- Boil potatoes until tender, drain and reserve. Return the pot to the stove top over medium heat. Add butter and bananas to the pot. Cook bananas 5 minutes and add the juice of 1 orange to the pot, reserve the zest. Allow the juice to cook out, 1 minute. Add potatoes to the pot and the stock and sugar. Mash potatoes, banana, stock and sugar together until well combined. Season with nutmeg, salt, pepper and orange zest, to your taste. Mash to combine spices and serve.
MAPLE-ORANGE MASHED SWEET POTATOES
This recipe is from Cook's Illustrated and I made them today and it is fabulous! I omitted the pepper but stuck by the rest of the recipe. "Cutting the sweet potatoes into slices of even thickness is important in getting them to cook at the same rate. A potato masher will yield slightly lumpy sweet potatoes; a food mill will make a perfectly smooth puree. The potatoes are best served immediately, but they can be covered tightly with plastic wrap and kept relatively hot for 30 minutes. This recipe can be doubled in a Dutch oven; the cooking time will need to be doubled as well."

- Combine butter, cream, salt, sugar, and sweet potatoes in 3 to 4 quart saucepan; cook, covered, over low heat, stirring occasionally, until potatoes fall apart when poked with fork, 35 to 45 minutes.
- Off heat, mash sweet potatoes in saucepan with potato masher, or transfer mixture to hopper of food mill and process into warmed serving bowl. Stir in pepper, maple syrup, and orange zest; serve immediately.

MIMI'S SWEET POTATOES IN ORANGE CUPS
My mother made these every year for the holidays. I have made them for a church fellowship dinner, using 100 oranges. They were a big hit! Little kids can hold them in their hands and walk around without spilling. You can prepare this up to three days ahead of time and it travels well. There's an extra bonus: The orange sections can be used for making delicious ambrosia.

- Preheat oven to 375 degrees F.
- Cover sweet potatoes with cold water in a large pot and boil until fork tender. Peel the potatoes, transfer to a bowl, and mash. Stir in butter, orange juice and pecans, and mix until incorporated.
- For the orange shells, cut each orange in half and scoop out the pulp using a small knife or grapefruit spoon. Reserve the pulp for another use.
- Fill each orange shell with the potato mixture and top off with the marshmallows. Bake until hot and the marshmallows are melted.
SMOKED PAPRIKA SWEET POTATOES (PUREE OR MASHED)
Seriously, there aren't words to describe how delicious this is. I first had it in a local gourmet organic restaurant, and couldn't get over how delicious it was. I later found the recipe on the web and was surprised how simple it was. Buying some nice smoked paprika is a MUST, don't even bother trying it without it. The flavor from the smoked paprika combined with the sweetness of the potatoes makes the dish extraordinary. (Don't worry if your grocery store only sells "yams", in north America yams and sweet potatoes are the same thing)

- Pierce washed potatoes, wrap in foil, place on baking tray in oven at 400 degrees for 1 hour or until very tender.
- When cooled just enough to handle, peel off the skin and cut into chunks that fit your food processor or extremely powerful blender.
- Melt the butter and the spices together in the microwave.
- Blend the potato with the melted spiced butter and the cream following the instructions of your processor or blender, serve when blended throughout.
- *I used an extremely high powered blender (a vita mix) and had to stop and stir while pureeing multiple times so as to not burn out the motor. If it is too thick, add some more cream or milk to get it to the consistency you want it. Feel free to add more smoked paprika if you enjoy the flavor as much as I do!

- Put the potatoes in a medium pot, cover with water, salt the water and bring to boil over medium heat. Cook until tender, then drain and return the potatoes to the pot.
