4 frozen breaded chicken patties
1 jar (28 ounces) spaghetti sauce
4 slices part-skim mozzarella cheese
1/4 cup shredded Parmesan cheese
Hot cooked spaghetti

Steps:

  • Place chicken patties in a microwave-safe 11x7-in. dish. Microwave, uncovered, on high for 4 minutes. Top with spaghetti sauce and cheeses. Cover and cook 4-5 minutes longer or until heated through. Serve with spaghetti.

2 tablespoons vegetable oil
4 cups shredded zucchini
2 large onions, chopped
2 cloves garlic, minced
1 tablespoon chopped fresh basil
2 tablespoons chopped parsley
⅛ teaspoon ground black pepper
⅛ teaspoon ground thyme
3 eggs, lightly beaten
1 cup crushed saltine crackers
1 cup grated Parmesan cheese
¼ cup vegetable oil, or as needed
2 tablespoons grated Parmesan cheese, or to taste

Steps:

  • Heat 2 tablespoons vegetable oil in a large skillet over medium heat. Cook and stir zucchini, onion, and garlic in hot oil until vegetables are limp and moisture evaporates, about 5 minutes. Stir basil, parsley, black pepper, and thyme into the vegetables; remove from heat. Transfer zucchini mixture to a large mixing bowl.
  • Stir eggs, crushed crackers, and 1 cup Parmesan cheese into the zucchini mixture until it binds together; shape into 14 3-inch patties.
  • Pour enough vegetable oil in a skillet to reach about 1/2 inch deep; heat over medium-high heat.
  • Cook patties, 3 to 4 at a time, in hot oil until well browned, about 2 minutes per side. Sprinkle with additional Parmesan cheese to serve.

This is easy and can be on the table in a little over half an hour - but tastes like it took a lot longer. The secret is the Bisquick which makes them puff up.

1/2 cup Bisquick
1 (8 ounce) can tomato sauce
1 egg, slightly beaten
1 garlic clove, minced
3/4 teaspoon salt
1 teaspoon oregano
1 dash pepper
1/2 teaspoon Worcestershire sauce
16 ounces tomato sauce
oregano
garlic salt

Steps:

  • Combine ingredients and shape into 6 large patties.
  • Place on a greased baking sheet and bake in a preheated 400 oven for 25 minutes.
  • Combine tomato sauce with seasonings to taste.
  • Heat.
  • Serve over cooked noodles.
  • Sprinkle with parmesan cheese.

2 clove minced garlic
1/2 c diced red pepper
1/2 c diced onion
1 large boiled cauliflower
1 ranch dressing packet
1 c bread crumbs
1 c the shredded parmesan
1/2 c shredded cheddar
4 Tbsp butter
pinch pepper
1 pinch cayenne pepper
2 eggs, beaten

Steps:

  • 1. Boil head of cauliflower til fork tender. Sautéed onion and pepper along with garlic in butter till tender.
  • 2. Mix all ingredients together including the butter from the pan.
  • 3. Drop onto a lined cooking sheet and bake at 400 degrees for 22 minutes or until golden.

Crispy Parmesan Lemon Basil Salmon Patties, made with canned salmon and fried to perfection, are a delicious and easy way to serve a flavorful salmon meal!

1 T butter
1/2 large onion (diced)
12 ounces canned salmon (I used 2 6-oz cans of boneless skinless, drained)
1 egg (slightly beaten)
1/4 cup mayonnaise
1/2 cup panko bread crumbs
1 tsp lemon zest
1 T lemon juice
1/4 cup lemon basil (minced, you can use regular basil if you don't have lemon basil)
1/2 tsp kosher salt
1/4 cup parmesan (grated)
2 T olive oil

Steps:

  • In large frying pan, heat butter over medium high heat and saute the onion until soft and golden brown while stirring occasionally, about 5-10 minutes. Remove from heat and allow onion to cool.
  • In large bowl, combine cooled cooked onions with salmon, egg, mayo, bread crumbs, lemon zest, lemon juice, basil, and salt. Combine well and form into 4 patties.
  • Coat both sides of each salmon patty with grated parmesan cheese.
  • Using same pan you cooked the onions in, heat the olive oil over medium high heat. When the oil is hot, add the salmon patties and cook until golden brown, flipping only once, about 5-10 minutes on each side.
  • Serve hot with your favorite sides or serve cold on a salad.

A low-carb version of Salmon Patties that we love even more than the original. The traditional bread or cracker crumbs are replaced with shredded parmesan cheese and, as the patties are fried, the cheese melts and holds the patties together. I was skeptical the first time I made them, but it really works!

1 can(s) pink salmon
2 bunch green onions
8 oz parmesan cheese, shredded
1/2 c celery
2 eggs, large
1/4 tsp garlic powder
1/4 tsp salt
1/4 tsp pepper
1/2 c cooking oil, approximate

Steps:

  • 1. Open and drain the can of salmon and pour into a medium-sized mixing bowl. HINT: take a clean paper towel and press as much of the liquid out of the salmon as possible.
  • 2. Chop the green onion and dice the celery and add to the salmon. Lightly beat the eggs in a separate bowl and then add them to the salmon.
  • 3. Add all remaining ingredients and mix well, until all items are evenly distributed throughout the mixture.
  • 4. In a non-stick skillet, add your favorite cooking oil, to about 1/4 inch depth; turn to a medium heat.
  • 5. When oil is hot (but not too hot), take approximately 2 tablespoons of the salmon mixture and press it into a patty about 1/4 inch thick.
  • 6. Fry each patty for about 3 minutes on each side, to a light golden brown. Place on a paper towel and allow to drain for a couple of minutes before serving.
