PASSIONFRUIT MOUSSE

1 cup heavy cream
1/2 cup sweetened condensed milk
1/2 cup frozen passionfruit puree, thawed
1/2 teaspoon vanilla extract
1 fresh passionfruit, optional

Steps:

  • Beat the heavy cream in a large bowl with an electric mixer at medium-high speed until it holds stiff peaks. Add the condensed milk, passionfruit puree and vanilla and beat until combined. Spoon the mousse into two 10- to 12-ounce bowls. Cover the bowls with plastic wrap and refrigerate until the mousse is firm, at least 2 hours. If you have access to a fresh passionfruit, spoon a little of the fresh fruit on top. The mousse is also delicious with some granola sprinkled on top.

Passion-Fruit Nieve image

_Nieve_, or "snow," is Mexico's sorbet, sold from carts throughout the country. Ours is a quick version, made with passion-fruit nectar instead of puréed and strained fruit. For the best flavor, look for a nectar that contains just water, passion-fruit juice, and sugar.

Yield Makes about 3 cups

Number Of Ingredients 4

3 cups passion-fruit nectar (24 fl oz), chilled
2/3 cup light corn syrup
2 tablespoons fresh lime juice
an ice cream maker

Steps:

  • Stir together all ingredients and freeze in ice cream maker. Transfer sorbet to an airtight container and put in freezer to harden, at least 1 hour.
