14 x 6-inch foil strips. Fold each in half lengthwise. Wrap 1 foil strip tightly around each of eight 2/3-cup soufflé dishes, forming collars that extend from base of dish to above rim. Fold and crimp ends tightly to secure.
  • Whisk yolks, corn syrup and remaining 1 cup sugar in large metal bowl to blend. Set bowl over saucepan of simmering water (do not allow bottom of bowl to touch water). Using handheld electric mixer, beat constantly until thermometer inserted into mixture registers 160°F, about 7 minutes. Remove bowl from over water. Continue to beat mixture until cool and thick, about 5 minutes.
  • Beat cream and vanilla in another large bowl until soft peaks form. Add amaretto and beat until stiff peaks form. Fold peach puree into cream mixture in 3 additions. Gently fold in yolk mixture and 6 tablespoons crushed cookies. Divide mixture equally among prepared soufflé dishes (mixture will extend above rim of dishes). Sprinkle tops with remaining crushed cookies. Cover with plastic; freeze overnight and up to 3 days.
  • Carefully remove foil from soufflés. Top soufflés with berries and peach slices, if desired, and serve immediately.

Yield Makes 8 to 10 servings

Number Of Ingredients 12

Nonstick vegetable oil spray
1 1/3 cups finely ground amaretti cookies (Italian macaroons) plus 1/2 cup coarsely crushed cookies
1 tablespoon sugar
2 pinches of salt
1/4 cup (1/2 stick) unsalted butter, melted
3 pounds firm but ripe peaches, halved, pitted, cut into 3/4-inch-wide wedges
1 cup (packed) plus 1 tablespoon golden brown sugar, divided
1 1/2 tablespoons fresh lemon juice
2 1/4 quarts vanilla ice cream (9 cups)
2/3 cup chilled heavy whipping cream
Even easier: Use purchased peach ice cream instead of mixing up your own.
Ingredient info: Amaretti cookies are available at supermarkets and Italian markets.

Steps:

  • Preheat oven to 350°F. Coat 9-inch glass pie dish with nonstick spray. Mix finely ground cookie crumbs, 1 tablespoon sugar, and pinch of salt in medium bowl. Add lukewarm melted butter; mix to blend. Press crumbs onto bottom and up sides of dish. Bake until golden around edges, about 10 minutes. Cool completely in dish on rack.
  • Preheat broiler. Line rimmed baking sheet with foil. Coat with nonstick spray. Arrange peaches in even layer on sheet. Broil until beginning to brown, watching closely to avoid burning, 3 to 5 minutes. Sprinkle 1/4 cup brown sugar over peaches. Broil until sugar melts and caramelizes, rotating sheet for even cooking, 2 to 3 minutes longer. Transfer peaches and juices to bowl (leave any burned parts behind). Add 3/4 cup brown sugar, lemon juice, and pinch of salt to peaches; stir until sugar dissolves. Cover; chill until cold, about 2 hours.
  • Slightly soften ice cream in microwave on low power in 20-second intervals. Transfer to large bowl. Add broiled-peach mixture. Fold to incorporate peaches (peaches will break apart). Spoon about 2/3 of ice cream into cooled crust; smooth top. Cover and freeze pie and remaining peach ice cream separately until firm, about 4 hours. Using medium-size ice cream scoop, scoop remaining ice cream in bowl in level coops and arrange in concentric circles top pie. Freeze pie. DO AHEAD: Can be made days ahead. Cover and keep frozen.
  • Using electric mixer, beat cream and remaining 1 tablespoon brown sugar in medium bowl until peaks form. Sprinkle coarsely crushed amaretti cookies over pie. Cut into wedges and serve with dollop of brown sugar whipped cream.
