These roll-ups are simply divine. A friend shared the recipe after serving them at a church brunch, where they disappeared fast. They make a unique finger food, a side dish at supper or a lovely lunch served with soup.

- In a large saucepan, bring 1/2 in. of water to a boil. Add asparagus; cover and boil for 3 minutes. Drain and immediately place asparagus in ice water. Drain and pat dry. Set aside., Flatten bread with a rolling pin. Combine the cream cheese, bacon and chives; spread 1 tablespoonful on each slice of bread. Top with an asparagus spear. Roll up tightly; place seam side down on a greased baking sheet. Brush with butter and sprinkle with Parmesan cheese. , Cut roll-ups in half. Bake at 400° for 10-12 minutes or until lightly browned.

- In a large skillet, bring 1-1/2 cups water to a boil. Add asparagus; cover and boil for 2-3 minutes or until crisp-tender. Drain and immediately place asparagus in ice water. ASPARAGUS ROAST BEEF ROLL-UPS

- Half-fill a large bowl with ice water. Place a steamer rack insert in a large pot. Fill the pot with water so it reaches just below the steamer rack. Place the pot over high heat, cover it with a lid, and bring the water to a boil. Add the asparagus, cover the pot (leaving the lid slightly ajar), and steam the asparagus until crisp-tender, 3 to 5 minutes, depending on thickness. Transfer the asparagus to the bowl of ice water to stop the cooking. Drain well. Meanwhile, in a small bowl, mix the horseradish and sour cream until well combined. Season with salt and pepper. Lay 1 1/2 ounces of the beef on a flat work surface or cutting board. Spread one-quarter (about 1/2 tablespoon) of the horseradish mixture over the beef, leaving a small border. Place 3 asparagus spears at one of the narrower ends of each beef slice so the tips hang over. Roll the beef around the bundle of asparagus until you reach the other end of the beef. Repeat with the remaining roast beef, horseradish mixture, and asparagus to create 3 more roll-ups. Serve immediately.
- Microwave Instructions:
- Follow the directions above, except instead of steaming the asparagus, add 1 tablespoon of water and the asparagus to a medium microwave-safe bowl or dish. Cover the dish with a microwave-safe plate. Microwave on high for 1 to 2 minutes, or until the asparagus is crisp tender. Transfer the asparagus to a bowl of ice water to stop the cooking. Drain well.
ASPARAGUS ROLL-UPS
A delicious appetizer that is also excellent at any party. I have been making the asparagus roll-ups for many years and most everyone just loves them.

Steps:
- Snap off tough ends of asparagus and discard.
- In a micro-wave proof casserole dish, place asparagus in a single layer, with spears facing the centre.
- Add 2 tablespoons of water and microwave on HIGH (full power) for 4 minutes turning once at half time; DO NOT OVERCOOK.
- Remove from microwave, drain and immediately pour cold water over asparagus and place a few ice cubes to cool and stop any further cooking.
- Drain well and pat dry with paper towelling before using.
- Cut off the crust from the bread slices and discard.
- Using a roller, carefully roll each slice to flatten to about 1/4 inch thickness.
- Spread butter on one side on each piece of flattened bread.
- Then spread some mayonnaise over the butter.
- Place 3 asparagus spears to one side of the flattened bread (facing opposite direcions to each other).
- Sprinkle with salt and pepper to taste.
- Carefully roll bread/asparagus.
- Cut each roll to about 1/2 inch thick slices.
- Place on a platter and serve.
- Refrigerate any unused portions.

DELICIOUS ASPARAGUS ROLL UPS
These roll-ups are simply delicious! they make a great finger food for parties and gatherings and are quite simple to prepare, if you are not a lover of blue cheese you may omit, you may also add in some finely crumbled bacon to the cream cheese mixture :)

- Set oven to 400°F.
- Grease a baking sheet.
- Flatten bread with a rolling pin.
- In a bowl combine the cream cheese with blue cheese, garlic and green onions.
- Spread about 1 tablespoon of the cream cheese mixture on each slice of bread.
- Top with asparagus spear then roll up tightly.
- Place seam side down on a greased baking sheet.
- Brush with butter and sprinkle with parmesan cheese.
- Cut roll-ups in half.

- For the brine: In a large stockpot, add half of the water, the brown sugar, kosher salt, curing salt, coriander seeds, mustard seeds, fennel seeds, juniper berries, chile flakes, bay leaves, cloves, cinnamon and star anise and bring to a boil. Then simmer for 30 minutes. Add the remaining water with some ice to chill the brine.
- For the rub: Grind the peppercorns, coriander and juniper until crushed but still a little chunky. Add to a mixing bowl. Add the salt, brown sugar, chile flakes and granulated garlic and stir to combine.
- For the pastrami: First, clean all the fat off the brisket including the "V" between the two muscles, then follow the fat between the two muscles and separate them making a flat and a cap.
- Transfer the brine to a large hotel pan or roasting pan. Add the brisket and refrigerate at least 5 days and no more than 10 days. Make sure the brisket is stirred once a day to get an evenly brined brisket.
- After a minimum of 5 days, prepare a smoker for 225 degrees F.
- Remove the pastrami, rinse it and blot dry with paper towels. Thoroughly rub the brined brisket with the pastrami rub. Place in smoker and cook for 8 hours until the internal temperature reaches 210 degrees F on an instant-read thermometer.

- Heat oven to 400°F. In small bowl, mix bread crumbs, salt and pepper. Add parsley, lemon peel and cheese; toss well.
- In 3-quart saucepan, heat 4 cups water and 1 teaspoon salt to boiling. Add asparagus. Heat to boiling; reduce heat. Simmer about 4 minutes or until crisp-tender; drain.
- Butter shallow baking dish. Toss cooled asparagus with 2 tablespoons olive oil; sprinkle with salt and pepper. Divide asparagus into 4 equal bundles. On work surface, arrange 2 slices of the prosciutto so they slightly overlap each other. Top with 1 asparagus bundle and roll up carefully in prosciutto. Place in baking dish. Repeat with remaining prosciutto and asparagus. Flatten tops of bundles slightly; sprinkle with topping.
- Bake about 10 minutes or until thoroughly heated and crisp. Serve immediately.

DANNY BOWIEN'S PASTRAMI
I grew up in Oklahoma City, where barbecue and smoked meats are pretty much a prerequisite for family gatherings. And yet, like many families, Thanksgiving around my house included the traditional turkey and ham, which got a little boring. Pastrami brings something different to the table. The idea is to keep the prep simple; the meat takes a long time to cook, but once you have it in the oven or smoker, you don't have to attend to it. It easily feeds a large crowd and, since it isn't your typical Thanksgiving centerpiece, it will be a conversation starter. Serve it with plenty of hot mustard.

- Two nights before serving, place the corned beef in a large pot and cover with water. Refrigerate and soak for 24 hours, changing the water every four hours if possible.
- The night before serving, in a small bowl, mix the spicy brown mustard and fish sauce, and rub all over the meat. In another bowl, mix the salt, pepper and brown sugar. Sprinkle evenly all over the meat; do not rub it in. Place the meat on a rack placed over a baking sheet, and refrigerate uncovered for about 12 hours or overnight.
- Very early in the morning, remove the meat from the refrigerator and allow to rest for 1 hour to come to room temperature. Meanwhile, heat an oven to 200 degrees; or if you have a smoker, set it to 212 degrees.
- Heat a grill or large grill pan until very hot, about 10 minutes; if using an indoor grill or pan, make sure the room is well ventilated. Place the meat on the grill or pan fat side down, and allow it to sear on one side for 2 minutes. Continue turning and searing on each side - including the ends - for 2 minutes a side. Repeat for a second searing on each side; the meat should have a hard sear with grill marks. (If you are using a smoker, there's no need to sear the meat first.)
- Wrap the meat well in aluminum foil and place in a shallow baking dish. Bake for 12 hours; the finished meat should jiggle. (If you are using a smoker, do not wrap the meat in foil. Smoke for about 10 hours.)
- Remove the foil from the meat and raise the oven temperature to 400 degrees. When the oven is heated, return the meat to the oven and allow to roast until the crust is blackened and firm but still gives to the touch, 3 to 5 minutes. Remove from the heat and allow to rest for 10 minutes. Slice and serve with the pickled mustard condiment spooned on the side.
