Steps:
- Prepare the salad dressing in a non-reactive small bowl by whisking all ingredients together. Set aside.
- Cook the pea pods in boiling water for 1 minute. Drain and cool slightly.
- In a large salad bowl combine the pea pods, cabbage, radicchio, baby corn, radishes, red onion and pickled ginger.
- Drizzle the salad dressing over the salad, tossing gently to coat.
- Top the salad with the enoki mushrooms. Garnish with daikon sprouts and whole red radishes if desired.

BLACK-EYED PEA CABBAGE SALAD
Steps:
- Place black-eyed peas in a large container and cover with at least 2 inches of cool water; let soak, 8 hours to overnight.
- Transfer black-eyed peas and water to a pot; bring to a boil. Reduce heat to low and simmer until tender, 15 to 20 minutes. Drain and let cool, about 15 minutes.
- Combine black-eyed peas, cabbage, olive oil, green onions, lemon juice, parsley, salt, and pepper in a large bowl. Chill for at least 1 hour before serving.

Steps:
- Rinse peas under hot water& drain well.
- (I dry them with paper towel).
- Put peas, cabbage & onion in serving bowl.
- Mix remaining ingredients, except peanuts, in a separate bowl& pour over peas/cabbage/green onion.
- Mix well & refrigerate.
- Either top with peanuts before serving, or serve peanuts along side so people can take how much they want.
- This can easily be doubled, tripled, etc.

Cabbage and pea salad is a great addition to any meal, but I usually make it on special occasions for an unexpected side dish. Everyone loves it!

- In a medium bowl mix thawed frozen peas, cabbage, green onion and peanuts or cashews
- In a separate bowl mix together sour cream, mayonnaise, salt, red wine vinegar, mustard and pepper. Add to first bowl, mix together and refrigerate until chilled.
- Enjoy!
CABBAGE AND PEA SALAD
This cabbage and pea salad is delicious addition to any meal. It is wonderful with everything from holiday meals to summer barbeques. I know it sounds like an odd combination, but trust me, you and your family will love it. I often buy a bag of cold slaw to save on having to chop the cabbage. Don't worry about the carrots in the cold slaw, it still tastes great. I hope you enjoy this recipe as much as I do.

- Chop Cabbage to a shredded consistency, Chop peanuts or cashews. Chop green onion. Add all of the above and the thawed peas to a medium bowl.
- In a separate small bowl mix together sour cream, mayonnaise, salt, curry powder, wine vinegar, mustard and pepper. Add to cabbage mixture, stir and refrigerate until cold.
- Serve and enjoy!
