1 (17 ounce) package puff pastry sheets, frozen (thawed)
1 cup parmesan cheese, freshly grated
1 teaspoon dried basil
1/4 teaspoon garlic powder
1/4 cup butter, melted

Steps:

  • Preheat oven to 400 degrees F.
  • Unfold pastry sheets on a lightly floured surface.
  • Cut each sheet into 13 strips, (about 3/4 of an inch by 10-inches each).
  • Combine cheese, basil, and garlic in a long shallow pan or dish.
  • Brush melted butter on pastry sticks.
  • Roll pastry in cheese mixture to coat each side evenly.
  • Gently twist the pastry sticks, and place on a lightly greased baking sheet.
  • Bake for 12 minutes.
  • Remove to wire racks to cool.
  • Serve with your favorite soups, salad, on the side of any meal or as an appetizer with dipping sauces.

Simple, yet elegant, these crisp yet airy straws can be made days ahead of time, making this an ideal party snack.

Number Of Ingredients 7

All-purpose flour, for surface
1 package (14 ounces) puff pastry, preferably Dufour
1 large egg, lightly beaten
1 ounce Parmesan cheese, grated (1/3 cup)
1/4 teaspoon coarse salt
1/2 teaspoon poppy seeds
1/2 teaspoon cayenne pepper

Steps:

  • Preheat oven to 425 degrees. Line 2 baking sheets with parchment.
  • On a lightly floured surface with a lightly floured rolling pin, roll puff pastry into a 12-by-16-inch rectangle. With the long side facing you, lightly brush bottom half of rectangle with some of the beaten egg. Sprinkle 1/4 cup Parmesan and the salt on top half. Fold bottom half over top half. Gently roll dough to seal.
  • Cut rectangle lengthwise into thirds. (You should have three 2-by-16-inch strips.) Sprinkle remaining 1 tablespoon Parmesan on 1 strip, poppy seeds on another, and cayenne on remaining strip. Cut each strip lengthwise into eight 1/4-by-16-inch strips.
  • Transfer strips to baking sheets, spacing 1 inch apart. Working with 1 strip at a time, hold each end with your fingers, and carefully twist strip in opposite directions, forming a spiral. Press ends of strips against parchment to prevent unraveling. Freeze or refrigerate until strips are very firm and cold, about 15 minutes.
  • Bake 1 sheet at a time, rotating halfway through, until straws are golden brown and cooked through, 12 to 14 minutes. Transfer straws to wire racks, and let cool.

PROSCIUTTO-PARMESAN GRISSINI (PUFF PASTRY BREADSTICKS)

Found in a supermarket booklet, it's easy to prepare and impressive enough for guests. Originally from the Emilia-Romagna region in Northern Italy, these long, thin breadstick appetizers are another reason to keep frozen puff pastry on hand. The 60 minutes prep time includes thawing of frozen pastry dough and cooling time once baked. Can be made ahead and frozen.

1 sheet frozen puff pastry, thawed
1 egg, slightly beaten
1/4 cup parmigiano-reggiano cheese (Ferrari recommended)
4 slices prosciutto (Prosciutto de Parma recommended)

Steps:

  • Thaw frozen puff pastry by bringing to room temperature, covered in plastic wrap, for 30 minutes. Preheat oven to 400 and line two baking sheets with parchment paper.
  • Sprinkle a large cutting surface with flour. Place puff pastry sheet on top of prepared surface and carefully unfold, making a 9-10 inch square. Brush with beaten egg. Top with cheese and press into the pastry dough. Cut the square into 16 strips Place strips 1/2 inch apart and bake for 10 minutes, grissini should be lightly golden. Cool for 15 minutes.
  • Cut each slice of prosciutto into four thin strips and wrap one diagonally around each breadstick. Serve immediately.
  • FREEZING: Grissini can be frozen after the 15-minute cooling period. When ready to serve bake at 350 for 6-8 minutes if frozen and 2-3 minutes if thawed.

1 (17.5 ounce) package frozen puff pastry, thawed
¼ cup freshly grated Parmesan

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with parchment paper.
  • Dust a flat work surface lightly with flour. Unroll both puff pastry sheets and roll each one out to a rectangle of the same size. Brush one puff pastry sheet with a little water and sprinkle with 1/2 of the Parmesan cheese. Lay the second puff pastry sheet on top, brush with water, and sprinkle with remaining Parmesan cheese. Using a large star cutter cut out about twelve 2 1/2 to 3 1/2-inch stars.
  • Place stars on prepared baking sheet and chill in the fridge for 15 minutes (or 5 minutes in the freezer).
  • Bake in the preheated oven until puffed up and golden brown, 15 to 20 minutes.

I love this recipe, because it is simple, tasty, and the variations are innumerable. It is an excellent choice for serving with dips, soups, beer, or just on its own as a snack; from the Bites and Pieces section of Martha Stewart's Hors D'Oeuvres Handbook. 1 puff pastry, chilled (1 box, frozen, has two sections, thaw in the refrigerator overnight)
all-purpose flour, for dusting
4 tablespoons unsalted butter, melted
5 ounces parmesan cheese, grated on the small holes of a box grater
2 teaspoons kosher salt
1 large egg, slightly beaten

Steps:

  • Note: The saltiness of Parmesan cheese varies from wheel to wheel, so be sure to taste the cheese before adding it to the mixture; If it is salty, reduce the amount of salt added to 1 t or alternatively, eliminate the added salt, entirely; You may choose to make your own pastry, or not; If not, then Tenderflake makes an excellent Puff Pastry, and you can purchase this from the frozen pastry section at your favourite Supermarket.
  • Preheat Oven to 425F, with the rack in the centre.
  • Place the chilled puff pastry on a lightly floured surface.
  • Roll out the dough until it is about 1/8 inch thick, making a 24 x 26 inch square (if you use the packaged puff pastry, your square will be slightly smaller-- That is OK, you will have two squares) Use a sharp knife to trim the edges of the dough; this will help make the edges uniform as they cook.
  • Brush the dough lightly with the melted butter.
  • Sprinkle the dough with 3/4 cup of the Parmesan and 1 tsp of the salt.
  • Brush the surface of the dough with the egg.
  • Sprinkle with the remaining salt and Parmesan.
  • Using a very sharp knife, cut the dough vertically, into 1/2 inch strips.
  • Transfer 6 of the strips to a baking sheet, spacing them evenly apart.
  • Grab each end of the dough strip with your fingers, and carefully stretch and twist the strip in opposite directions to create spiral strips.
  • Continue with the remaining strips of dough.
  • Bake until golden brown, 10- 12 minutes.
  • Remove and let cool on the baking sheet for 5 minutes to firm up.
  • Using both hands, transfer the sticks to a wire rack or serving platter.

PROSCIUTTO AND PARMESAN PUFF PASTRY

These are quick and easy hors d'oeuvres. I'm going to serve them with a glass of prosecco to guests before the big Thanksgiving meal because they can be made up to 2 days ahead and are light enough to not kill appetites. This is the recipe as printed in either Bon Appetit or Cooking Light (sorry, can't remember). The puff pastry here in Italy is a different size so mine made about 60 little one-bites.

1 sheet frozen puff pastry, thawed (half of 17.3 package)
4 ounces prosciutto, thinly sliced
3/4 cup parmesan cheese, packed (about 2 1/2 oz.)
1 egg, beaten to blend

Steps:

  • Place pastry sheet on work surface. Cut in half, forming two 9 1/2 x 4 3/4 inch rectangles.
  • Arrange half of proscuitto on 1 rectangle, leaving 1/2" border along one long side. Sprinkle with half the parmesan cheese.
  • Brush plain border with egg glaze. Starting at long side opposite border, roll up pastry jelly-roll style, pressing gently to seal long edges.
  • Wrap in plastic. Repeat with the second half sheet of pastry.
  • Refrigerate until firm, at least 3 hours and up to 2 days.
  • When ready to use, slice into 1/2" rounds and place on 2 parchment-lined baking sheets, 1 inch apart.
  • Bake one sheet at a time on the center rack of a preheated 400° F oven, until golden brown, about 16 minutes.
  • Transfer to racks and cool slighty. Serve warm.

  • Lay pastry dough horizontally so that the longer sides are up and down. Sprinkle with parmesan cheese.
  • Cut into 1/2-inch thick slices Twist the strips and place them 2 inches apart on a parchment-lined baking sheet. Sprinkle with remaining cheese.
  • Bake for 10 minutes or until the breadsticks are golden brown.
