6 peaches (about 1 1/2 pounds), peeled, pitted and chopped
1/2 cup water
1/2 vanilla bean, seeds scraped
1/4 cup granulated sugar
2 tablespoons packed light brown sugar
2 teaspoons lemon juice
Pinch of salt
2 rounds refrigerated pie crust
1 large egg, lightly beaten

Steps:

  • Combine the peaches, water, vanilla seeds and pod, granulated sugar, brown sugar, lemon juice and salt in a saucepan. Bring to a simmer and cook until syrupy and the peaches are soft and just beginning to break down, 12 to 18 minutes. (Add more water if the mixture is too thick.) Discard the vanilla pod and mash the peaches; let cool.
  • Preheat the oven to 425˚ F. Line a baking sheet with parchment paper. Gather the pie dough into 2 small compact squares; roll out each into a 12-inch square. Cut each in half, then cut each half into thirds to make twelve 4-by-6-inch rectangles.
  • Arrange 6 rectangles on the baking sheet and top each with 3 tablespoons of the peach compote. Cover each with another rectangle of dough; crimp the edges with a fork to seal. Cut a small vent into the center of each top; brush with the beaten egg. Bake until golden brown, 20 to 25 minutes.

1 cup cold unsalted butter, cut into small cubes
2 1/2 cups Gold Medal™ all-purpose flour
2 teaspoons granulated sugar
1 teaspoon salt
4 to 8 tablespoons ice water
4 oz cream cheese (from 8-oz package), softened
3 tablespoons packed brown sugar
1 egg yolk
2 cups diced fresh peaches
1 1/2 teaspoons cornstarch
2 to 4 tablespoons packed brown sugar (depending on sweetness of fruit)
1 egg
1 tablespoon milk
Additional granulated sugar

Steps:

  • In medium bowl, combine cold butter, flour, 2 teaspoons granulated sugar and the salt; toss to coat butter. Using fingers or pastry blender, pinch butter into flour until coarse crumbs form. Begin adding ice water 1 to 2 tablespoons at a time, mixing with fork or spoon just until dough comes together when pinched between fingers.
  • Turn dough out onto lightly floured surface; knead a few times just to bring dough together. Divide dough in half; shape into 2 flattened disks. Wrap each disk well in plastic wrap; refrigerate at least 30 minutes.
  • In medium bowl, beat cream cheese, 3 tablespoons brown sugar and the egg yolk with whisk or electric mixer until well combined. In another medium bowl, toss peaches, cornstarch and 2 to 4 tablespoons brown sugar to taste. Set Filling aside while rolling and cutting dough.
  • Heat oven to 400°F. Line 2 cookie sheets with silicone nonstick baking mat or cooking parchment paper; set aside. In small bowl, beat egg and milk with whisk for egg wash; set aside.
  • Roll out dough, 1 disk at a time, to 1/4- to 1/8-inch thickness. Using 3-inch round cutter or upside-down drinking glass, cut out rounds of dough (about 16 per disk). Repeat with remaining dough disk. Place half of the dough rounds on the 2 cookie sheets, leaving room between each (8 per sheet).
  • Divide cream cheese mixture evenly among rounds. Divide peach mixture evenly among each cream cheese-topped dough round. Lightly brush edge of each dough round with egg wash. Top each with second dough round to cover filling. (This may take some rearranging of peach chunks but don't stress, just call them "rustic".) With fork, seal edge of each pie; poke a few holes in top of each to allow steam to escape and prevent pie from exploding during baking. Brush tops of pies with egg wash; sprinkle with granulated sugar.
  • Bake in center of oven, 1 sheet at a time, 20 to 25 minutes or until bottoms of pies are golden brown and sugared tops are slightly crackled and beginning to turn golden. Remove from oven; cool at least 10 minutes before serving.

Adorable hand pies filled with a sweet cinnamon-kissed peach pie filling. These are glazed when warm and remind me of a tastier version of the little individually wrapped glazed fruit pies you could buy at the grocery store. You can certainly change up the pie filling for your favorite flavor.

1 (21 ounce) can peach pie filling
1 teaspoon ground cinnamon
¼ cup water
2 (14.1 ounce) packages refrigerated pie crust
2 cups powdered sugar, sifted
⅓ cup milk, or more as needed

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C). Line a baking sheet with a silicone baking mat (such as Silpat®).
  • Pour pie filling into a bowl and stir in cinnamon until evenly blended in. Use kitchen shears to chop the peaches into small pieces.
  • Pour 1/4 cup water in a small bowl--you will use this to wet your finger and gently wet the very outer edges of the pie rounds before sealing.
  • Lay out your first pie crust round. Use a 4-inch biscuit cutter to cut out 7 rounds; you can get about 5 out with your first pass, and then will need to gently press the dough together and roll it out again to the get the last 2 or 3 depending on how thin you roll out the dough.
  • Place about 1/2 tablespoon peach filling in the center of each round. Wet your fingertip and run it around the very outside edge of the dough round before you fold the pie crust in half, over the top of the filling. Gently press along the seam, and then use the tines of a fork to press all the way around to help seal the pie.
  • Place the prepared pies on the lined baking sheet, and repeat with all remaining dough and filling--you may have some filling leftover, depending on how full you are able to fill the pies.
  • Bake in the preheated oven until pies are golden brown and lightly crisped, 12 to 15 minutes.
  • Once you have removed the pies from the oven, create glaze. Whisk together sifted powdered sugar and milk until smooth. The glaze should be fairly thin.
  • Gently dip either just the tops of the warm pies, or submerse the whole pie into the glaze, flipping gently with a fork, and then setting on parchment paper or a silicone baking mat to cool and dry. Repeat with all pies. If you dip the full pies, you may need a little extra glaze at the end, but this should be enough to lightly coat them all.

3-4 medium ripe peaches
2 Tablespoons granulated sugar
1/4 cup lightly packed brown sugar
2 Tablespoons butter
1/4 teaspoon cinnamon
2 Tablespoons water
1 Tablespoon corn starch
2 puff pastry sheets (thawed)
1 egg white
1 Tablespoon cold water
2 Tablespoons sugar
1/2 teaspoon cinnamon

Steps:

  • Peel, remove pits, and cut peaches into 1/2-inch pieces.
  • In a saucepan over medium heat, combine peaches, sugars, butter and cinnamon until butter is melted. Cover and cook for 6-8 minutes until peaches reach desired softness.
  • In a small bowl, mix together 2 Tablespoons water and cornstarch, then add to saucepan. Stir and cover for an additional 1-2 minutes, until peach mixture starts to thicken. Remove from heat and set aside.
  • Preheat oven to 375 degrees.
  • Roll out both puff pastry sheets, and cut each sheet into six 3x6 inch rectangles. Evenly split the apple mixture down the middle of six of the rectangles. In the other six sheets, make 3-5 cuts in the puff pastry. Take each puff pastry sheet with peaches and top with a puff pastry sheet that has been cut. Press the seams together using the tines of a fork. Place the hand pies on a baking sheet.
  • In small bowl, mix together egg white and water. Brush over the top of each hand pie.
  • In a separate small bowl, mix together sugar and cinnamon, then sprinkle over the top of each pie.
  • Cook for 15-18 minutes, until pastry starts to brown. Serve warm.

In New York, where I live, peaches mean summer, and the perfect specimens usually come from the farmer's market. But what's a peach-lover to do year-round? There is a solution: frozen peaches! The best ones have been picked at their peak and peeled, sliced and flash-frozen to seal in all that glorious peach flavor.

2 1/2 cups all-purpose flour, plus more for flouring the work surface
2 tablespoons granulated sugar
1 teaspoon kosher salt
2 sticks cold unsalted butter, cut into cubes
4 tablespoons ice water, plus a bit more if needed
2 cups diced peaches, fresh or frozen
5 tablespoons granulated sugar
1 tablespoon cornstarch
2 to 3 tablespoons bourbon
1 large egg
Pinch kosher salt
Coarse sugar, for sprinkling

Steps:

  • For the pastry: In the bowl of a food processor, combine the flour, granulated sugar and salt and pulse to combine. Add the butter and pulse until the mixture resembles coarse meal with some bigger pieces of butter. Add the ice water and pulse just until the crumbs begin to come together. Add a little more water if necessary but try not to add too much. Turn the mixture out onto a big sheet of plastic wrap, form it into a disc, wrap it and refrigerate for at least 1 hour.
  • Preheat the oven to 375 degrees F.
  • On a lightly floured surface, roll out the dough to an even 1/8- to 1/4-inch thickness. Using a 3-inch cookie cutter, cut out 16 to 20 circles. Transfer to a rimmed baking sheet and chill while you make the filling.
  • For the filling: In a small saucepan, combine the peaches, granulated sugar and cornstarch. Bring to a boil over medium heat, mashing the peaches with a fork, and cook until the mixture has thickened, 6 to 8 minutes. Stir in the bourbon to taste. Let cool completely, about 30 minutes.
  • In a small bowl, whisk together the egg and salt. On a rimmed baking sheet lined with parchment, lay out half of the dough discs. Dollop 1 to 2 tablespoons of the filling in the center of each disc. Brush around the edges of the pastry with some of the egg mixture. Top with another dough disc, pressing the edges with a fork to seal. Brush the tops with the egg mixture and sprinkle with coarse sugar. With a paring knife, make a little slit in each pie to vent steam.
  • Bake until golden brown, 25 to 30 minutes. Transfer the pies to a rack to cool or serve warm.

2 tablespoons unsalted butter
1 Honeycrisp apple, peeled and chopped into 1/3-inch pieces (about 1 1/2 cups)
8 ounces thawed, drained frozen peaches, roughly chopped
1/4 cup dried currants
2 tablespoons brown sugar
2 tablespoons freshly squeezed orange juice
1/4 teaspoon cinnamon
Kosher salt
One 14- to 16-ounce box refrigerated rolled pie crusts (2 crusts), thawed to room temperature
All-purpose flour, for the surface
1 large egg
Turbinado sugar, optional, for garnish

Steps:

  • Preheat the oven to 400 degrees F and line a rimmed baking sheet with parchment paper.
  • Heat a nonstick pan over medium heat and add the butter. When the butter has melted, add the chopped apples and sauté, stirring frequently, until they're slightly softened, about 3 minutes. Turn the heat to low and add in the chopped peaches, dried currants, brown sugar, orange juice, cinnamon and a pinch of salt. Stir to combine and turn off the heat. Let the mixture cool before forming the hand pies.
  • Meanwhile, prepare your pie dough. Working with one crust at a time, unroll the dough onto a lightly floured surface. Lightly flour a rolling pin and roll the pie dough out into a 13-inch round. Use a 6-inch circle cutter to cut out 3 rounds of pie dough. Place the dough rounds onto the prepared baking sheet. Repeat the process with the second crust; you should end up with six 6-inch rounds of pie dough. Reserve leftover pie dough for a later use.
  • Working one at a time, place a round of dough on a clean work surface and spoon 1/4 cup filling onto one side of the round. Lift the empty side up and over the filling, creating a half-moon. Use a fork to crimp the edges together, sealing the pie. Place the pie on the prepared baking sheet and repeat the process with the remaining dough and filling.
  • To make the egg wash, whisk the egg and a splash of water together in a small bowl. Brush each pie with an even layer of the egg wash and sprinkle on the turbinado sugar if desired. Use a sharp knife to cut an "X" on top of each pie. Transfer the pies to the oven and bake until the pies are golden, 20 to 23 minutes.

1/2 tsp. salt
16 tablespoons (2 sticks, 8 ounces) unsalted butter, cut into
pieces
1/2 cup sour cream
4 teaspoons fresh lemon juice
1/2 cup ice water
For the filling:
2 pounds of peaches
1/4 cup flour
1/4 cup sugar
Pinch of salt
1 teaspoon bourbon
1/2 teaspoon vanilla extract
One egg yolk beaten with 2 tablespoons water (for egg wash)
Coarse sanding sugar, for decoration

Steps:

  • 1. To make the pastry, in a bowl, combine the flour and salt. Place the butter in another bowl. Place both bowls in the freezer for 1 hour. Remove the bowls from the freezer and make a well in the center of the flour. Add the butter to the well and, using a pastry blender, cut it in until the mixture resembles coarse meal. Make another well in the center. In a small bowl, whisk together the sour cream, lemon juice and water and add half of this mixture to the well. With your fingertips, mix in the liquid until large lumps form. Remove the large lumps and repeat with the remaining liquid and flour-butter mixture. Pat the lumps into a ball; do not overwork the dough. Cover with plastic wrap and refrigerate for 1 hour. 2. Divide the refrigerated dough in half. On a lightly floured work surface, roll out one half of the dough to 1/8-inch thickness. Using a 4 1/2-inch-round circular cutter, cut 7-14 circles out of the rolled dough. Transfer the circles to a parchment-lined baking sheet, and place in the refrigerator to chill for about 30 minutes. Repeat the rolling, cutting, and chilling process with the remaining half of dough. 3. Make the filling: Peel and chop the peaches into small bits (approx. 1/2-inch dice). Mix them with the flour, sugar and pinch of salt, and add the bourbon and vanilla, if you wish. 4. Remove the chilled dough from the refrigerator, and let stand at room temperature until just pliable, 2 to 3 minutes. Spoon about 1 to 2 tablespoons filling onto one half of each circle of dough. Quickly brush a little cold water around the circumference of the dough, and fold it in half so the other side comes down over the filling, creating a semicircle. Dessert is ready in 30 minutes with these Glazed Peach Hand Pies! The flaky crust and spicy cinnamon filling are the perfect combo in a hand pie, plus they're baked not fried!

2 boxes (14.1 oz each) refrigerated pie crust
1 can (21 oz) peach pie filling
1 tsp cinnamon
2 1/2 cups powdered sugar
1/4 cup milk
1 egg white, beaten

Steps:

  • Preheat oven to 425°F. Remove pie crusts from package and allow to come to room temperature while you prepare filling.
  • Dump pie filling in a shallow bowl and dice peaches using a fork and knife (you want them to be small pieces). Add in cinnamon and mix until blended. Set aside.
  • Unroll pie crusts and cut 6 circles from each crust using a 4-inch biscuit cutter. You may have to re-roll the scraps to get the 6th circle.
  • Using a 1 tbsp cookie scoop, drop peach pie filling into center of each pie crust circle. Fold in half and pinch edges completely. Fold pinched edges over and press with the tines of a fork to seal. Poke hand pie with fork once, to prevent bursting.
  • Beat egg white in a small bowl until frothy. Brush over the tops of each hand pie. Bake on a parchment paper lined baking sheet (1 inch apart) for about 15 minutes, until browned.
  • While pies are baking, whisk together the powdered sugar and milk until smooth. Remove cooked pies from baking sheet and drop (while warm) into glaze, coating it completely. Return to parchment paper and allow to set (about 5 minutes). ENJOY!
