AVOCADO CHICKEN SALAD



Avocado Chicken Salad image

A twist on the traditional chicken salad with the addition of creamy, heart-healthy avocado.

Number Of Ingredients 15

3 cups cooked and diced chicken
3 cups cooked white rice
2 peeled, diced, and tossed with 1 tablespoon lemon juice avocados
3/4 cup chopped, plus 1/3 cup chopped onion
2 cups divided mayonnaise
1 to 2 teaspoons pepper
2 teaspoons divided salt
1/4 cup chopped fresh parsley
1 large peeled and mashed with 2 tablespoons lemon juice avocado
1/2 cup sour cream
1/2 teaspoon Worcestershire sauce
2 cloves minced garlic
1 dash cayenne pepper
thick, crusty multi-grain or sourdough, for serving bread
wedges of for serving lemon

Steps:

  • Salad:
  • Mix chicken, rice, 2 avocados, 3/4 cup chopped onion, 1 cup mayonnaise, pepper, salt and parsle. Pass with avocado dressing. Serve with crusty bread and a lemon wedge.
  • Dressing:
  • Place avocado, mayonnaise, sour cream, Worcestershire, 1/3 cup chopped onion, garlic, salt and cayenne pepper in a food processor and blend until smooth. Chill and serve alongside chicken salad.

PAULA'S CLASSIC CHICKEN SALAD



Paula's Classic Chicken Salad image

Makes 4 to 6 servings

Number Of Ingredients 9

½ cup mayonnaise
2 tablespoons fresh lemon juice
1 teaspoon salt
3½ cups chopped cooked chicken
1 cup diced celery
⅓ cup slivered almonds
Sandwich bread
Green leaf lettuce
Sliced tomato

Steps:

  • In a medium bowl, stir together mayonnaise, lemon juice, and salt. Add chicken, celery, and almonds, stirring until well combined. Cover and refrigerate for up to 3 days. Serve on bread with lettuce and tomato.

1 cup mayonnaise
1 cup sour cream
2 tablespoons chopped fresh tarragon
¾ teaspoon salt
¼ teaspoon garlic powder
¼ teaspoon ground black pepper
3 cups chopped cooked chicken
2 cups halved red grapes
1 cup chopped celery
1 cup chopped toasted pecans
Croissants
Green leaf lettuce

Steps:

  • In a large bowl, stir together mayonnaise and next 5 ingredients. Add chicken and next 3 ingredients, stirring to combine. Cover and refrigerate up to 3 days. Serve on croissants with lettuce, if desired.

3 cups chopped cooked chicken
1/3 cup mayonnaise
1/3 cup sour cream
1/3 cup toasted slivered almonds
1 tablespoon chopped flat leaf parsley
1 teaspoon honey
3/4 teaspoon salt
8 slices country white bread
1/4 cup thousand island dressing
8 slices swiss cheese
1/4 cup butter

Steps:

  • In a medium bowl, combine chicken, mayonnaise, sour cream, almonds, parsley, honey, and salt, tossing gently to combine.
  • Spread one side of each slice of bread evenly with Thousand Island dressing. Top half of bread slices evenly with chicken salad. Place 2 slices Swiss cheese over chicken. Top with remaining slices of bread.
  • Spread half of butter on outside of one side of each sandwich. Place sandwiches, buttered side down, onto a griddle or skillet over medium-low heat. Cook 3 to 4 minutes, or until golden.
  • Spread remaining butter on ungrilled sides of sandwiches, and cook until golden and cheese is melted. Serve immediately.
