When my mother would make this casserole she would always tell us kids it was time to Cha-Cha-Cha so thats what we called it. It has become a tradition for my family now and they love it just like I did when I was a kid!

1 tablespoon(s) vegetable oil
1 pound(s) ground beef, turkey, or chicken
1 cup(s) chopped onion
3 clove(s) garlic, minced
1 tablespoon(s) chili powder
1 teaspoon(s) salt
1 teaspoon(s) ground cumin
1 - 14oz. can(s) diced tomatoes with green chiles
1 - 15oz. can(s) corn, drained
1 - 16oz. can(s) refried beans
1 - 4oz. can(s) diced green chiles, drained
2 cup(s) shredded mexican cheese blend
2 cup(s) crushed tortilla chips
1/2 cup(s) sliced green onions (optional)

Steps:

  • Preheat oven to 375 degrees. Spray an 8-inch square baking dish with nonstick cooking spray.
  • Heat oil in large skillet over medium-high heat. Add meat, onion, garlic, chili powder, salt and cumin; cook, stirring to break up meat. Stir in tomatoes, cook about 10 minutes or until liquid evaporates.
  • Spoon meat mixture into prepared baking dish, top with corn, beans, and chiles. Sprinkle with cheese and crushed chips. Bake 30 minutes and let stand 5 minutes before serving. Garnish with green onions, if desired.

This recipe has just evolved over the years. It's more of stew than a chili in my opinion. Everyone always loves it. You can make it as hot or as mild as you family likes. We usually have crackers or cornbread with it.

1 lb ground beef or 1 lb ground pork
1 medium onion, chopped
1 stalk celery, chopped
2 poblano peppers, seeded and chopped
3 -5 garlic cloves, minced
1 (1 1/4 ounce) package of mccormicks chili seasoning mix
1 -2 tablespoon chili powder
1 tablespoon ground cumin
1 (14 ounce) can chicken stock
1 (15 ounce) can black beans, rinsed (optional)
1 (11 ounce) can corn, reserve liquid
1 (14 1/2 ounce) can tomatoes with juice
1 -5 chipotle chile in adobo, chopped (optional)
green onion, chopped
shredded cheese
sour cream

Steps:

  • Cook meat, add onion, celery and poblano about halfway through.
  • You may have to a dd a little oil if it starts to stick.
  • Add salt and pepper to meat so it will not be bland, we are building flavors here.
  • Add garlic near the end, be careful not to burn as it will be bitter.
  • Sprinkle McCormicks (packaged chili mix) and chili powder over meat and veggies and stir well.
  • Cook over medium heat for a minute or so.
  • Pour in chicken stock, canned tomatoes with juice and add chipoltles (this is how you control the heat), if using.
  • Cook down for 15 or 20 minutes.
  • Add rinsed beans and corn (with juice).
  • To make this a soup: Add 2 more cans of stock.
  • Top with green onion, cheese and sour cream.

sunflower oil, for frying
1 onion, finely chopped
1 red bell pepper, seeded and diced
2 boneless skinless chicken thighs, roughly chopped
2 green chilies, seeded and thinly sliced
2 garlic cloves, finely chopped
2 tomatoes, roughly chopped
1/2 cup frozen corn, thawed
4 tablespoons taco sauce
4 green onions, finely chopped
4 large flour tortillas
shredded lettuce
sour cream
ready-made guacamole

Steps:

  • Heat the sunflower oil in a large pan and stir-fry the onion, bell pepper, and chicken thighs over a high heat for 3-4 minutes until well browned. Stir in the chiles, garlic, tomatoes, and corn and cook for another 2-3 minutes until the chicken is cooked through.
  • Stir in the taco sauce and green onions, and set aside to cool a little.
  • Warm one of the tortillas in a hot, dry frying pan until soft and flexible. Spoon a quarter of the cooled chicken mixture into the center of a tortilla and fold over the edges to form a neat package; pin in place with wooden toothpicks and repeat with the remaining tortillas.
  • Heat 1/2 inch vegetable oil in a large frying pan and cook chimichangas for 2-3 minutes on each side until crisp and golden brown. Drain on paper towels and serve hot with shredded lettuce, sour cream and guacamole.

Delicious white bean chili. Cha Cha says: 'It's kinda spicy, so watch out!' Substitute mild green chiles for the jalapenos if you're scared! Use more chicken and cheese as desired.

1 tablespoon vegetable oil
1 onion, chopped
3 cloves garlic, crushed
1 (4 ounce) can diced jalapeno peppers
1 (4 ounce) can chopped green chile peppers
2 teaspoons ground cumin
1 teaspoon dried oregano
1 teaspoon ground cayenne pepper
2 (14.5 ounce) cans chicken broth
3 cups chopped cooked chicken breast
3 (15 ounce) cans white beans
1 cup shredded Monterey Jack cheese

Steps:

  • Heat the oil in a large saucepan over medium-low heat. Slowly cook and stir the onion until tender. Mix in the garlic, jalapeno, green chile peppers, cumin, oregano and cayenne. Continue to cook and stir the mixture until tender, about 3 minutes. Mix in the chicken broth, chicken and white beans. Simmer 15 minutes, stirring occasionally.
  • Remove the mixture from heat. Slowly stir in the cheese until melted. Serve warm.
