2 cups penne pasta, uncooked measurement
1 small onion, diced
1 garlic clove, minced
3 tablespoons olive oil
1 (14 ounce) can diced tomatoes, drained
2 tablespoons tomato paste
1 medium green sweet pepper, chopped
1/3 lb salami, cubed
1 (4 ounce) can black olives, sliced style
1 cup swiss cheese, grated
1 cup cheddar cheese, grated
salt and pepper

Steps:

  • Cook pasta according to package directions, drain and set aside.
  • Preheat oven to 350 Degrees F.
  • In a large skillet, saute the onion and garlic in olive oil until tender.
  • Stir in tomatoes, tomato paste, peppers, salami, olives, salt, and pepper.
  • Simmer, uncovered, for 5 minutes.
  • Remove from heat and stir in pasta.
  • Spoon 1/2 of the mixture into a 2 quart baking dish and sprinkle 1/2 the cheese on top, repeat with the other half of mixture and cheese.
  • Place in oven and bake 15 miunutes.

2 2/3 cups (11 ounces) ditalini or mezzi tubetti pasta
3 ounces (about 15 slices) Milano salami, scissored into strips
1 (14-ounce) can diced tomatoes, plus 1/2 can water
2 tablespoons butter
1 bouquet garni (mixed herb sachet or bag), optional
1 (15-ounce) can cannellini beans, drained and rinsed

Steps:

  • Bring some water for the pasta to a boil over medium heat and salt it generously. Add the pasta and cook for about 10 minutes or as the package directs.
  • Warm a fairly wide, heavy-based saucepan over medium heat. Add the salami strips, not worrying if they clump together. Stir with a wooden spoon for 1 to 2 minutes.
  • Stir in the tomatoes and add about 1/2 a tomato can of water.
  • Stir in 1 tablespoon butter, then add the bouquet garni, if using, and the drained beans. Leave it to bubble away, firmly but gently, while the pasta finishes cooking.
  • Just before draining the pasta, remove and reserve a little of the cooking water.
  • Stir the drained pasta into the sauce, then remove from the heat, and stir in the remaining butter. If you think the sauce needs it, splash in some of the pasta cooking water, and stir again with a wooden spoon. Leave to stand for 2 minutes before serving, removing the bouquet garni, if used.

2 tbsp olive oil
½ small onion ((peeled and chopped))
6oz salami ((170g) Cut into cubes (skin removed if it has skin))
2 garlic cloves ((peeled & chopped))
1 can tomato polpa or passata (not puree) ((finely chopped tomatoes)(400g/14oz))
Penne Pasta ((around 300-400g/10-14oz))
salt & pepper
Parmigiano Reggiano ((optional))

Steps:

  • In a saucepan or deep frying pan, heat the oil until just hot. Add the onion and fry gently for 4-5 minutes until soft. Add the salami and garlic and continue to fry for 4-5 minutes until the salami has rendered out its fat.
  • Pour in the tomato and 1 cup of water and bring to a simmer. Reduce the heat to low and cook gently for 10 minutes. Season with salt & pepper then remove from the heat.
  • Cook the penne to the packet instructions in salted water - and when done, drain (retain about a cup of the cooking liquid).
  • Toss the pasta through the sauce, adding some of the cooking liquid to keep the dish nice and saucy.
  • Serve in bowls with Parmigiano Reggiano sprinkled over.

3 cups uncooked penne pasta
8 ounces hard salami, cubed
1/2 cup minced fresh parsley
4 green onions, sliced
1/2 cup olive oil
1/4 cup cider vinegar
4 teaspoons minced fresh oregano or 1 teaspoon dried oregano
4 teaspoons minced fresh basil or 1 teaspoon dried basil
2 garlic cloves, minced
1 teaspoon salt

An easy dinner favourite, this spaghetti Bolognese includes added salami and basil for a twist on a classic dish

1 tbsp olive oil
1 large onion , diced
1 red pepper , diced
3 garlic cloves , crushed
750g beef mince cube
4 tbsp tomato purée
50ml balsamic vinegar
2 x 400g cans chopped tomatoes
1 beef stock
75g salami , chopped
400g spaghetti , shredded basil leaves and grated Parmesan, to serve

Steps:

  • Heat the oil in a large casserole and cook the onion and pepper for 3-4 mins until beginning to soften. Stir in the garlic, cook for 1 min, then add the mince and cook until browned.
  • Stir in the tomato purée, balsamic vinegar, chopped tomatoes and stock cube. Bring to the boil, turn down to a simmer, put on the lid and cook, stirring every so often, for 20 mins.
  • Remove half the Bolognese, leave to cool, then put in a lidded container and keep in the fridge for tomorrow. Add the chopped salami to the pan and continue to cook. Meanwhile, bring a large pan of water to the boil and cook the pasta following pack instructions. Season the Bolognese mixture, serve with the spaghetti and scatter over the basil and Parmesan.

1 garlic clove, finely grated or minced
1 teaspoon dried oregano

1/3 cup extra-virgin olive oil, plus more for drizzling

1 pint cherry or grape tomatoes, halved

Steps:

  • Make the dressing: Combine vinegar, garlic, oregano and a big pinch each salt and pepper in a large bowl. Whisk in oil; taste and add more salt, pepper or vinegar as needed. Set aside.
  • Prepare the pasta: Bring a large pot of heavily salted water to a boil. Cook the pasta according to the package directions until the pasta is al dente. Drain well, transfer to the large bowl, and toss with the dressing while still warm.
  • Add tomatoes, mozzarella, salami, olives, cucumber and onion to the bowl and toss well; fold in herbs. Taste and season with more salt, pepper and vinegar, if you like.
  • Drizzle with olive oil and top with cracked black pepper just before serving.
