PEA & ARTICHOKE HUMMUS

Steps:
- Tip the peas into a bowl and pour over boiling water to cover. Leave for 5 mins, then drain well and tip into a food processor with all the other ingredients and seasoning. Pulse to make a rough purée, then spoon into a small bowl. Cover with cling film, and chill until ready to serve.

ARTICHOKE/BLACK-EYED PEA HUMMUS
Steps:
- Remove and discard any tough outer leaves from the artichoke hearts. Combine the hearts in a food processor with the black-eyed peas, oil, lemon juice, cumin, smoked paprika and salt. Puree until smooth. Transfer to a serving bowl. Stir in the garlic to taste, and add salt as needed. Sprinkle lightly with smoked paprika.
