- Preheat oven to 400 degrees. Sprinkle tenderloins with salt and black pepper. Cook in hot oil in a large ovenproof skillet over high heat 3 to 4 minutes on each side or until lightly browned.
- Melt butter in a small skillet over medium-high heat; add shallot, and saute 2 to 3 minutes until tender. Remove from heat and stir in peach preserves, bourbon, mustard, and red pepper. Cook over medium heat, stirring often, 1 minute or until preserves are melted. Pour over tenderloins.
- Bake at 400 degrees for 20 minutes or until a meat thermometer inserted in thickest portion registers 150 degrees. Transfer to a cutting board, reserving drippings in skillet. Cover loosely with aluminum foil and let stand 10 minutes before slicing.
- Meanwhile, stir broth into reserved drippings and cook over medium-high heat, stirring constantly, for 5 minutes or until reduced by half. Serve with sliced tenderloins.

Steps:
- In a small mixing bowl, stir together thyme, salt and pepper.
- Rub cooking oil into meat and sprinkle herb mixture evenly onto meat.
- Cover and refrigerate 2 hours or overnight.
- For glaze, stir together preserves, Worcestershire and ginger; set aside.
- Place tenderloin on a rack in shallow roasting pan. Roast in a 425°F oven for 30 minutes or until meat thermometer reaches 160°F
- Cover with foil and let sit for 15 minutes before carving. Slice into slices and pour glaze over tenderloin slices and place back into oven until glaze is hot.

is that time of year...fresh produce at great prices.....i got a box of peaches now what to make...as a kid my mom made pickled peaches and of course she is gone and i have no recipe for it decided to use that basic idea and make a glazes for meats or birds... i came up with this....yummy...havin trouble uploadin pic ...

- 1. take 4 peaches set aside to use later... peel,pit and slice the rest into lg pan[peel and slice over this pan so juices go into pan] now use potato masher and mash fruit...put on low heat on stove...bring to a boil...watch close stir often [so it does not burn
- 2. while peaches are cookin...mix all dry spices and splenda in small bowl add liquids in another small bowl
- 3. after peaches have cooked bout 20 min add spices mix well then add liquids stir well........turn pan very low and let simmer several hrs stirrin oftenafter bout 4 hrs cookin peel ,pit and slice,then dice last 4 peaches add to pan cook 10 min more let sit on store bout 90 min stir several times so ni film forms...then put in fridge til cold....
- 4. divid into small zipper bags[i used snack size] then put then all in gallon zipper bag...but use what yur family needs....this is great on ham,ribs,chicken,even burgers i hope ya give it a try!!!!

- In a small bowl, mix together the peach preserves, Worcestershire sauce, and chile paste. Rinse pork chops, and pat dry. Sprinkle the chops with ginger, cinnamon, salt, and pepper.
- Heat oil in a large skillet over medium-high heat. Sear the chops for about 2 minutes on each side. Remove from the pan, and set aside.
- Pour white wine into the pan, and stir to scrape the bottom of the pan. Stir in the peach preserves mixture. Return the chops to the pan, and flip to coat with the sauce. Reduce heat to medium low, and cook the pork chops for about 8 minutes on each side, or until done.

SHREDDED PORK WITH BLACK PEPPER-PEACH GLAZE

- Position an oven rack in the lowest position and preheat the oven to 300 degrees F.
- Cut the pork shoulder fat-side up into 4 quarters, making sure each quarter has some of the fat cap. Mix together the pepper, sugar and salt in a small bowl, then rub all over the pork.
- Put the peaches in the bottom of a large Dutch oven. Rest the pork fat-side up on top of the peaches. Bake until the pork is very tender and shreds easily, 3 1/2 to 4 hours. Transfer to a large bowl and let rest until cool enough to shred, keeping all the juices in the pot. Shred and reserve.
- While the pork rests, place the pot with the cooking juices over medium-high heat. Once it starts to bubble, pour in the peach tea and use a wooden spoon to scrape up any browned bits from the bottom and sides of the pot. Return to a boil, reduce the heat to medium and let simmer until the sauce is thickened slightly, 2 to 3 minutes. Add the shredded pork back in the pot and toss to combine.
- Serve the pork with slices of Texas toast if desired.
