This recipe is from "Sea Choice" oysters. It is an 8 oz container holding 6 large oysters. Number may vary according to size. The original recipe said 1 tsp olive oil in each muffin tin - I just sprayed lightly with Canola oil. I say 2 servings but if you have someone with a large appetite you may have to double the recipe. You may serve this as a first course then it would serve 3-6

8 ounces fresh oysters
6 tablespoons medium salsa
6 teaspoons feta cheese, crumbled
6 teaspoons parmesan cheese, grated

Steps:

  • Spray a 6 compartment muffin tin with pam or oil.
  • Place one oyster in each cup.
  • Cover with a tbsp of salsa -Use hot if you want more heat.
  • Sprinkle each first with a tsp of Feta then with the parmesan.
  • Bake in preheated 350 F oven for 20 minutes or until they are golden.

Ingredients
1 cup whole wheat orzo
1 1/2 cups fat-free reduced-sodium chicken broth
1/4 cup dry white wine (or 3 tablespoons chicken broth and 1 tablespoon lemon juice)
2 tablespoons freshly grated Parmesan
1/8 teaspoon freshly ground black pepper
4 6-ounce halibut fillets
4 teaspoons olive oil
1/2 teaspoon salt
1 pint grape tomatoes, quartered
8 large pitted Kalamata olives, slivered
1 tablespoon drained capers
2 garlic cloves, minced
1/8 teaspoon crushed red pepper
2 tablespoons slivered fresh basil

Steps:

  • Directions 1. In a medium saucepan, combine the orzo, broth, and wine. Bring to a boil and stir; reduce heat to low. Cover and simmer until orzo is just tender, about 12 minutes. Stir in the Parmesan and black pepper. Cover and set aside. 2. While orzo is cooking, heat a grill pan over medium-high heat. Brush the halibut with 2 teaspoons over medium-high heat. Brush the halibut with 2 teaspoons of the olive oil and season with 1/4 teaspoon of the salt. Grill until just cooked through, 3 to 4 minutes per side. Transfer to a platter. 3. Combine the tomatoes, olives, and capers in a medium bowl. Warm the remaining olive oil in a small skillet over medium heat. Add the garlic and red pepper; saute until just fragrant, about 30 seconds. Stir in remaining salt. Toss garlic mixture with tomato mixture. Add basil and toss well.

1 -3 large chopped garlic clove (or to taste)
1 teaspoon fresh ground black pepper
2 tablespoons chopped fresh basil (fresh)
2 tablespoons chopped scallions
1 1/2 teaspoons chili pepper flakes (optional)
4 ounces extra virgin olive oil
1 lb parmesan cheese, broken into 1-inch chunks (Parmigiano-Reggiano)

Steps:

  • Place all of the ingredients in the bowl of a food processor. Pulse for about 10 seconds, to break the cheese into small granules. (Use a rubber spatula to scrape down and recombine between every couple of pulses.).
  • Let sit under refrigeration over night for best flavor.
  • Bring to room temperature before serving.
  • Transfer the salsa to a sealed container and refrigerate for up to a Month. If it lasts that long!

This recipe is courtesy of Michael Chiarello on the Food Network. This is simple to make and yummy to eat. It's great on crostini and bruschetta and I'm sure on or in many other foods! Note: this dip is a little oily and when it sits, has oil that settles on the top--it's supposed to do that.

1/2 lb parmesan cheese, not too dry
1/2 lb asiago cheese, not too dry
2 teaspoons minced garlic
2 teaspoons dried oregano
1 teaspoon red pepper flakes
2 tablespoons chopped green onions
1 1/2 cups extra virgin olive oil
1 teaspoon fresh ground black pepper

Steps:

  • Remove any rind from the cheeses and chop the cheeses into rough 1-inch chunks.
  • Place the cheese in a food processor with the garlic, oregano, and red pepper flakes and pulse until reduced to the size of fine pea gravel.
  • Stir in the green onion, olive oil and black pepper and pulse again.
  • Cover and let stand at room temperature for at least 4 hours before using.
  • **Cook time does not include letting stand at room temperature for 4 hours before serving.

½ cup chopped pitted kalamata olives
¼ cup finely chopped onion
1 Tbsp capers
¼ cup olive oil, divided
2 Tbsp red wine vinegar
¾ tsp pepper, divided
1 clove garlic, minced
3 (8-oz) boneless, skinless chicken breasts
½ tsp salt
1¼ cups fat-free, reduced-sodium chicken broth
½ tsp salt
1½ cups uncooked polenta
½ cup freshly grated Parmesan cheese

Steps:

  •  Preheat grill to medium-high heat. Combine tomatoes, olives, onion, capers, 3 Tbsp oil, vinegar, ¼ tsp pepper and garlic in a large bowl. Brush chicken with remaining 1 Tbsp oil, and sprinkle with salt and ½ tsp pepper. Grill chicken, covered with grill lid, 5 minutes per side or until done. Cut chicken into 6 servingsize pieces, and top evenly with tomato mixture. Note: Cook chicken in a grill pan coated with cooking spray, if desired. ---------------------------------------------------------------------------------     Bring 3¼ cups water, broth and salt to a boil in a large saucepan. 4 boneless skinless chicken breasts
1 dash chili powder
1 dash paprika
1 dash garlic powder
3/4 cup salsa
3 tablespoons parmesan cheese
3/4 cup grated mozzarella cheese

Steps:

  • Heat oil in frying pan over medium heat.
  • Sprinkle spices on both sides of chicken and place in frying pan.
  • Saute chicken 2-3 minutes per side.

1 (10 ounce) can cream of mushroom soup
2 teaspoons adobo seasoning, spice (or more)

Steps:

  • Preheat the oven to 375°F.
  • Rinse the breasts and dry them, place in an oven proof dish.
  • Mix together the salsa, soup & adobo, pour over the breasts.
  • Bake uncovered for 30 minutes,.

1 cup grated Parmigiano-Reggiano
1 teaspoon paprika
1 teaspoon freshly black pepper, plus more for seasoning
1/2 cup chopped pancetta
1 cup diced Roma tomatoes
2 tablespoons julienne fresh basil leaves

2 tablespoons extra-virgin olive oil

Steps:

  • Preheat oven to 350 degrees F.
  • In a large bowl combine Parmesan, paprika, and freshly ground black pepper.
  • On a parchment lined cookie sheet, add the Parmesan mixture in 2 tablespoon dots, 2 inches apart.
  • Place in preheated oven and cook until cheese melts.

1/3 cup KRAFT Grated Parmesan Cheese, divided
1/4 cup KRAFT Real Mayo Mayonnaise
1/2 tsp. chili powder
6 small boneless skinless chicken breasts (1-1/2 lb.), pounded to 1/4-inch thickness
1 Tbsp. olive oil
1/2 cup chopped avocados
1/2 cup tomatillo salsa
1/2 cup chopped tomatoes

Steps:

  • Combine bread crumbs and 1/4 cup cheese in shallow dish; set aside. Mix mayo and chili powder; spread onto both sides of chicken breasts. Coat evenly with bread crumb mixture.

5 ounce wedge Asiago cheese
1 teaspoons minced garlic
2 teaspoons fresh oregano
½ teaspoon red pepper flakes
2 tablespoons chopped green onion
1- 1½ cups extra-virgin olive oil
1 teaspoon freshly ground black pepper

Steps:

  • Remove rind from the cheeses and chop the cheeses into 1 inch cubes. Place the cheese is the bowl of a food processor. Add the garlic, oregano, and red pepper flakes.
