Nonstick cooking spray
2 large egg whites
2 teaspoons paprika
Kosher salt and freshly ground pepper
2 pounds large Yukon gold potatoes, cut into 1/4-inch-thick fries
1 bunch scallions, chopped
3 cups low-sodium chicken broth
1/4 cup all-purpose flour
1 tablespoon Worcestershire sauce
1 1/2 cups shredded rotisserie chicken (skin removed)
3/4 cup frozen peas
4 ounces part-skim mozzarella cheese, diced

Steps:

  • Preheat the oven to 425 degrees F. Coat 2 baking sheets with cooking spray. Whisk the egg whites, paprika and 1/2 teaspoon each salt and pepper in a large bowl. Add the potatoes; toss to coat. Let the excess egg drip off, then spread out on the baking sheets. Mist with cooking spray and bake, flipping halfway through, until golden and crisp, 20 to 30 minutes.
  • Meanwhile, coat a large nonstick skillet with cooking spray. Add half of the scallions; cook over medium heat, stirring, until softened, 1 to 2 minutes. Add 1/2 cup chicken broth. Whisk in the flour until smooth, then gradually whisk in the remaining 2 1/2 cups broth and the Worcestershire sauce. Simmer, whisking occasionally, until thickened, 6 to 8 minutes. Stir in the chicken and peas and warm through, about 3 minutes. (Add up to 1 cup water if the gravy is too thick.)
  • Scatter the mozzarella evenly over the chicken mixture. Layer the fries and chicken mixture in bowls; top with the remaining scallions.

Boneless chicken breasts are covered in a pecan praline glaze. The Creole seasoning cuts back some of the sweetness. Dark Karo® syrup can be used in place of the maple syrup if that's what you have.

2 cups all-purpose flour
1 pound skinless, boneless chicken breast halves - cut into strips
1 egg, beaten
1 cup vegetable oil for frying
½ cup butter
1 cup brown sugar
1 cup maple syrup
½ cup chopped pecans
2 teaspoons Creole seasoning

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Grease a casserole dish.
  • Place flour in a shallow bowl and press chicken strips into the flour; tap to remove excess flour.
  • Dip floured chicken in the egg and again coat with flour.
  • Heat vegetable oil in a large skillet over medium heat. Pan-fry chicken strips until golden brown and the meat is no longer pink inside, about 5 minutes per side; drain on a paper towel-lined plate.
  • Melt butter in a saucepan over medium heat and stir in brown sugar, maple syrup, pecans, and Creole seasoning. Bring the mixture to a boil and cook for 1 minute.
  • Place chicken strips into the prepared casserole dish; pour praline sauce over chicken and toss chicken to coat with sauce.
  • Bake in the preheated oven until sauce is bubbling, 10 to 15 minutes.

8 chicken pieces, with skin
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1/4 teaspoon onion powder
1 pinch ground red pepper
1 pinch allspice
2 cups flour
2 tablespoons canola oil

Steps:

  • Put chicken pieces in a large bowl; add salt, black and red pepper, onion powder, and allspice. Toss chicken pieces in bowl until spices are distributed equally.
  • Put flour in a medium-size bowl and roll each chicken piece until coated evenly.
  • On medium heat in a large non-stick frying pan, bring canola oil up to temperature.
  • Add chicken pieces one at a time, skin side down. Lightly sprinkle each side with onion powder and black pepper. Reduce heat to low to medium-low and cover with lid. Turn chicken pieces every 10 minutes for 30- 40 minutes. Chicken is done when both sides are golden brown and slightly crispy.
  • Use a collander on a high rim plate to serve chicken on, allowing excess oil to drip free of the chicken as it cools to preserve crispiness.

No, I have no clue who this "Pauline" person is, but this recipe is a family favorite. The original recipe that I received called for the sour cream and just to cook the chicken in water or broth. I altered it a bit to add some flavor by cooking the chicken in dressing and mixing in the french onion dip instead of sour...

6-7 boneless, skinless chicken breasts
32 oz chicken broth or italian salad dressing
1 can(s) cream of mushroom soup (10.5oz)
12 oz sour cream or french onion dip
1 stick butter, melted
2 tubes ritz crackers
poppy seeds (to taste)

Steps:

  • 1. Cook chicken in broth (or in the dressing if you choose) in a slow cooker until it's cooked through. I usually wait until it's starting to fall apart - makes for easier shredding.
  • 2. When the chicken is done cooking, cut and shred chicken - you need enough to fill the bottom of a casserole dish about 1/3 of the way full.
  • 3. Preheat oven to 250 degrees.
  • 4. Mix mushroom soup and sour cream (or the dip) together and layer this mixture on top of the shredded chicken.
  • 5. Crush the crackers in a 1 gallon zip lock bag and pour in the melted butter. Seal the bag and shake well to mix. Layer the crackers on top of the soup mixture. Sprinkle with poppy seeds (as much or as little as you like).
  • 6. Heat through in a 250 oven for 25-30 minutes. (If casserole has been refrigerated before heating, you may want to heat it at 350 for 25-30 minutes)
