4 boneless, skinless salmon fillets, seasoned with salt and pepper
3 tbsp balsamic vinegar (45 mL)
1 tbsp honey or maple syrup (15 mL)
2 tbsp finely chopped fresh basil leaves (30 mL)
1 tbsp Bertolli Olive Oil (15 mL)
2 cloves garlic, minced
1 tsp Dijon mustard (5 mL)
1/2 tsp finely grated fresh lemon zest (2 mL)
1 pkg Knorr Sides Plus Alfredo Pasta Primavera, prepared according to package directions

Steps:

  • Preheat the oven to 400° F (200° C). Line a baking sheet with foil and grease the foil lightly with oil. Place the fish, skin-side-down, on the prepared baking sheet. Whisk together the vinegar, honey, basil, olive oil, garlic and Dijon mustard. Brush half of the mixture over the salmon. Bake the fish, on the middle rack, basting with the remaining glaze, for 10 minutes. Broil for 1 to 2 minutes or until salmon is browned and flakes easily when tested with a fork. Serve with the prepared Alfredo Pasta Primavera.

This is an easy and fast dinner that has lots of flavor! I like to use about 1 cup frozen corn kernels, cooked and 1 cup ripe tomatoes, chopped, which I sprinkle on top along with the fresh parsley, if using. If I use the three cups I use whatever else I have on hand. This makes a very attractive dish to serve. Please note the prep time is for the sauce. It would vary depending on the veggies you were using.

8 ounces cream cheese
1 cup grated parmesan cheese (not the kind in the can)
1/2 cup butter
1/2 cup milk
2 -3 cups chopped vegetables
9 ounces fettuccine
parsley, use fresh to taste or 1 teaspoon dried parsley, about

Steps:

  • Cook cream cheese, parmesan cheese, butter and milk over medium-low heat, until melted and well blended, stirring occasionally.
  • If you are using raw veggies cook in the microwave while sauce is cooking.
  • Boil pasta while sauce is cooking.
  • Drain pasta and vegetables.
  • Toss pasta and vegetables lightly with the sauce.
  • If using dried parsley toss with the pasta and sauce.
  • If using fresh parsley sprinkle over the top after it is all tossed.

8 oz tri-color rotini
1/3 cup heavy cream
1/3 cup mascarpone cheese
1/2 cup parmesan cheese, grated
salt and pepper
1-2 Tbsp parsley, chopped
1-2 cloves garlic, minced
4 cups of mixed vegetables -
carrots, julienned
broccoli florets
cauliflower florets
red bell pepper, chopped
tomato, seeded and chopped
frozen peas, thawed and drained
yellow or green squash, sliced in 1/4" coins
green beans, cut into 2" pieces

Steps:

  • 1. Prepare pasta according to package instructions. Drain and set aside. 2. Meanwhile, steam vegetables until crisp-tender (approx. same amount as pasta). Set aside. 3. In a small bowl, whisk together cream and mascarpone. Stir constantly while heating over low heat. When hot, stir in parmesan cheese until melted. Season. 4. After pasta is done, heat the oil in the pasta pot over medium heat. Add garlic and cook until fragrant. Return vegetables and pasta to pot and gently combine until coated with garlic oil. Pour alfredo sauce over the top and mix gently. 5. Transfer pasta to serving bowl. Sprinkle with parsley and additional parmesan cheese.

Steps:

  • Cook pasta in large saucepan of boiling water as directed on package, adding vegetables to the water for the last 3 min.

Every recipe I looked at required cream cheese and I just didn't want to use that (not to mention I just didn't have any on...

3 Tbsp all purpose flour
3 Tbsp butter
1 1/2 - 2 c milk
1 c each broccoli florets, bell pepper strips, fresh chopped spinach, diced carrots, and quartered -sliced zucchini
1 large onion diced
2 c grated mozzarella
1 c grated parmesean romano
1 Tbsp each dried oregano and thyme
1 c chopped parsley
2 Tbsp garlic powder
salt, and white pepper to taste

Steps:

  • 1. In 2 tblsp of olive oil, saute all vegetables over low heat till just tender. then set aside
  • 2. In large saucepan melt butter then add flour to make a roux. Slowly add milk while stirring constantly till mixture is the consistancy of a medium to thin gravy. Then add the cheeses and all the herbs and seasonings mixing well till cheeses are melted. *Note* if the mixture is too thin, add more cheese, if it's too thick, add more milk.
  • 3. While sauce is simmering, add the vegetable and simmer on low for about 20 minutes. Serve over linguini , bowties, penne or whatever type of pasta you like best.
  • 4. Variations: can add cooked cubed skinless boneless chicken breasts, or cooked shrimp if you want protein.
