PEACH ICED TEA
Beat the heat on summer days with a refreshing glass of peach iced tea. Sure to be a hit with the whole family, you could also make it with raspberries

Steps:
- Tip the sugar into a pan with 250ml water. Bring to the boil slowly, ensuring the sugar is fully dissolved. Add the chopped peaches and cook until very soft. Remove from the heat, mash the peaches with a fork, and leave to infuse for 1 hr.
- Sieve the syrup through a fine sieve into a jug, mashing the fruit to release all the liquid. The syrup will keep in the fridge for one week.
- Put the teabags in a large heatproof jug and pour over 2 litres boiling water. Leave to steep for 4 mins, then carefully remove the teabags. Leave to cool, then transfer to the fridge until chilled.
- Stir the peach syrup into the iced tea with some ice, or pour a little of the syrup into tall glasses and add the tea. Top up with more water, sparkling water or ice. Add peach slices to serve.

HOMEMADE PEACH ICED TEA

Steps:
- Bring 3 cups (750ml) water and the sugar to a boil in a pot. Add the peaches and vanilla bean (including the seeds). Simmer over medium heat for about 30 minutes.
- Discard the vanilla bean. Pour the peaches and syrup into a blender and puree until smooth. Strain the peach puree through a sieve into a pitcher.
- Bring 4 cups (1 liter) water to a boil in a small saucepan. Remove from the heat, add the tea and steep according to the package directions. Strain to remove the tea leaves, then add the tea to the pitcher with the peach puree. Stir to combine. Refrigerate until cold.
- The pulp from the fruit may have separated from the tea during chilling, so be sure to stir it before serving. Pour over ice cubes in tall glasses and garnish with vanilla beans.
- Cook's Note: When blending hot liquids, remove liquid from the heat and allow to cool for at least 5 minutes. Transfer liquid to a blender or food processor and fill it no more than halfway. If using a blender, release one corner of the lid. This prevents the vacuum effect that creates heat explosions. Place a towel over the top of the machine, pulse a few times then process on high speed until smooth.
PEACH ORANGE ICED TEA
This is a peach- and orange-flavored iced tea, great on a hot summer day. A nectarine can be substituted for the peach. A mandarin orange can be substituted for the clementine.

COPYCAT STARBUCKS SHAKEN ICED PEACH GREEN TEA LEMONADE
I hardly ever go to Starbucks any more, after purchasing a Keruig years ago. Tried one of these a few days ago and have been back 3 times. Last time, I thought this was crazy, so I questioned the cashier. He said use 7 squirts of peach syrup. Some Starbuck's sells peach, almost all stores that have a Starbucks inside will sell the syrups. I have bought this at Von's and at Target. I purchased the plunger which was under $3.00 (I love that thing!) because the cashier had no idea what 7 squirts measured out to be. It's so much easier to squirt out the syrup, then measure into each glass, or so, I think. Hope you enjoy as much as I do! No more money spent at Starbucks on these babies!

- Steep tea bags in the boiling water to make a strong tea; discard tea bags. Refrigerate tea until well chilled. Stir together tea and peach nectar in a pitcher. Add mint and lemon slices; refrigerate 1 hour. Add ice, and serve.
WHISKEY SPIKED PEACH ICED TEA

- Bring water to a boil in a small saucepan; remove from the heat, add tea bags, and let steep 5 minutes. Remove tea bags and stir in sugar until dissolved. Transfer to a pitcher, add peach nectar, and stir to combine. Chill in the refrigerator for at least 1 hour.
- Fill tall glasses with ice and then pour peach tea over, leaving some room at the top for the whiskey. Stir in 1 shot of whiskey to each glass and garnish with a peach slice and fresh mint sprig.

- Make the tea in a 3 or 4 quart pitcher (or iced tea pot). Set aside.
- Pour peaches and water into a blender.
- Blend on high speed until well blended.
- Add sugar and blend for a few more seconds.
- Add more water until there is 1 quart.
- Blend for a few seconds-- pulse.
- Pour this mixture into the pitcher of tea and stir until well mixed.

- Brew tea by adding the entire 100g tin of leaves to 12-cup coffee maker's filter basket. Use 12 cups water. As soon as it has brewed, pour into a pitcher and refrigerate until very cold. (This is double-strength.).

- WITH AN ICED TEA MAKER:.
- Place splenda and fruits in the bottom of the iced tea pitcher.
- OMIT the ice!
- Make iced tea according to your tea makers directions.
- After the brew cycle is done, let tea and fruits sit for about ten minutes, DO NOT STIR YET!
- After ten minutes, add enough cool water to fill pitcher or until it tastes good to you.
- Let chill at least two hours.
- Remove fruit if you like but we think it is pretty!
- Serve over ice.
- WITHOUT AN ICED TEA MAKER:
- In a small pot, bring water to a rolling boil, remove from heat add tea bags and let steep covered for 10-15 minutes.
- Meanwhile, place the splenda and fruit in a large pitcher.
- After tea is done steeping, remove tea bags and gently bring tea to a simmer. Remove from heat and slowly and gently pour over fruit and splenda.
- After ten minutes, add enough cool water to fill pitcher or until it tastes good to you.
- Let chill at least two hours.
- Remove fruit if you like but we think it is pretty!
- Serve over ice.

- Brew on med-low heat.
- Open the canned peaches, and drain the syrup into the pot.
- Drop in 3-5 peach slices.
- Reserve the rest of the peaches on the side.
