This tasty pasta con broccoli recipe is from one of the most famous Italian restaurants in St. Louis: Rich and Charlie's! The secret to this dish is in the perfectly creamy sauce.

1 lb pasta, preferably shell noodles
1 1/2 cups broccoli, chopped
6 T butter
3 T all-purpose flour
3 cloves garlic, chopped small
8 oz tomato sauce
1 cup milk
1 cup heavy whipping cream
1 tsp salt
1/4 tsp pepper
1/2 tsp oregano
1/4-1/2 tsp red pepper flakes, depending on your preference
2 cups mushrooms, chopped small
1/2 cup shredded parmesan, plus more for top

Steps:

  • Steam your broccoli and cook noodles according to package directions.
  • In a medium to large pot, melt the butter over medium heat and add the garlic. After the garlic has cooked a minute or so add the flour and mix to make your roux.
  • Once it's combined and looks like a paste, slowly add your tomato sauce, milk, and cream. Whisk until combined and no clumps of flour remain.
  • Add in the salt, pepper, oregano and red pepper flakes. Red pepper flakes are extremely spicy, so only add to the level you want.
  • Bring the sauce to a simmer and continue whisking until it thickens.
  • Add in the mushrooms and turn down the heat to medium-low. Let simmer for 5-6 minutes, cooking the mushrooms.
  • Add in the parmesan and stir until melted.
  • Add the noodles and broccoli to your sauce and mix.
  • Serve warm topped with a pinch or two of shredded parmesan.

This is the acutal recipe (not a copycat) as posted on their website and as printed in the St. Louis Post Dispatch. THE REAL DEAL HERE MY FRIENDS (there are others posted on this website, but none of them are this exact recipe). This is so yummy and is a St. Louis tradition. This recipe serves 2, so feel free to double or triple it to feed your family. Serve as a main dish (as they do) with a Pasta House Salad on the side! It also makes a nice side dish to grilled chicken.

4 ounces uncooked large shell pasta
1 cup cream
2 tablespoons butter
1/2 teaspoon minced garlic
2 tablespoons tomato sauce
1/2 cup chopped broccoli
salt and pepper
1/3 cup thinly sliced fresh button mushroom
1/4 cup grated parmesan cheese

Steps:

  • Cook pasta until half done (about 4 minutes); drain. Return pasta to the pot.
  • Add cream, butter, garlic, tomato sauce, broccoli, salt and pepper. Bring to a hard boil.
  • When noodles are fully cooked and sauce is starting to thicken, add mushrooms and stir to combine.
  • Remove from the heat; add cheese.
  • Toss and serve.

My husband never liked pasta until he tasted pasta con broccoli from a restaurant in St. Louis. I came up with this quick version at home. Great food without the work.

1 box penne or 1 box bow tie pasta
1 jar alfredo sauce (regular or light, can use mix)
2 -3 teaspoons tomato sauce (or to taste)
1/2 lb sliced mushroom (optional)
2 bunches broccoli (or half of bag of florets)
1 -2 clove minced garlic
salt and pepper

Steps:

  • Cook pasta as directed, BUT add broccoli the last few minutes of cooking, just until slightly tender and bright green in color.
  • Meanwhile saute garlic and mushrooms,then add the sauces and heat.
  • After pasta is drained toss it all together and serve.
  • We like a little parmesan cheese on top.

4 ounces dry fettuccine pasta
1 cup heavy whipping cream
2 tablespoons butter
1 ounce tomato sauce
½ teaspoon minced garlic
½ cup broccoli florets
¼ cup fresh sliced mushrooms
salt to taste
ground black pepper to taste
2 tablespoons grated Parmesan cheese

Steps:

  • Cook fettuccini in a large pot of boiling salted water until "almost" done. Drain, and return noodles to pot.
  • Stir cream, butter or margarine, tomato sauce, garlic, and broccoli into the noodles. Simmer until noodles are done. Stir in sliced mushrooms, and remove from heat. Sprinkle with Parmesan cheese, and season with salt and pepper to taste.

1 (10 1/2 ounce) can cream of chicken soup
2 (10 1/2 ounce) cans cream of broccoli soup
1 quart half-and-half
1 cup butter
1 -2 tablespoon garlic
1/2 cup parmesan cheese
1 (16 ounce) bag frozen broccoli (2 can be used)
1 lb shell noodles

Steps:

  • In a large pot place all the soups, half and half, butter, garlic and parmesan cheese. Mix well let heat up over medium heat a until warm. Mix in frozen broccoli and simmer until broccoli is tendered.
