1 1/2 cups grated mozzarella
1 cup freshly grated Parmesan

2 tablespoons plain dry bread crumbs

Steps:

  • Preheat the oven to 400 degrees F. Coat a 13 by 9 by 2-inch baking dish with 1 tablespoon of butter and set aside.
  • Cook the potatoes in a large pot of boiling salted water until they are very tender, about 15 minutes. Drain; return the potatoes to the same pot and mash well. Mix in the milk and melted butter. Mix in the mozzarella and 3/4 cup of the Parmesan. Season, to taste, with salt and pepper. Transfer the potatoes to the prepared baking dish. Stir the bread crumbs and remaining 1/4 cup of Parmesan in a small bowl to blend. Sprinkle the bread crumb mixture over the mashed potatoes. Recipe can be prepared up to this point 6 hours ahead of time; cover and chill.

100 g parmesan cheese, grated
100 g breadcrumbs, small
3 eggs (small ones or 2 big ones)
1/2 teaspoon nutmeg
1 lemon, zest only
1 1/2 liters broth, if possible homemade (beef or hen broth with celery, carrots and leek)

Steps:

  • Place the bread crumbs, Parmesan, nutmeg and the lemon zest in a large mixing bowl. Add the eggs and carefully mix together with your hands until it forms a soft dough-like consistency.
  • The mixture should be like a wet dough, barely holding together.
  • If it seems too stiff, add 1 tablespoon water or stock. If it's too soft, add more breadcrumbs and Parmesan.
  • Allow the dough to rest for approximately 20 minutes in a cool place.
  • Once ready, put the dough in a food mill or ricer. Press to create short noodles (like little worms).
  • Bring the meat stock to a boil and add the pasta. Once the passatelli have risen to the surface, they are ready to eat.
  • Serve immediately.

This pull apart cheese bread is the savory cousin to monkey bread. Frozen dinner rolls, butter, cheese and garlic.....well, that just about sums it all up! I baked it in a standard size loaf pan to resemble a loaf of bread, but you can make this bread into any shape you like. (Read for other options at the very end of the recipe). It's especially good with a warm marinara sauce for dipping, or a cheese fondue, or simply on its own.

16 frozen white dinner rolls
1/2 cup butter, melted
1 teaspoon dry parsley flakes
2/3 cup grated parmesan-romano cheese mix, plus
1/4 cup grated parmesan-romano cheese mix (divided)
1 teaspoon garlic powder
1/2 teaspoon salt
1/2 teaspoon dried basil or 1/2 teaspoon italian seasoning
1/2 teaspoon onion powder

Steps:

  • Remove the frozen dinner rolls from the freezer and place onto a plate. Cover loosely with plastic wrap and allow the rolls to sit on the counter for 30-45 minutes or so, until the rolls have thawed enough to cut.
  • Place the rolls onto a cutting board, and using a sharp knife, cut each roll into quarters.
  • Melt one stick of butter in the microwave. Stir the melted butter and seasonings together until blended.
  • Add the quartered rolls to the butter, and toss gently to coat. Bread dough is sticky, so you may need to use your hands to gently pull the pieces apart if necessary. You don't want the dough to form clumps, or it will affect how it bakes. Next, add 2/3 cup of grated Parmesan-Romano cheese, reserving the rest for the top. Toss until each piece is coated.
  • You can bake this bread in any shape you like, but I usually use a loaf pan. Layer the dough quarters evenly in a standard 9x3x2 inch loaf pan sprayed with cooking spray. The dough pieces naturally stick together due to the butter and cheese, but gently pull apart any clumps of dough to be certain the bread bakes evenly. Sprinkle the remaining 1/4 cup of cheese on top and a sprinkle of parsley for color. Cover the pan loosely with plastic wrap that has been sprayed with cooking spray. This will keep the bread from sticking to the plastic wrap as it rises.
  • Allow to rise in a draft-free, warm place for 2-2 1/2 hours. Then remove the plastic wrap and place into a 350°F preheated oven.
  • Bake at 350°F for 18 minutes, then check the top. If baking in a loaf, you may need to lay a piece of aluminum foil over the top of the bread to prevent the cheese and butter on top from over browning while the inside of the loaf fully bakes. Continue to bake the bread for another 5-7 minutes, until the center is completely done, approximately 23-25 minutes total, depending on your oven. Test the center of the rolls using a cake tester or toothpick to be certain the bread is cooked all the way through before removing it from the oven. My favorite way to serve this bread? Straight from the pan piping hot!

  • If you're someone who loves for all of the rolls to have that crispy golden top, bake the bread in a round 9 inch spring form or pie pan. Follow the same preparation method and bake for around 22-24 minutes until golden and cooked through.

Olive oil, for drizzling
2 large garlic cloves, halved lengthwise
1/2 cup grated Parmesan
Basil leaves, for serving

Steps:

  • Light a grill or turn heat to high. Drizzle both sides of bread with olive oil and grill for 2 to 3 minutes without turning, until one side is crisp and beginning to char. Mix in the mozzarella and 3/4 cup of the Parmesan. Season, to taste, with salt and pepper. Transfer the potatoes to the prepared baking dish. Stir the bread crumbs and remaining 1/4 cup of Parmesan in a small bowl to blend. Sprinkle the bread crumb mixture over the mashed potatoes. Recipe can be prepared up to this point 6 hours ahead of time; cover and chill. Bake, uncovered, until the topping is golden brown, about 20 minutes.

Do you love the smell of bread baking? I do. This bread is wonderful. It makes great toast and smells so good while in the toaster. It also makes great sandwiches. I always use Parmesan cheese but grated cheddar could be used.

1 cup milk (scalded)
3 tablespoons sugar
1 tablespoon salt
1 tablespoon butter
1 cup warm water
2 (1/4 ounce) packages dry yeast
1 cup grated parmesan cheese
4 1/2 cups flour

Steps:

  • Mix the milk, sugar, salt, and margarine together.
  • In a small bowl mix the warm water (115 degrees) and the yeast; mix well; proof for a few minutes.
  • Add the yeast mixture to the above milk mixture.
  • Add the cheese.
  • Add the flour to the right consistency.
  • Knead 100 times.
  • Put in a greased bowl and rise in a warm place till double in bulk--about 1 hour.
  • Knead again for about 1/2 minute.
  • Put into 2 small greased bread pans.
  • Bake at 375 degrees for 1 hour being careful not to burn it; if it starts to look too brown, cover it with foil and continue baking.
  • NOTE: If you four-times this recipe, it will make 5 good size loaves and will use 2 large Parmesan cheese.

Italian Green Beans Recipe with Parmesan Cheese and Bread Crumbs image

The simplest, most delicious way to eat green beans! These Italian Green Beans are sauteed in butter, bread crumbs and parmesan cheese.

2 tablespoons butter
1/2 teaspoon minced garlic
1 teaspoon Italian seasoning
1/2 cup bread crumbs
1/2 cup Parmesan cheese
16 ounces frozen green beans
Salt (to taste)

Steps:

  • In a frying pan, melt the butter over medium heat. Add the minced garlic, Italian seasoning, bread crumbs and parmesan cheese. Stir to coat and saute over medium heat until the bread crumbs start to brown, about 3-4 minutes.
  • While the bread crumbs are sauteing, cook the green beans, either in a Ziploc Zip 'n Steam bag (according to package directions) or in a pot of water.
  • Add the green beans to the frying pan and stir to coat.
  • Season with salt, to taste, and serve hot.

My daughter got this recipe from her mother in-law Diana. Everybody just loves this bread when she brings it to a family gathering. This is not a crisp bread but you can place it under the broiler for a few seconds to crisp up if desired.

1 large loaf or french bread
1 stick(s) (cube) of soft butter
2 tablespoon(s) olive oil
2 clove(s) garlic
1/4 - 1/2 cup(s) grated parmesan cheese ( fresh grated ..not the type in the green can)

Steps:

  • Slice French bread loaf into thick slices , but keeping the loaf intact.
  • Pressed garlic cloves through a garlic press and mix into the soft butter ; Add olive oil and the grated Parmesan cheese and mix until creamy.
  • Place butter mixture between each slice on french loaf ; Wrap loaf in aluminum foil and Bake @ 400° for 10-12 minutes.

3 cups lukewarm water
1 1/2 tablespoons granulated yeast (2 packets)
1 1/2 tablespoons kosher salt
1 1/2 tablespoons sugar
6 1/2 cups all-purpose flour
1 cup cheese (grated)
1 egg, mixed with the water (well-beaten)
1 tablespoon water

Steps:

  • Mixing and storing the dough: Mix the yeast, salt and sugar with the water in a 5-quart bowl,or lidded (not airtight) food container.
  • Mix the dry ingredients and the cheese without kneading, using a spoon. You may need wet hands to incorporate the last bit of flour.
  • Cover (not airtight), and allow to rest at room temperature until dough has risen and collapsed (or flattened on top), about 2 hours.
  • Refrigerate the dough in a lidded (not airtight) container for use over the next 7 days.
  • On baking day, dust the surface of the dough. Cut into 1-pound or grapefruit-sized pieces. Dust your working surface with flour. Quickly shape into loaves. For twists, divide each ball in half, make two long strands and twist together. Allow the dough to rest and rise on a pizza peel or cookie sheet dusted with cornmeal.
  • Preheat the oven to 450 degrees. Place a broiler tray half-filled with water on the lower rack to create steam while baking.
  • Brush the loaves with egg wash. Bake in the oven for about 25 minutes, or until deeply browned and firm in the center. Smaller or larger loaves will require adjustments in baking time.
  • Allow to cool before slicing or eating.
