PASSOVER CHOCO-NUT MANDEL BREAD
This recipe makes a buttery, rich mandel bread studded with chocolate chips and nuts. You can make it even more elegant by dipping each end into melted semisweet chocolate after being baked and cooled.

Steps:
- Preheat the oven to 350 degrees F (175 degrees C). Grease baking sheets or line with parchment paper.
- In a large bowl, beat sugar and butter until light and fluffy. Mix in the eggs one at a time. Sift together the matzo cake meal, salt and potato starch. Stir into the batter just until blended. Gently mix in the walnuts and chocolate chips. Chill the dough briefly so it will be easy to handle.
- Divide the dough into halves and form each half into a 5 inch wide loaf that is about 1 inch thick. Sprinkle cinnamon sugar over the top.
- Bake for 45 minutes in the preheated oven. Cool, then slice into 1 inch slices to serve.

PASSOVER SOFT-BAKED CHOCOLATE AND WHITE CHOCOLATE CHIP MANDEL BREAD
Steps:
- 1. Sift potato starch, salt, and cake meal together. Set aside. 2. In separate bowl, cream 2 cups of sugar and margarine. 3. Add eggs 1 at a time and beat after each additional egg. 4. Add egg mixture to sifted dry ingredients and mix well. 5. Stir in chocolate chips. 6. Form into loaves that are 3 inches wide and 1 inch thick and about the length of a cookie pan. 7. Wrap in plastic and refrigerate until chilled - about 1 hour. 8. Cover cookie sheet with parchment paper. Remove plastic from loaf and place loaf on parchment paper. Sprinkle with cinnamon and sugar. 9. Bake at 350 for about 45 minutes or until golden brown. 10. Slice into 1-inch pieces and serve.
PASSOVER BISCOTTI (AKA MOCK MANDEL BREAD)
Another great recipe from my SIL. Very forgiving--can use cake meal, matzo meal, a combo. Stores well.

Steps:
- Cream together sugar and margarine.
- Add eggs, one at a time, beating throughout.
- Mix together cake meal and potato starch (or don't bother), and add to wet stuff. Mix well.
- Mix in nuts and chips.
- Form 2 loaves (about 3" x 16") on cookie sheet (I line mine with parchment paper for ease of removal).
- Sprinkle with cinnamon sugar.
- Bake at 350F for 35-40 minutes.
- Remove from oven and slice horizontally, cutting about 3/4 of the way through the loaf.
- Return to oven for 5 minutes.

- beat eggs, sugar and oil together by hand. add cake meal, potato starch and chocolate chips and mix. then form loaves by hand. I used three and bake at 350 for 20 minutes. remove from oven, slice and sprinkle with sugar/cinnamon mixture. bake an additional 3 minutes. turn over add more cinnamon/sugar and bake an additional 3 minutes.

- Pre-heat the oven to 350 degrees.Using a stand or hand mixer, cream together the eggs and sugar until lightened in color. Beat in the butter and almond extract.In a separate bowl, sift together the salt, baking powder and all purpose flour (or the combination of potato starch and cake meal).Fold the dry ingredients into the wet, stir in the sliced almonds, and turn out onto a baking sheet lined with parchment paper.
- Note that the dough will be very sticky and you'll need additional flour (or cake meal) to shape it into a loaf, approximately 3" high.Bake for 45 minutes and slice, with a serrated knife, while still warm.
