PICNIC PARTY POTATO SALAD

I got this recipe from my Mother-in-law. This is by far the best potato salad I've ever had! I believe she got it from a very good family friend. This is always a staple at any summertime gathering. It goes fast! Times are approximate.

Number Of Ingredients 9

5 lbs red potatoes
1 cup sliced green onion
1/2 cup Italian dressing
1 cup mayonnaise
1/4 cup mustard
3 teaspoons salt
2 cups sliced celery
9 hard-boiled eggs, peeled and diced (4 in salad, rest for garnish on top)
1/2 cup dill pickle relish

Steps:

  • Dice potatoes. Cook until tender; drain.
  • Put into large bowl.
  • Add onions and Italian dressing; toss to coat.
  • Cover and chill at least 1 hour.
  • Combine mayonnaise, mustard and salt in small bowl; pour over potatoes; toss to coat.
  • Add celery, eggs and relish; toss lightly.
  • Slice remaining eggs.
  • Garnish top of salad.
  • Sprinkle with paprika.

Number Of Ingredients 8

10 pounds potatoes, peeled and cubed
3 cups mayonnaise
3 cups sweet pickle relish
2 cups chopped onions
1/2 cup prepared mustard
1 tablespoon salt
1 teaspoon pepper
15 hard-boiled large eggs, chopped

Steps:

  • Cook potatoes in boiling water until tender; drain. Combine mayonnaise, relish, onion, mustard, salt and pepper; mix well. Add eggs and warm potatoes; toss gently. Cover and refrigerate.

When I first met my husband, his mother was in charge of making the potato salad for family gatherings. Well, one year she wasn't able to make it and asked me to. I made this recipe up "on the fly" and everyone loved it ... more than my mother-in-laws ...LOL. I have made this many times and have even made it for large parties ......

5 lb red potatoes
1 bunch green onions finely chopped
4 celery ribs finely chopped
1 lb bacon, cooked & crumbled
1 qt mayonnaise
2 Tbsp dill pickle relish
4 hard boiled eggs chopped
salt and pepper to taste

Steps:

  • 1. Boil potatoes in salted water with skins on until fork tender. Let cool until easily handled for peeling. Peel and rough chop into a large mixing bowl.
  • 2. Combine all ingredients in mixing bowl. Salad should be a little "wet" as potatoes will absorb some of the mayonaise
  • 3. Chill in refrigerator for at least 3 hours before serving. The longer is chills the better it is

I mix the dressing up the day before I make the salad This is my most requested salad for family gatherings. One of my grand daughters, will eat this for breakfast the next day.

Number Of Ingredients 24

4 medium white baking potatoes
4 medium or 2 large yukon gold potatoes
4 red potatoes
4 small or 2 med/large sweet potatoes
1 large spanish onion chopped fine
1 small red onion chopped fine
2 tablespoons sweet pickle relish or to taste "drained very well"
1 tablespoon dill pickle relish or to taste "drained very well"
3 tablespoons bread and butter pickles chopped fin or e to taste "drained very well"
1 lb. bacon chopped & fried till crisp " reserving grease for another use
or 3 stalks celery chopped fine
6 - 8 large hard boiled egg's chopped fine
dressing:
these amount are all estimated, if you like it wet add more of these items if you like it more or less sweet adjust the sugar
¾ cup sour cream
¾ cup mayonnaise
¾ cup plain yogurt " drained "
¾ cup cream cheese
¾ cup goat cheese
dry mustard to taste " about 2 teaspoons "
1/8 teaspoon celery seeds
¼ teaspoon caraway seeds
sugar to taste "start with 1 tablespoon" and then go from there
paprika for top of salad

Steps:

  • 1. Bake "not boil" all potatoes in a 400 degrees oven, till tender, cool and peel, cut into bite size pieces
  • 2. Hard boil eggs and cut into small pieces
  • 3. Cut bacon and fry till crisp
  • 4. Add all other ingredients and toss with dressing...add dressing a little at a time till you get as much dressing on it that will suite your family.
  • 5. Chill till ready to eat!
