2 teaspoons Italian seasoning

1 cup bread crumbs
½ cup grated Parmesan cheese

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Spray a baking sheet with cooking spray.
  • Season chicken strips with salt and pepper.
  • Combine flour, Italian seasoning, paprika, garlic powder, and onion powder in a resealable plastic bag. Add chicken strips and seal the bag. Shake the bag until chicken strips are well coated with the flour mixture.
  • Beat eggs together in a small bowl. Combine bread crumbs and Parmesan cheese in another bowl.
  • Dip each chicken strip into egg until well coated, then dip in bread crumb mixture to coat. Place on the prepared baking sheet.
  • Bake in the preheated oven, flipping halfway, until golden brown and no longer pink in the center, 35 to 40 minutes.

Steps:

  • Preheat oven to 425°F (220°C).
  • Combine the egg and the lemon juice.
  • In a separate bowl, combine the panko bread crumbs, Parmesan, garlic powder, lemon zest, salt, and pepper.
  • Coat the chicken tenders in flour and shake off any excess. Then dredge in the egg and lemon juice mixture and allow excess egg to drip off. Coat with the panko bread crumb mixture, turning until evenly coated.
  • Lay chicken tenders flat on a baking sheet lined with aluminum foil and sprayed with nonstick cooking spray. Spray additional cooking spray over the chicken tenders to help them brown.

1 cup buttermilk
1 1/2 pounds chicken tenders (about 18)
3 large garlic cloves, minced
1/2 teaspoon salt
3 tablespoons balsamic vinegar
Freshly ground black pepper
1 1/4 cups freshly grated Parmesan
3/4 cup Italian-style seasoned bread crumbs

Steps:

  • Preheat the oven to 500 degrees F.
  • Brush 1 tablespoon of oil over each of 2 heavy large lined baking sheets. Place the buttermilk in a large bowl. Add the chicken tenders and stir to coat. Let stand at least 15 minutes and up to 30 minutes.
  • Meanwhile, mash the garlic with the salt in a medium bowl. Whisk in the vinegar and then the remaining 1/2 cup of oil. Season the vinaigrette, to taste, with pepper. Transfer the vinaigrette to a small serving bowl.

3/4 cup finely grated Parmesan
1/2 cup plain dried breadcrumbs

1 3/4 cups tomato sauce, homemade or storebought
4 ounces part-skim mozzarella, shredded (about 1 cup)
8 ounces penne rigate (ridged) or other short pasta
1 package (10 ounces) frozen broccoli florets, thawed
1 tablespoon olive oil

Steps:

  • Bring large pot of salted water to boil. Heat broiler, with rack set 4 inches from heat. In a medium bowl, whisk eggs. In another bowl, combine Parmesan and breadcrumbs. Season chicken with salt and pepper. Dip tenders in egg, then in Parmesan mixture; place on a rimmed baking sheet. Broil until golden, 2 to 4 minutes per side.
  • Preheat oven to 450 degrees. Spread 1 cup tomato sauce in the bottom of a 9-by-13-inch baking dish. Then top with chicken, remaining sauce, and finally mozzarella. Bake 15 to 20 minutes or until cheese is melted.
  • Meanwhile, cook pasta in boiling water until al dente, according to package instructions, adding broccoli for final 30 seconds.   • Pound out chicken tenders with a meat mallet until very thin. Remove membranes.
  • Set up a breading station with 3 shallow dishes. Okay, so sometimes being out of something turns out to be a good thing! When I went to make my traditional fried chicken tenders I realized that I was out of bread crumbs and was also out of bread to make bread crumbs. Looking around I discovered a box of parmesan/garlic crackers and crushed them up in place of the crumbs. Absolutely, positively DELICIOUS! The kids now claim this is the only way to make chicken tenders! Hope you enjoy!

1 lb chicken tenders
1 cup flour
1 teaspoon garlic powder
1 teaspoon pepper (we like to use white pepper but regular black will work fine too)
2 eggs, beaten
1/2 cup parmesan cheese, grated
3/4 cup cracker, crushed (I used Parmesan Garlic Cheez-its)
oil, for frying

Steps:

  • Combine flour with garlic powder & pepper in a bowl.
  • Crack eggs and beat till throughly combined in a seperate bowl.
  • Combine parmesan cheese and crushed crackers in a third bowl.
  • Start by coating the chicken pieces in flour, then dip in egg wash and then dip into cracker mix.
  • Set coated chicken onto a plate. When finished coating all the chicken, put the plate in the fridge for at least 30 minutes to let the coating "set-up".
  • In a large fry pan, heat 1/2" of oil to medium high heat (I don't use a thermometer but I'm guessing 350 degrees).
  • Pan fry in small batches till golden brown on all sides - depending on size of your tenders, 5-6 minutes per side.
  • Remove to a paper towel lined plate till all the chicken is done.
  • We served it with pasta and spaghetti sauce but i'm guessing it would go with about anything.

CHICKEN TENDERS PARMESAN WITH PENNE AND BROCCOLI image

2 large eggs
3/4 cup finely grated Parmesan
1/2 cup plain dried breadcrumbs
1 1/2 pounds chicken tenders
1 3/4 cups tomato sauce, homemade or storebought
4 ounces part-skim mozzarella, shredded (about 1 cup)
8 ounces penne rigate (ridged) or other short pasta
1 package (10 ounces) frozen broccoli florets, thawed
1 tablespoon olive oil

Steps:

  • 1. Bring large pot of salted water to boil. Heat broiler, with rack set 4 inches from heat. In a medium bowl, whisk eggs. In another bowl, combine Parmesan and breadcrumbs. Season chicken with salt and pepper. Dip tenders in egg, then in Parmesan mixture; place on a rimmed baking sheet. Broil until golden, 2 to 4 minutes per side. 2. Preheat oven to 450 degrees. Spread 1 cup tomato sauce in the bottom of a 9-by-13-inch baking dish. Then top with chicken, remaining sauce, and finally mozzarella. Bake 15 to 20 minutes or until cheese is melted. 3. Meanwhile, cook pasta in boiling water until al dente, according to package instructions, adding broccoli for final 30 seconds. Reserve 1/2 cup pasta water; drain pasta and broccoli, and return to pot. Add oil and remaining Parmesan. Toss, gradually adding some reserved pasta water until pasta is lightly coated. Serve chicken with penne and broccoli.

4 tablespoons extra virgin olive oil
1/2 cup extra virgin olive oil
1 cup buttermilk
1 1/2 lbs chicken (about 18 tenders)
3 garlic cloves, minced
1/2 teaspoon salt
3 tablespoons balsamic vinegar
fresh ground black pepper
1 1/4 cups parmesan cheese, grated
3/4 cup seasoned bread crumbs

Steps:

  • Preheat the oven to 500 degrees F.
  • Brush 1 tablespoon of oil over each of 2 heavy large lined baking sheets. Place the buttermilk in a large bowl. Add the chicken tenders and stir to coat. Let stand at least 15 minutes and up to 30 minutes.
  • Meanwhile, mash the garlic with the salt in a medium bowl. Whisk in the vinegar and then the remaining 1/2 cup of oil. Season the vinaigrette, to taste, with pepper. Transfer the vinaigrette to a small serving bowl.
  • Stir the Parmesan and bread crumbs in a pie dish. Remove the chicken tenders from the buttermilk and dredge them in the bread crumb mixture to coat completely, pressing to adhere. Arrange the coated chicken tenders on the prepared baking sheets, spacing evenly. Drizzle the remaining 2 tablespoons of oil over the chicken tenders and bake until they are cooked through and golden brown, about 12 minutes.
  • Transfer the chicken tenders to a platter and serve the vinaigrette alongside for dipping.

This is our family favorites. It is easy and quick to prepare. If all the ingredients are handy you can have these tenders in less than 20 minutes. I usually serve this with garlicky pasta or white rice. Try on top of green salad with your favorite vinaigrette. These are for both kids and grown-ups pleasing dish. Taste better when hot but still good cold, too.

1 lb chicken tenders
1 pinch salt and pepper
2 eggs, slightly beaten
1 tablespoon milk
1/2 teaspoon Dijon mustard
1/4 cup Italian breadcrumbs
1/4 cup parmesan cheese, grated
2 tablespoons olive oil

Steps:

  • Season chicken tenders with salt and pepper slightly.
  • In a shallow bowl combine eggs, milk, and mustard. Dump the tenders and coat them well.
  • Another shallow bowl combine breadcrumbs and parmesan cheese.
  • Pick up each tenders and coat with crumb mixtures.
  • Heat larger non stick skillet on medium heat. Add olive oil.
  • Saute the tenders 2-3 minutes each side until they are golden brown and crispy.

1 lb chicken breast tenders
1/2-1 cup parmesan cheese
4 tablespoons butter
2 tablespoons olive oil
1 cup dry white wine (I use dry vermouth)
1 (14 ounce) can diced tomatoes

Steps:

  • Chicken breast tenders already come in strips, if you use whole chicken breast, cut those into strips.
  • Put parmesean cheese in a bowl and dredge each chicken strip to coat well.
  • Melt butter in skillet set to medium-high and add olive oil.
  • Cook 1 to 2 minutes each side until golden.
  • Put chicken on a warm plate.
  • Stir in wine, scrap bottom and add tomato (undrained) - if using fresh coarsely chop3 - 4 medium tomatoes and add.
  • Cook at medium high for 2 minutes until thickened.
  • Stir in chicken and add basil. Cover and let simmer 3 - 5 minutes until chicken is cooked through.

These are great to have while watching football. The preparation time for the onion dip is 15 minutes with a 30-minute cook time. The onion dip makes about 2 cups. You can prepare it ahead of time if you like and serve it at room temperature. The preparation time for the chicken tenders is 15 minutes prep time and 15 minutes cook time. I have combined these times for the preparation and cook time in the recipe. Of course, you can just make the chicken tenders without the dip.

1 1/2 lbs chicken tenders
1 cup flour
1 teaspoon kosher salt
1/2 teaspoon fresh ground black pepper
2 large eggs
1 cup Italian seasoned breadcrumbs
3/4 cup grated parmesan cheese
unsalted butter
extra virgin olive oil
2 large vidalia onions
2 tablespoons unsalted butter
3 tablespoons extra virgin olive oil
1/4 teaspoon ground cayenne pepper
1 teaspoon wyler's beef bouillon granules
fresh ground black pepper
4 ounces cream cheese, at room temperature
1/2 cup sour cream
1/2 cup mayonnaise

Steps:

  • Combine the flour, salt, and pepper in a shallow bowl.
  • Beat the eggs with 1 tablespoon of water in another shallow bowl.
  • Combine the breadcrumbs and Parmesan in another shallow bowl.
  • Dredge the chicken tenders on both sides in the flour mixture, then dip both sides into the egg mixture and roll in the bread-crumb mixture, pressing lightly to coat.
  • Heat 1 tablespoon of butter and 1 tablespoon of olive oil in a large sauté pan and cook the chicken tenders on medium-low heat for about 3 minutes on each side, until just cooked through.
  • Don't crowd the pan.
  • Add more butter and oil and cook the rest of the chicken tenders.
  • You can keep the chicken tenders warm for about 15 minutes on a sheet pan in a preheated 200 degree oven.
  • Serve with Onion Dip.
  • Onion Dip directions:.
  • Cut the onions in half and then slice them into 1/8-inch thick half-rounds. (you will have about 3 cups of onions.)
  • Heat the butter and oil in a large sauté pan over medium heat.
  • Add the onions, cayenne, Wyler's beef bouillon granules, and pepper and sauté for 10 minutes.
  • Reduce the heat to medium-low and cook, stirring occasionally, for 20 more minutes until the onions are browned and caramelized.
  • Allow the onions to cool.
  • Place the cream cheese, sour cream and mayonnaise in the bowl of an electric mixer fitted with the paddle attachment and beat until smooth.
  • Add the onions and mix well.
  • Taste for seasonings.
  • Serve at room temperature as a dip with the Parmesan Chicken Tenders.
