This recipe was a favorite of my grandma's. As kids, we called it "Dark Secret" because Grandma would vary the fruit with the season and we never knew what she hid under the cream.

4 large eggs
2 cups sugar
2 tablespoons shortening, softened
1 teaspoon vanilla extract
1/2 cup all-purpose flour
2 teaspoons baking powder
1 teaspoon salt
2-1/2 cups chopped dates
1 cup chopped walnuts
2 oranges, peeled and sectioned
2 bananas, peeled and sliced
1 cup raspberries
1 can (8 ounces) pineapple chunks, drained
1 cup heavy whipping cream, whipped

Steps:

  • In a large bowl, beat eggs and sugar until light. Add shortening and vanilla; beat well. Combine flour, baking powder, salt, dates and nuts; add to bowl and mix well. Spread in a greased 13x9-in. baking pan. , Bake at 350° for 40-45 minutes or until cake tests done. Cool on a wire rack. Break torte into small pieces and arrange on a serving plate. Just before serving, place fruit on top and cover with whipped cream. Fruit can be varied by season.

A lovely rich filling from the US Regional Cookbook, Chicago Culinary Arts Institute, 1947. Cooking time is approximate. Yields enough filling for two 9-inch layers.

4 tablespoons sugar
1 tablespoon cornstarch
2 egg yolks, beaten
2 cups sour cream
1 teaspoon vanilla extract

Steps:

  • Mix sugar and cornstarch together and add to egg yolks.
  • Stir in sour cream and cook in double boiler until it coats the spoon.
  • Add the flavorings and stir well.
  • Let cool to room temperature before assembling cake.

This is truly an amazingly delicious dessert. As my husband has been known to say, "One piece and you're in paradise, two pieces you think you've died and gone to heaven, three pieces and you throw up!"

1 package petit beurre biscuits
200 g butter or 200 g margarine
200 g dark chocolate
3 tablespoons sugar
3 tablespoons cocoa
1 teaspoon instant coffee
4 eggs, separated
1 dash chocolate-flavored liqueur
1 package instant vanilla pudding
2 cups whipping cream or 2 cups Rich Whip

Steps:

  • Cookie Layer: Pour the two cups of whipping cream into a bowl.
  • Dip the cookies into the cream and place in one layer in a 9 X 13 inch pan.
  • Set aside.
  • Chocolate Layer: Melt the butter, chocolate, sugar, cocoa and instant coffee all together in the microwave, or over a small flame in a saucepan.
  • Mix well.
  • Remove from heat.
  • Add the egg yolks one at a time to the chocolate mixture, mixing well after each yolk.
  • Add the liqueur.
  • Whip the egg whites until stiff and gently fold into the chocolate mixture.
  • Pour over the cookie layer and refrigerate for 1 hour.
  • Vanilla Layer: Whip the package of instant vanilla pudding with the cream.
  • Refrigerate in a small bowl until serving time.
  • Serving time-- spread the vanilla mixture over the chocolate.
  • Drizzle with chocolate syrup if desired.
  • Prepare yourself for compliments galore.
