3/4 cup dry bread crumbs
3 tablespoons grated Parmesan cheese
2 tablespoons chopped fresh parsley
1/2 teaspoon salt
1/4 teaspoon paprika
1/8 teaspoon each pepper, dried oregano and basil
6 fresh or frozen catfish fillets (3 to 5 ounces each)
1/2 cup butter, melted
Optional: Tartar sauce and lemon wedges

Steps:

  • In a shallow bowl, combine the bread crumbs, Parmesan cheese, parsley and seasonings. Dip catfish in butter, then in crumb mixture. Arrange in a greased 13x9-in. baking dish. , Bake, uncovered, at 375° until fish just begins to flake easily with a fork, 20-25 minutes. If desired, serve with tartar sauce and lemon wedges.

1/2 cup all-purpose flour
1/4 cup grated Parmesan cheese
3 tablespoons cornmeal
1 teaspoon paprika
1/4 teaspoon salt
1/4 teaspoon pepper
1 egg white
1/4 cup fat-free milk
4 catfish fillets (6 ounces each)

Steps:

  • In a shallow dish, combine the flour, cheese, cornmeal, paprika, salt and pepper; set aside. In another shallow dish, beat egg white and milk. Dip fillets in milk mixture, then in flour mixture. , Place in a 13-in. x 9-in. baking dish coated with cooking spray. Bake, uncovered, at 350° for 35-40 minutes or until fish flakes easily with a fork.

Being a southerner with a bunch of fishermen in my family, we usually have an abundance of catfish in the freezer. I decided if tilapia could be parmesan encrusted, so could catfish. My mom and I prefer these over fried catfish.

1/2 cup fresh parmesan cheese, grated
1/4 cup flour
1/2 teaspoon pepper
1 teaspoon paprika
1 teaspoon creole seasoning (Tony's)
2 lbs catfish fillets, skinless
3 tablespoons skim milk
2 tablespoons butter, melted

Steps:

  • Preheat oven to 400 degrees.
  • Combine parmesan, flour, and seasonings.
  • Dredge the catfish in milk.
  • Coat fish WELL in cheese mixture.
  • Place on baking dish.
  • Drizzle butter over coated filets.
  • Bake at 400 degrees for 15 to 20 minutes or until fish is done and become flaky.

1/4 cup butter or 1/4 cup margarine, melted

4 large catfish fillets
2 beaten eggs
1/2 cup milk
1 cup soft breadcrumbs
1 cup grated parmesan cheese
2 teaspoons minced garlic
1/4 cup chopped fresh parsley
2 teaspoons dried oregano
1 teaspoon salt
1 teaspoon course-ground black pepper
nonstick cooking spray

Steps:

  • Heat oven to 400*.
  • Rinse fillets and pat dry.
  • Mix eggs and milk in a small bowl.
  • Combine remaining ingredients in another bowl.
  • Dip fillets into egg mixture, and then into bread crumb mixture, coating evenly.
  • Place fillets, rounded-side up, on a greased baking sheet.
  • Spray fillets lightly with non-stick cooking spray and bake, uncovered, for about 15 minutes, or until fish flakes when tested with a fork.

1 can(s) cooking spray

Steps:

  • 1. Wash catfish filets and then roll in parmesan cheese.
  • 2. Put fish in baking dish, sprayed with cooking spray.
  • 3. Put a half tsp butter on each fish.
  • 4. Bake at 350 degrees for 30 minutes.

1 lemon, cut in wedges
1/4 cup fresh parsley, chopped

Steps:

  • Preheat oven to 375˚F. Pat fish dry. Combine bread crumbs, cheese, and seasonings; mix well. Dip catfish in melted butter and roll in the crumb mixture. Arrange fish on a baking sheet sprayed with nonstick vegetable oil spray. Bake for about 25 minutes or until fish flakes easily when tested with a fork. ​Garnish with lemon wedges and parsley. Serve hot.
