1/4 cup butter, cubed
2 large sweet onions, thinly sliced
1/4 teaspoon crushed red pepper flakes
1/8 teaspoon salt
8 garlic cloves, minced
2 cups grape tomatoes, halved
1/4 cup balsamic vinegar
1/4 cup olive oil, divided
1 package (16 ounces) uncooked angel hair pasta
9 bacon strips, cooked and crumbled
2/3 cup shredded Parmesan cheese
1/2 teaspoon coarsely ground pepper
Fresh basil leaves, optional

Steps:

  • In a large skillet over medium-high heat, melt butter. Add the onions, pepper flakes and salt; saute until onions are tender. Stir in garlic. Reduce heat to medium-low; cook, stirring occasionally, for 30-40 minutes or until onions are deep golden brown., Add the tomatoes, vinegar and 2 tablespoons oil to the skillet. Cook pasta according to package directions. Drain pasta; toss with onion mixture., Drizzle with remaining olive oil. Sprinkle with bacon, cheese, and pepper; heat through. Garnish with basil if desired.

3 tablespoons extra-virgin olive oil
2 8-ounce containers sliced mushrooms (white, cremini or a mix)
2 medium or 1 large onion, halved and thinly sliced
1 teaspoon paprika
Kosher salt and freshly ground pepper
12 ounces whole-wheat spaghetti
1/3 cup sour cream
2 teaspoons white wine vinegar
1/2 cup fresh parsley, chopped
1/2 cup fresh dill, chopped
1/2 small bunch chives, thinly sliced

Steps:

  • Heat 1 tablespoon olive oil in a large Dutch oven or wide pot over medium-high heat. Add the mushrooms and cook, undisturbed, until they are lightly browned and they start to soften, about 5 minutes. Stir well, then add the onions, paprika, remaining 2 tablespoons olive oil, 3/4 teaspoon salt and a few grinds of pepper. Cook, stirring occasionally (more frequently toward the end), until the onions are golden and very tender, about 30 minutes, reducing the heat to medium during the last 10 minutes so the onions don't burn.
  • Meanwhile, bring a large pot of well-salted water to a boil. Add the pasta and cook as the label directs for al dente. Reserve 1 1/2 cups cooking water, then drain. Add the pasta, 3/4 cup cooking water, the sour cream and vinegar to the mushroom-onion mixture. Toss until the pasta is well coated and slightly saucy, gradually adding the remaining cooking water as needed.
  • Add about half each of the parsley, dill and chives to the pasta and toss; season with salt and pepper. Divide among bowls and top with the remaining parsley, dill and chives.

Caramelizing sliced onions in a little butter and olive oil makes them become sweet and yielding, almost luscious. 2 Tbsp. extra-virgin olive oil
2 Tbsp. unsalted butter
2 lb. onions (about 3 large), thinly sliced
2 garlic cloves, thinly sliced
1/4 tsp. crushed red pepper flakes (optional)
1 1/2 tsp. kosher salt, plus more
12 oz. linguine or other long pasta
4 oz. Parmesan, finely grated (about 1 cup), divided, plus more for serving
½ cup parsley, finely chopped (optional), plus more for serving
Freshly ground black pepper

Steps:

  • Heat oil and butter in a large heavy pot or Dutch oven over medium until butter is melted. Add onions and garlic and cook, stirring occasionally, until very tender and deeply golden brown, about 30 minutes. (Stop before the onions become dry and shriveled.) Add red pepper flakes (if using) and 1 1/2 tsp. salt. Remove pot from heat.
  • Meanwhile, cook pasta in a large pot of boiling salted water, stirring occasionally, until al dente. Reserve 1 1/2 cups pasta cooking liquid.
  • Add pasta and 1 cup pasta cooking liquid to onion mixture and stir to combine. Add a small handful of cheese and stir until melted. Repeat with remaining cheese, adding more pasta cooking liquid as needed to create a glossy sauce that coats the pasta. Stir in parsley (if using).
  • Divide pasta among bowls. Top with Parmesan, parsley, and a few cranks of pepper.

1 tablespoon olive oil
1 to 2 tablespoons unsalted butter
4 medium onions, peeled and cut into 1/4-inch-thick rings
1 teaspoon sugar
4 cups chicken broth (preferably homemade) or water
Salt and freshly ground pepper
1 pound fettuccine
1 head chicory (curly endive), mustard greens, kale, or arugula, washed, with tough ribs removed and leaves torn into pieces

Steps:

  • Heat oil and 1 tablespoon butter in a large, heavy skillet over medium-high heat. Add onions and sugar and cook, stirring once or twice, until well browned, about 10 minutes. Turn heat to low; continue to cook, stirring occasionally, until very soft, about 10 minutes.
  • Remove half the onions and set aside. Add broth or water to the pan and bring to a boil. Cook over high heat, scraping bottom of pan, for 10 minutes. Season to taste with salt and pepper.
  • Cook pasta in boiling salted water until a little underdone, and drain. Add to broth; simmer for 2 to 3 minutes. Add greens; cook, covered, until wilted, about 1 minute. Stir in additional tablespoon of butter, if desired. Divide among 4 shallow bowls, garnish with reserved onions, and serve.

PASTA WITH BROCCOLI AND CARAMELIZED ONIONS

Of all the dishes in this book, this was probably the favorite when we were testing recipes. Everyone we tried it on loved it. Although it takes a little time to caramelize the onions, it's easy (they pretty much just sit in the pan and cook themselves), and you will not believe how sweet and delicious they end up.

2 onions
2 tablespoons vegetable oil
1 bunch broccoli
1 pound uncooked salad macaroni or other small pasta
1/4 cup sliced almonds
1 tablespoon balsamic vinegar
Salt and pepper

Steps:

  • Peel the onions and cut into thin slices. Place the oil and onion in a large skillet and cook over medium heat for 20 to 25 minutes, or until the onions are golden brown. Remove from the heat and set aside.
  • While the onions are cooking, cut the florets from the broccoli and discard the stems. Bring a large pot of salted water to a boil and add the pasta. Cook over medium-high heat, stirring occasionally, for 8 minutes, or until al dente. After the pasta has been cooking for 4 minutes, add the broccoli florets to the pasta water for the remainder of the cooking time. Drain the pasta and broccoli in the colander.
  • Add the drained pasta and broccoli, almonds, and balsamic vinegar to the pan of onions and mix well. Season with salt and pepper and serve immediately.
  • Balsamic vinegar is made from grapes that have been cooked down to a syrup and then aged. The aging time-anywhere between three and 150 years-is what determines the price. The three-year-old stuff works fine for a college budget (and frankly, we may never in our lives be able to afford the oldest balsamic-it goes for hundreds of dollars an ounce). Cheap but decent balsamic vinegar is nice to have in your pantry-it makes very nice salad dressing when mixed with oil and salt and pepper. Just check the ingredients list to make sure they haven't added caramel or brown sugar to sweeten up an inferior product.

Here's a simple supper to make in the chill of fall or winter, when the sweetness of the onions and the richness of the cheese is comforting.

Yield serves 4 to 6

1 pound chunky pasta
1 tablespoon olive oil
6 cups chopped onions
1 teaspoon salt
1/4 teaspoon black pepper
1/2 cup dry white wine, vegetable broth, or water
4 ounces crumbled blue cheese (1 cup)

Steps:

  • Bring a large covered pot of salted water to a boil. Add the pasta and cook until al dente.
  • Meanwhile, in a skillet on medium heat, warm the oil and cook the onions with the salt and pepper until soft, golden brown, and lightly caramelized. (The larger your skillet, the faster the onions will caramelize. In a 12- or 14-inch skillet, the process may take less than 10 minutes. In a smaller skillet in which the onions are crowded, it could take 20 minutes.) Add the wine, broth, or water and continue to cook on low heat, stirring occasionally, until the pasta is done. If the onions begin to stick, add some pasta-cooking water.
  • When the pasta is done, drain it, reserving a cup of the hot water. Place the pasta in a serving bowl, add the onions (swirl some of the reserved water around in the skillet to get out every tasty bit) and the blue cheese, and toss together to melt the cheese and coat the pasta. Add more of the pasta-cooking water if you'd like it saucier. Serve hot.
  • A salad with slightly bitter greens goes well with this sweet, rich pasta. Or toss endive with Toasted Pecan Vinaigrette (page 222). Peach Brown Betty (page 268) is a sweet ending.

2 cups sheep's-milk yogurt
5 tablespoons extra-virgin olive oil
6 cups coarsely chopped onions
Sea salt
1 pound tagliatelle
1 cup coarsely grated kefalotyri cheese, or pecorino Romano

Steps:

  • Line a colander with cheesecloth and set over a bowl or in the sink. Add the yogurt and let drain for 2 hours.
  • Heat the olive oil in a large nonstick skillet over medium-high heat and add the onions. Reduce the heat to medium low and cook, stirring frequently, until the onions are soft and golden brown, 20 to 30 minutes.
  • Meanwhile, fill a large pot with water and bring to a boil. As the water heats, add enough salt so that you can taste it. Add the pasta and cook until soft, not al dente. Combine the drained yogurt with 1/2 cup cooking water and mix well. Drain the pasta and toss with the yogurt mixture.
  • Divide the pasta among 4 bowls. Sprinkle generously with cheese and top with caramelized onions and their juices.

2 cups roughly chopped fresh kale, stems removed
1/4 cup plus 2 tablespoons grated Parmesan cheese, divided
1/4 cup loosely packed basil leaves
1/4 cup plus 2 tablespoons olive oil, divided
1/2 teaspoon salt, divided
12 ounces uncooked whole wheat linguine
1 large sweet onion, thinly sliced
3 garlic cloves, minced
1 tablespoon honey
3 large tomatoes, chopped

Steps:

  • Pulse hazelnuts in food processor until finely ground. Add kale, 1/4 cup Parmesan cheese, basil, 1/4 cup olive oil and 1/4 teaspoon salt; pulse until smooth and creamy, adding oil if pesto seems dry., In a large stockpot, cook linguine according to package directions. Meanwhile, in a large skillet, heat remaining 2 tablespoons olive oil over medium heat. Add onion; cook and stir until tender, about 5 minutes. Reduce heat to low; add garlic and honey.
