Keep this grilled chicken marinade on hand for easy weeknight cooking. You'll get juicy chicken every time so you never have to worry about dry chicken again!

1/2 c. extra-virgin olive oil
1/4 c. soy sauce
3 garlic cloves, chopped
1 tbsp. brown sugar
2 tbsp. lemon juice
1 tbsp. dijon mustard
1 tsp. fresh thyme leaves, chopped
1 tsp. kosher salt
1/2 tsp. ground black pepper
4 lb. bone-in chicken pieces, such as drumsticks, thighs, or leg quarters
1 c. marinade
Oil, as needed

Steps:

  • For the marinade: Combine the olive oil, soy sauce, garlic, brown sugar, lemon juice, dijon mustard, thyme, salt, and black pepper in a pint-sized mason jar. Cover and shake well to combine. Use immediately or store in the refrigerator for up to 4 days before use.
  • For the grilled chicken: Place the chicken in a zip-up gallon bag. Add all of the marinade, seal the bag, and refrigerate for 30 minutes (or up to 4 hours).
  • Meanwhile, pre-heat one side of the grill to medium heat, around 350°, and leave the other side unlit. Oil the grill grates well.
  • Remove the chicken from the marinade and pat dry with paper towels. Discard the remaining marinade. Place the chicken skin-side down over the lit side of the grill. Cover and cook until grill marks appear and the chicken easily releases, 6 to 8 minutes.
  • Flip the chicken and transfer it to the unlit side of the grill. Cover and cook until the internal temperature reads 165˚, 35 to 45 minutes more (depending on the size of your chicken pieces). Let rest for 5 minutes, then serve immediately.

Super marinade for chicken on the gas or charcoal grill. This recipe produces enough liquid to marinate about 6 pounds of chicken.

2 red chilies, smoked, dried, de-seeded
3 fresh garlic cloves, crushed
3 ounces A.1. Original Sauce
1 ounce fresh rosemary
2 tablespoons black pepper, freshly milled
1 cup vodka, 90 proof
1 1/2 cups apple juice (not "cocktail")
1/2 cup lemon juice (bottle-type okay)
3 tablespoons olive oil
1/2 teaspoon oregano
3 ounces maggi seasoning sauce (or, substitute soy sauce)

Steps:

  • Run all ingredients through a food processor or blender until it is liquified.
  • Poke the chicken parts, 4-5 times each with a fork and lay it in a casserole dish.
  • Pour the marinade over the chicken, cover with cling wrap, and allow to marinate for 8-12 hours, turning it at least one time.
  • When the chicken is first put on the grill, you can pour some marinade over it, but not within 20 minutes of the chicken coming off the grill.
  • NOTE: This marinade also works well for raw shrimp that you plan to grill.

My Aunt gave me this recipe which she got from her best friend. It is best on steak, (my group loves it in cube steak then grilled) but pork or chicken will work well too.

1 clove garlic, minced
1/2 teaspoon ground ginger
1 tablespoon vegetable oil
1/4 cup low sodium soy sauce
1 tablespoon brown sugar
1/2 teaspoon ground black pepper
2 tablespoons water

4 boneless, skinless chicken breast halves (about 6 ounces each), cut crosswise into 1/2-inch strips
2 tablespoons sweet paprika
Coarse salt and ground pepper
2 tablespoons butter
1 onion, finely chopped
4 plum tomatoes, cut into 1/2-inch dice
1/2 cup reduced-fat sour cream

Steps:

  • In a medium bowl, toss chicken with 1 tablespoon paprika, 1 1/2 teaspoons salt, and 1/4 teaspoon pepper. Heat 1 tablespoon butter in a large skillet over medium-high heat. Add chicken; cook, tossing occasionally, until opaque throughout, 4 to 5 minutes. Transfer to a plate.
  • Heat remaining tablespoon butter in same skillet over medium heat. Add onion; cook, stirring and scraping up browned bits from bottom of pan, until softened, 5 to 6 minutes. Add remaining tablespoon paprika, and cook, stirring, 30 seconds.
  • Add tomatoes and 3/4 cup water; cook until saucy, 4 to 5 minutes. Return chicken (and any accumulated juices) to skillet. Stir in sour cream, and cook just until heated through (do not boil). Season with salt and pepper; serve.
