1 cup yellow cornmeal, divided
2 tablespoons yellow cornmeal, divided
1 cup butter, softened
1 cup sugar
4 large eggs
1/4 cup sour cream
1 teaspoon vanilla extract
1/2 cup all-purpose flour
1 1/2 teaspoons baking powder
1/4 teaspoon salt
1 cup powdered sugar
2 tablespoons honey
2 tablespoons milk

Steps:

  • Preheat oven to 350. Lightly grease a 9-inch square baking pan. Sprinkle bottom and sides of pan with 2 T cornmeal;set aside. In a large bowl, beat butter and sugar on medium speed with an electric mixer until creamy. Add eggs, one at a time, beating well after each addition. Beat in sour cream and vanilla. In a small bowl, combine 1 cup cornmeal, flour, baking powder, and salt. Gradually add to butter mixture, beating until combined. Pour into prepared pan, and bake 30 minutes, or until a wooden toothpick inserted in center comes out clean. Let cool 10 minutes before cutting. Drizzle with Honey Glaze, if desired.

This is one of Paula Deen's recipes. It reminds me very much of sweet & sour Chinese chicken! If you have a deep fat-fryer, by all means use it.

1 (3 1/2 lb) frying chickens or 1 (3 1/2 lb) your favorite chicken parts
2 large eggs
salt and pepper
garlic powder
vegetable oil
2 cups self-rising flour
1 cup butter
1/2 cup honey
1 cup coarsely chopped pecans
brown paper bag

Steps:

  • Rinse the chicken and pat it dry.
  • Beat the eggs in a 9x13" dish.
  • Lay the chicken pieces in the dish, and sprinkle with salt, pepper & garlic powder.
  • Turn the chicken and season the other side, then slosh the chicken parts around in the egg until well coated.
  • Put enough oil in cast iron pot or electric skillet to come just halfway up the sides of the chicken parts.
  • Heat the oil until just smoking, about 375°F.
  • Put the flour in a paper bag, add the chicken pieces, a few at a time, and shake to coat well.
  • Remove the chicken with tongs and place it it in the hot oil.
  • Cover the pan, leaving a crack for steam to escape, lower the heat to 325F for electric skillet and cook for 10 minutes.
  • Turn the chicken with tongs, cover again (leaving the lid open a crack) and cook for 10 minutes longer.
  • Very large pieces may need to be cooked longer.
  • Drain the chicken on paper towels and transfer to platter.
  • To make the glaze, melt butter in a saucepan over low heat.
  • Whisk in the honey until well blended.
  • Bring to a simmer and add the pecans.
  • Simmer for 10 minutes, stirring occasionally.
  • Ladle the glaze over the hot fried chicken and serve.

1 cup granulated sugar
1/3 cup vegetable oil
2 large eggs
1/4 cup fresh lemon juice
2 tablespoons lemon zest
1 cup low-fat buttermilk
2 1/2 cups whole wheat flour
1 tablespoon baking powder
1/2 teaspoon salt
1/4 cup fresh lemon juice
2 tablespoons honey
2 tablespoons granulated sugar

Steps:

  • Preheat oven to 350 degrees. Coat a loaf pan with nonstick cooking spray.
  • To make batter:.
  • Beat sugar, oil, eggs, lemon juice and zest with an electric mixer for about 1 to 2 minutes, or until pale and thick.
  • Gradually pour in buttermilk, and beat until smooth.
  • Combine flour, baking powder and salt in a separate bowl.
  • Stir flour mixture into egg mixture with a wooden spoon.
  • Pour the batter into prepared loaf pans.
  • Bake 1 hour and 15 minutes, or until a toothpick inverted in the center comes out clean.
  • To make glaze:.
  • Warm lemon juice, honey and sugar in small saucepan over low heat until sugar dissolves.
  • Pierce top of hot cake all over with wooden skewer or toothpick.
  • Generously brush honey glaze over bread so it seeps into holes.
  • Cool 20 minutes in pan. Unmold, and cool on wire rack before wrapping in plastic wrap to store.

8 ounces softened cream cheese
1/2 cup butter, room temperature
2 cups confectioners' sugar
1 cup sweetened flaked coconut
1 cup pecans
1 (18 1/4 ounce) box German chocolate cake mix (prepare by following directions on box)
3 eggs (or as called for by your cake mix)
1/3 cup oil (or as called for by your cake mix)
1 1/3 cups water (or as called for by your cake mix)
10 bite-size almond and chocolate covered candies (I had bite-size almond joy) or 10 candies, of choice. (I had bite-size almond joy)
4 tablespoons butter
1/4 cup cocoa
1/2 cup milk
1 1/2 cups confectioners' sugar
1/2 teaspoon almond extract

Steps:

  • Preheat oven to 350 degrees.
  • Grease a 13 x 9 by 2-inch cake pan.
  • Cream mixture:.
  • Beat cream mixture ingredients together with an electric mixer. Set aside until ready to use.
  • Cake.
  • Line bottom of greased pan with coconut flakes.
  • Sprinkle pecans on top of coconut.
  • Set aside.
  • Follow directions on back of box to prepare cake.
  • Beat for approximately 2 minutes using an electric mixer.
  • Fold in the bite sized candy.
  • Pour into cake pan.
  • Evenly space dollops of cream mixture on top of the cake.
  • When the cake cooks, the cream will sink down to the bottom.
  • This will be the "volcano" of flavor.Bake for 40 to 50 minutes.
  • While cake is still hot spread the glaze evenly over the cake.
  • Glaze:.
  • In a small saucepan, melt butter over meduim-low heat.
  • Whisk in cocoa powder and add milk until you get a thin consistency.
  • If glaze is too thick, add more mik.
  • Bring to boil.
  • Whisk in confectioners' sugar and almond extract.
  • Glaze should be thin. Remove from heat and allow to cool before using.
