This simple collard greens pasta recipe tastes as good as it looks. It's full of collard greens and red onions, brightened up by a splash of lemon and topped with a burrata ball and loads of olive oil. This yummy pasta with greens and grilled lemons is a fantastic quick dinner idea, I'm sure your familia will love!

16 oz of uncooked pasta (I used Casarecce)
3 whole lemons
3-5 slices of bacon, diced
Olive oil to taste
1 red onion, peeled and sliced
6 cloves of garlic, minced (or 1 Tbsp of Brazilian Sofrito)
1-2 bunches of collard greens, stemmed and sliced
salt and pepper to taste
2-3 burrata balls

Steps:

  • Prepare the pasta acording to package intructions.
  • Meanwhlile, slice 2 of the lemons in half, then zest and juice the remaining lemon, and set aside. You should have approximately 1/2 a tsp of zest, and 1 tbsp of juice.
  • In a large skillet, over medium heat, grill the lemon halves until browned. Approximately 2-3 minutes. Then, remove the lemons from the skillet and set them aside.
  • Using the same skillet, brown the bacon.
  • Add about a tbsp of olive oil to the pan with the browned bacon, and add the onions.
  • Let the onions saute until they are transparent, about a minute or two.
  • Add the minced garlic, and saute until it's golden.
  • Add the lemon juice to the pan and let it cook until it's nearly evaporated - about a minute.
  • Add the collard greens and season with salt and pepper. Give everything a couple of quick stirs just to wilt the greens, then turn off the heat.
  • Add the lemon zest and the cooked pasta, stir to combine.
  • Serve it in bowls with half of a burrata ball on top. Drizzle with some more olive oil if desired.

Coarse salt and freshly ground pepper
1 tablespoon extra-virgin olive oil, plus more for grilling and serving
2 tablespoons unsalted butter
3 medium shallots, cut crosswise into 1/4-inch-thick slices
Pinch of crushed red-pepper flakes
2 bunches dandelion greens, trimmed and roughly chopped (about 8 cups packed)
2 heads frisee, trimmed and roughly chopped (about 8 cups packed)
1 1/2 to 2 cups chicken stock, preferably homemade or low-sodium canned broth
1 1/4 pounds sardines (about 8), 6 to 7 inches in length, cleaned
Zest of one lemon, plus more for serving, plus the juice of 1/2 lemon
1 pound bucatini pasta
1 1/2 cups Parmigiano-Reggiano

Steps:

  • Bring a large pot of salted water to a boil over high heat.
  • Heat oil and butter in a large, heavy, straight-sided skillet over medium-high heat. Add shallots and cook, stirring, until well browned, about 5 minutes. Reduce heat to low; continue to cook, stirring occasionally until very soft, about 5 minutes. Season with salt, pepper, and red-pepper flakes.
  • Add dandelion greens and saute until just beginning to wilt, about 3 minutes. Add frisee and cook until wilted, about 5 minutes. Add chicken broth and bring to a simmer. Cook until greens are tender.
  • Heat grill pan over medium-high heat and brush with oil. Drizzle sardines with lemon juice. Season sardines with salt and pepper. Cook 3 minutes per side and transfer to a cutting board. Fillet the sardines, discarding bones; set aside.
  • Add pasta to boiling water until al dente, then drain, reserving some of the cooking water. Add pasta to the greens mixture and gently stir in lemon zest, parmesan, and sardine fillets. Season with salt and pepper. Stir in enough of the reserved cooking water to form a sauce. Serve immediately with additional lemon zest, cheese, and a drizzle of olive oil.

6 slices bacon
2 tablespoons extra-virgin olive oil
5 cloves garlic, finely chopped
1 large bunch collard greens, thinly sliced (about 1 pound)
Kosher salt and finely ground black pepper
1 pound spaghetti
1/2 cup finely grated Parmesan
3/4 teaspoon dried red pepper flakes

Steps:

  • Cook the bacon in a large, heavy skillet over medium heat until crisp, about 8 minutes. Transfer the bacon with a slotted spoon to a paper-towel-lined plate.
  • Add the oil to the fat in the skillet and increase the heat to medium-high. Stir in the garlic and cook until very fragrant and golden, about 1 minute. Stir in the collards, 3/4 teaspoon salt and 1/2 teaspoon pepper and cook, turning with tongs, until the collards are tender and bright green, 3 to 4 minutes.
  • Meanwhile, cook the spaghetti in a large pot of boiling salted water until al dente. Reserve 1 1/2 cups of the pasta cooking water, and then drain the pasta.
  • Toss the spaghetti with the collards and some of the reserved pasta cooking water. Toss in the cheese and season with salt and pepper. Crumble the reserved bacon over the spaghetti and serve sprinkled with the red pepper flakes.

8 ounces penne
1 tablespoon olive oil
6 ounces sweet Italian sausage, casings removed (about 2 links)
1 1/2 cups collard greens cut into 1/4-inch ribbons (tough stems removed)
2 cloves garlic, minced
Pinch of red pepper flakes
1 teaspoon lemon zest
Freshly grated Parmesan, for serving

Steps:

  • Bring a large pot of salted water to a boil. Add the penne and cook as the label directs. Reserve 1/2 cup of the cooking water, then drain the pasta.
  • Meanwhile, heat the oil in a large skillet over medium-high heat. Add the sausage and cook, breaking it up into small pieces with a wooden spoon, until browned and cooked through, 3 to 4 minutes. Add the collard greens, garlic, pepper flakes and 1/2 teaspoon salt and cook, stirring occasionally, until the greens are wilted, about 3 minutes.
  • Add the pasta, lemon zest, and half of the reserved pasta water to the skillet and toss. If needed, add more of the pasta water and toss again. Serve topped with Parmesan.

1 bunch collard greens, stemmed and washed
2 tablespoons extra virgin olive oil
1 medium onion, preferably a red onion, cut in half lengthwise, then sliced across the grain
Salt to taste
1/4 teaspoon red pepper flakes (optional)
2 garlic cloves, minced, or 1/2 head green garlic, stalks and papery shells removed, sliced
Freshly ground pepper
8 to 12 ounces pasta, any shape
1/2 cup cooking water from the pasta
1 to 2 ounces Parmesan (to taste)

Steps:

  • Bring a large pot of water to a boil, salt generously and add the collard greens. Blanch for 2 minutes, then using a slotted spoon or a skimmer, transfer to a bowl of cold water and drain. Squeeze out excess water and cut crosswise into thin ribbons.
  • Heat the olive oil over medium heat in a large lidded frying pan and add the onion. Cook, stirring often, until it is tender and translucent, about 5 minutes, and add a generous pinch of salt, the red pepper flakes and the garlic. Cook, stirring, until the garlic is fragrant, about 1 minute, and add the collard greens and salt and pepper to taste. When the greens begin to sizzle, turn the heat to low, cover and simmer 5 minutes. Add 1/2 cup water, cover and continue to simmer for another 5 to 10 minutes, stirring often, until the greens are tender. Taste and adjust seasonings.
  • Meanwhile, cook the pasta. Bring the water in the pot back to a boil and add the pasta. Cook al dente, following the timing instructions on the package.
  • Before draining the pasta, ladle 1/2 cup of the cooking water from the pot into the frying pan with the collard greens and onions. Drain the pasta and toss with the greens. Serve, topping each serving with Parmesan to taste.
