- Cook noodles in a large pot of lightly salted water until al dente.
- While the pasta is cooking, place the eggs, grated cheese, parsley, salt and pepper into a mixing bowl and beat with a whisk until well combined.
- When the noodles are almost cooked, melt the butter in a large nonstick skillet over medium heat.
- Quickly drain the pasta and add it to the skillet.
- Toss briefly to coat it with the butter.
- Add the egg mixture to the skillet and using a flat wooden spoon, mix quickly together for less than a minute until the eggs and noodles become creamy and thick.
- Do not cook the eggs too long or they will scramble and ruin the dish.
- Serve immediately.

- Cut kohlrabi into thin noodles using a spiralizer.
- Heat a large skillet over medium heat. Brown bacon and onion, until bacon is beginning to crisp and onion is caramelized but not burning, 10 to 12 minutes. Transfer bacon and onion to a small bowl, reserving 1 tablespoon bacon grease in the skillet.
- Add kohlrabi noodles to the skillet and season with salt. Cook noodles over medium heat, stirring occasionally, until they begin to wilt down and soften, 12 to 14 minutes. Stir in butter until melted. Add in bacon and onion mixture and stir in 1/2 the Parmesan cheese.
- Serve immediately topped with remaining cheese and parsley.

- Preheat oven to 425 degrees. Toss beet noodles with 1 tablespoon oil; season with salt and pepper. Arrange in an even layer on a rimmed baking sheet and roast until just tender, about 10 minutes.

This is the best parmesan noodle recipe I have ever found. It's not oily like most I've tried. I think the secret is less butter and the addition of sour cream, which you can't really taste. If you served this to someone who didn't like sour cream, I doubt they would know it was one of the ingedients. I serve these with Sandy's Chicken and green beans for a delicious meal my whole family loves.

VEAL PARMESAN WITH VERMOUTH BUTTER SAUCE OVER HOMEMADE EGG NOODLES

- Veal Parmesan: In one bowl beat eggs for eggwash. In another bowl sift flour, salt, and pepper. In a third bowl mix panko crumbs and Parmigiano-Reggiano. After cutlets have been flattened, dredge in flour, dip in eggwash, and coat with bread panko crumbs. Heat skillet to medium high, add olive oil, and cook veal until golden brown. About two minutes per side. Vermouth Butter Sauce: In a saucepan, bring vermouth and garlice to a boil and reduce by half. Reduce heat to low and begin adding butter, one pad at a time. Remove from heat and gently wisk, adding to heat as needed. But just enough to melt the butter. Too much heat and sauce will break. Once emulsified, add parsley for color. Egg Noodles: Sift dry ingedients into large mixing bowl. Add milk and eggs, then mix well. Separate into two balls. Roll out flat (about 1/4 inch thick), cover with plastic wrap and let sit for 20 minutes. Cut into strips, dust with flour and spread to let dry for about 2 hours or so. Once dry, boil in water until tender

This is a nice side dish to accompany a plain meat meal, such as steak or pork chops.I halved the original recipe, but forgot to halve the butter! It was so good I have made it that way since - although I don't use quite as much butter as I did that first time!

- Bring enough water to a boil to cover the noodles. Add salt. Cook until done, then drain. Reserve 1/4 cup cooking liquid.
- Core and peel the tomatoes, and cut them into 1/4-inch cubes.
- Heat the butter in a saucepan, and add the tomatoes. Add salt and pepper. Cook over high heat for 1 minute, stirring occasionally.

GARLIC PARMESAN BROWN RICE NOODLES

- Cook the noodles according to package instructions. Drain well, drizzle with a small amount of olive oil and set aside. Heat a large skillet over medium-high heat and add 1 tablespoon of oil. Add the tofu strips and stir fry until they brown up slightly, sprinkling 1/2 teaspoon of granulated garlic and a generous pinch of parmesan about midway through the cooking process. Remove from heat & set aside (blot with paper towel if needed) In the same skillet add the remaining olive oil and half of the chopped fresh garlic. Cook until garlic just begins to brown and turn fragrant. Add the mushrooms to the pan, cook them up, and place them with the tofu. Add the other half of the garlic. When it becomes fragrant, add the spinach and cook for 30 seconds to a minute, until it just begins to wilt. Add the noodles, granulated garlic, parmesan, tofu and other veggies and toss together until combined. Remove from heat.
